How To make My Mom's Blueberry Muffins
2 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
2/3 cup sugar
4 tablespoons diet margarine
2/3 cup milk
1 egg
2 cups blueberries
fresh or frozen
**Topping: 4 tablespoons diet margarine :
softened
1/3 cup flour
1/2 cup sugar
1/2 teaspoon cinnamon
Recipe: Line a 12-well muffin tin with paper baking cups. Preheat oven to 400F.
Measure flour, baking powder, salt and sugar into a big bowl.
Melt butter (about 45 seconds on High, uncovered, in a microwave). Add milk, then egg. Stir a little, just to break up the egg. Combine the wet and dry mixtures. Just stir gently with a fork. Stir in the blueberries.
Pour batter into muffin cups. Cover each with 2 tablespoons of topping. Bake 30 to 35 minutes.
When muffins are done, take the muffin tin out of the oven. The topping should be browned and crunchy and the tops mounded. Let muffins cool in the tin at least 5 minutes. Upturn the tin; the muffins will fall out. Makes 12 muffins.
Topping: Put butter, flour, sugar and cinnamon in a big bowl. Rub them between your fingers and palms until you've made crumbs about the size of peas. This may take 2 to 3 minutes.

Hello hello! Welcome to another episode of My Mom's Recipe Box. Today we are making blueberry muffins, mainly because store-bought muffins get more expensive every day, and also because I found some super-cute baking cups at Home Goods. My mom and I loved to bake fruity things together--blueberry muffins, peach scones, strawberry shortcake, to name a few. Making these muffins reminded me of Mom because I used one of the tricks she taught me about dusting your fruit with a little flour, to keep the fruit from falling to the bottom of the batter.
For this recipe, you will need:
1 pint blueberries
2 eggs
1 stick butter, soft
1/2 cup milk
2 cups flour
2 tsp. baking powder
pinch of salt
1 cup sugar
vanilla extract
Bake at 350F for around 35 minutes. Enjoy!
Blueberry Muffins + The Difference Between Baking Soda and Baking Powder
Blueberry Muffins (yield: 6 large or 12 standard muffins)
2 1/4 c (315g) AP flour
3/4 c (150g) sugar
1/4 c (53g) brown sugar
2.5 tsp (12g) baking powder
1 tsp (6g) fine salt
2 eggs
1/3 c (66g) vegetable oil
4 oz (57g) butter, melted
3/4 c (170g) whole milk
1 tsp (5g) vanilla extract
1 1/4 c (205g) fresh or frozen blueberries
1. Mix all the dry ingredients together in a bowl.
2. In a separate bowl, whisk all the wet ingredients together until combined.
3. Mix the dry and wet ingredients together and stop mixing as soon as you can't see any dry flour. If there are some small clumps, that is ok.
4. Gently fold in the blueberries.
5. Divide between 6 large muffins or 12 standard size muffins.
6. Top the muffins with a generous sprinkling of coarse sugar (turbinado, demerara, or sanding).
7. Bake at 375F for 15-20 min for standard muffins or until a toothpick inserted in the center comes out with wet crumbs.

Homemade Blueberry Muffins
1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
milk
1 cup fresh or frozen blueberries
CRUMB TOPPING
1/2 cup white sugar
1/3 cup all- purpose flour
1 1/2 teaspoons ground cinnamon
1/4 cup room temperature butter
Preheat oven to 400°. Place muffin cup liners in muffin cups.
Combine the flour, sugar, salt, and baking powder in a mixing bowl. Place the vegetable oil into a 1 cup measuring cup. Add the egg and enough milk to equal one cup. Mix into the flour mixture. Fold in blueberries. Divide batter between 12 regular muffin cups or six jumbo muffin cups. Sprinkle top of batter with the crumb topping.
Bake for 20 to 25 minutes or until done. Do not over bake. 
TO MAKE A CRUMB TOPPING:
Mix together, sugar, all-purpose flour, and cinnamon. Cut in butter using a fork or your fingers. Sprinkle over batter in muffin cups.

1 cup frozen blueberries
Combine dry ingredients in a bowl. Mix together with a spoon. Combine wet ingredients in a bowl. Mix. Combine dry ingredients with wet ingredients. Fold in blueberries.
Spray muffin cups. Pour batter into muffin pan.
Crumb topping
1/2 cup sugar
1/3 cup all-purpose flour
4 tablespoons semi softened butter
2 teaspoons ground cinnamon
Work mixture with fork until crumbly, sprinkle over top of muffins.
Bake in preheated 400-degree Fahrenheit oven for 23 minutes.
