1/4 Lb. prosciutto ham -- chopped 1 Lb. penne pasta 28 Oz. Can chopped tomatoes 1 Tbsp. olive oil 1 Tsp. chopped garlic 1 Tbsp. parsley flakes 1 Tbsp. crushed bay leaves 1 Tsp. crushed red pepper 1/4 c. vodka 1 c. heavy cream 1/2 c. Parmesan cheese 1. Saute garlic in olive oil. Add crushed tomatoes, prosciutto, parsley, bay leaves, red pepper, vodka and simmer for about 10 minutes in medium heat. 2. Cook penne and drain. 3. Add heavy cream to sauce and cook for 2 minutes in low heat. 4. Mix penne in sauce and add Parmesan cheese. Mix again. Serve with garlic bread.

Prosciutto Penne Recipe
Recipe: 1 - Prepare pasta (penne rigate recommended) 2 - cook sliced prosciutto (amount not fixed just as much as you would like for flavour) 3 - reduce 1/3 cup cooking sherry (approximately 3 minutes) 4 - add 1/2 teaspoon of Tabasco sauce (optional for taste so more or less can be used) 5 - add 1/2 cup heavy cream to sherry reduction and cook until it thickens 6 - add 1/3 cup parmigiano reggiano (parmesan cheese) and cook until melted 7 - add parsley and cooked prosciutto to sauce and mix 8 - mix cooked pasta into sauce
garnish with parmesan and/or parsley and serve
Makes two servings ingredient amounts can be modified for additional servings e.g. doubled for four servings
prosciutto can also be replaced by another ingredient such as lobster or chicken

While picking up a jar of pre-made pasta sauce is a-OK in my book, I find it's often easier (and a whole lot cheaper!) to whip up a quick pasta sauce at home instead. If you have pasta water, cheese and butter, you have everything you need for a delicious, cheesy sauce. Use this recipe as a base and add whatever ingredients you have on hand to make the dish your own — frozen peas, pancetta, leftover veggies, you name it!
