How To make Moist Blueberry Muffins
2 egg whites
3/4 c sugar
1/2 c applesauce
1/2 c skim milk
1 Tbsp maple syrup
1 tsp vanilla
2 cups flour
1 Tbsp baking powder
1/2 tsp salt
1 1/4 cups blueberries
fresh or frozen
(wild Maine ) :
(I use about 1 1/2 cups)
Set the oven to 375 degrees. Thoroughly grease a muffin tray with 12 large muffin cups and set aside until ready to use (I just use a nonstick muffin pan).
In the bowl of an electric mixer, beat the egg whites until frothy. Add the sugar and beat for 1 minute. Stir in the applesauce, milk, maple syrup and vanilla.
Add the flour, baking powder and salt and mix just until the dry ingredients are moistened. Gently fold in the blueberries. Spoon the batter into the greased muffin cups and bake in the preheated oven for 20 - 25 minutes or until golden and the center springs back when gently pressed.
Remove the muffins from the oven and set on a metal cooling rack for 10 - 20 minutes. Using a knife, cut around each muffing and gently ease them out of the pan, making sure they don't fall aparat (these need to be cool to remove from the pan). (I use a small plastic knife since my pan is nonstick, they are easy to take out when lukewarm). Set on the cooling rack.
Makes 12 muffins.

My Favorite Soft and Moist Blueberry Muffins
My soft and fluffy blueberry muffins are packed full of sweet, plump blueberries and have slightly sugared tops. Today’s post is packed full of tips for getting the fluffiest muffins with bakery-style tops!
Recipe:
Ingredients
1 ¾ cup all-purpose flour (220g)
1 cup granulated sugar (200g)
2 Tablespoons cornstarch
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1/4 cup unsalted butter, melted (60ml)
¼ cup canola oil (60ml) (may substitute vegetable oil)
1 large egg, room temperature preferred
1 teaspoon vanilla extract
1 cup sour cream (240g)
1 3/4 cup blueberries (245g) (fresh or frozen will work, if using frozen you do not need to thaw first, and note that they may leave purple streaks through your muffins).
Coarse sugar for sprinkling, optional (may just use regular granulated sugar).

Instructions
00:00 Introduction
00:19 Preheat oven to 425 (215C) and line a 12 count muffin tin with paper liners.
00:25 In a medium-sized bowl, whisk together flour, sugar, baking powder, baking soda, cornstarch, salt.
00:49 In a separate bowl whisk together butter and canola oil. Add egg and vanilla. Stir in sour cream until thoroughly combined.
01:48 Add wet ingredients to dry and gently fold together with a spatula until mostly combined. Once the batter is about 75% combined, add the blueberries and fold them in as well until batter is completely combined (don’t over-mix!).
02:40 Evenly divide muffin batter into prepared tin. Liners will be most of the way full!
03:04 Transfer to 425F (215C) preheated oven and bake for 8 minutes. After 8 minutes reduce the oven temperature to 350F (175C) without opening the oven door and then continue to bake another 10-12 minutes or until the tops are beginning to turn golden brown and a toothpick inserted in the center comes out clean or with a few moist crumbs.
03:44 Allow to cool 10 minutes in muffin tin then gently remove from pan (I like to use a butter knife to gently pry the muffin out of the tin, remember the pan may still be hot and muffins are fragile when they are warm!) and allow to cool completely on a cooling rack.

2 large eggs
1 cup [240 ml] fresh milk
1/2 cup [120 ml] vegetable oil
1 tsp [5 ml] vanilla extract
1/2 cup [100 grams] granulated sugar
1/2 cup [100 grams] light or dark brown sugar
2 & 1/2 cups [320 grams] all purpose flour
1 tbsp baking powder (double acting)
1/2 tsp salt
350 grams canned or fresh blueberries (may adjust amount as desired)

•Muffins are very easy to make when it comes to ingredients and mixing process. But some important factors must be considered when baking muffins to prevent fail such as follows;
-Do not overmix the batter.
-Make sure to use fresh leavener or baking agent (powder/soda).
-Do not open the oven door while baking until the muffin is nearly done.Opening the oven door too early could deflate the muffin.
-Do not overload muffins with heavy add-ons(ex..blueberries, raisins, choco chips or any fruits). Such dense muffin are less likely to dome or rise.
-Batter consistency may affect if adding/using canned fruits with light or thick syrup. Juice from the fruits can add moist to the muffin thus adds hydration ti the batter.
-Type of sugar may also affect the muffin’s texture. If the recipe calls for brown sugar which is naturally moist so it consequently makes the muffin softer & moister.Thus, using pure white sugar may result to a different texture.
-Check temperature accuracy. Temp. can be set up to 220C for the first 5 to 7 mins. of baking the muffins to get a good rise then reduce the temp. for the remaining baking time.
-Baking time may also depend on the size of muffin.
-For some may want a puffed muffin top, that may require an addition of flour.

Let's make a delicious blueberry muffin.

150 g of dried blueberries, 1 cup of water,
Rum 1/2 TBSP (optional)
Blueberries can be frozen or raw blueberries
200 g butter (room temperature 30 minutes)
160g sugar
A little vanilla extract, 3 eggs
Cake flour 300g
Baking Powder6g, Baking Soda2g,
40 g of milk
Blueberry 150g + Wheat Flour 10g
Use butter, eggs and milk at room temperature (30 minutes)
Do not add water and rum when using frozen or fresh blueberries.
