OIL FREE MEXICAN RICE RECIPE | WFPB/Plant-Based/Vegan
OIL FREE MEXICAN RICE RECIPE | WFPB/Plant-Based/Vegan/Starch Solution/Mary's Mini Friendly
ingredients:
1 cup of rice of your choice
1 1/2 cup water
1/4 onion, chopped (any kind is fine, I used red)
1 clove of garlic (less o more to your liking)
1 1/2 tbsp tomato paste
2 tsp broth base seasoning (I used Orrington Farms Vegan Broth Base, can be purchased on Amazon)
1/2 tsp salt (optional)
Pinch of oregano (optional)
Instructions:
1. In a food processor or blender, add chopped onion, garlic cloves, tomato paste, broth seasoning, and oregano. Blend until the mixture becomes a well blended creamy consistency.
2. In a pan, toast your rice (must be dry) until it is lightly golden or you begin to smell the aroma, about 8 minutes. (*You can skip this step if you are worried about arsenic in your rice, you can wash your rice first then wait to dry to toast, or skip the toasting altogether*).
3. After toasting, set the rice aside in a bowl and let the pan cool off a bit. This is important because you are not using oil and do not want the mixture or rice to burn.
4. Once the pan has cooled down, add in the blended mixture (you can add a bit of water for easier stirring) and cook for a few minutes until sizzling.
5. Add the rice to the mixture. Add 1 1/2 cup water and mix well. Cook over high heat until it comes to a boil and then reduce heat to low and cover. It should take about 10 minutes to cook, based on your stove.
6. Once rice is cooked, uncover and let it sit for 20-30 minutes, then fluff with a fork and enjoy!
Easier Version
Ingredients:

1/2 cup marinara ( I used Whole Foods oil free marinara sauce)
1 1/2 tbsp tomato paste
2 tsp broth base seasoning

6. Once rice is cooked, uncover and let it sit for 20-30 minutes, then fluff with a fork and enjoy!

Spanish Rice (Mexican Rice) Using a Rice Cooker (Fat Free, Vegan, Oil Free) | One Minute Recipes
This quick recipe shows you how to make Spanish rice / Mexican rice in a rice cooker. While there are many recipes online, this one differs because it is oil-free, cholesterol-free, and fat free (The only fat is that naturally occurring in the ingredients.), vegetarian, and completely vegan.

♥ 2 cups long grain rice, washed and drained
♥ 2 cups water (broth or stock is better)
♥ 8 oz can tomato sauce
♥ 1 yellow onion
♥ 2 cloves garlic
♥ pinch dried oregano
♥ salt and pepper to taste (I used around ½ teaspoon salt)
*Amounts are approximate. Adjust a little here are there as needed.
