MEASUREMENTS AND RECIPE LINKS:

❤️Chicken Enchilada Skillet (3-4 servings, more if you add rice)
-2 chicken breasts, cut in half
-1 tsp of garlic powder
-1/2 tsp of cumin
-1/2 tsp of oregano
-1/8tsp of pepper
-1/4 tsp of salt
-1 (15 oz) can of drained and rinsed black beans
-1 (19 oz) can of red enchilada sauce
-1/2 cup of medium salsa
-6 corn tortillas cut up, toast them if you prefer
-1 cup of Mexican style cheese
Top with any of your favorite toppings, sour cream, avocado, roma tomatoes…etc
Add rice to stretch this and make it more filling.

❤️Chicken Parmesan Meatloaf (5-6 servings)
-1 lb of ground chicken
-1/2 a small yellow onion finely chopped
-1 tbsp minced garlic
-1/3 bread crumbs
-1 egg
-1 tbsp of parsley
-2 tsp Italian seasoning
-1/4 tsp of salt
-1 cup of freshly shredded mozzarella cheese
-1 (24 oz) jar of spaghetti sauce, only 1/4-1/2 cup is needed for the meatloaf, the rest can go over pasta
-4 slices of mozzarella cheese for on top
Bake on 400° degrees for 40 minutes, then top with the cheese slices and cook 10 more minutes or until the chicken is 165° degrees and the cheese is golden✨
❤️Ricotta Pizza (large pizza)
-1 large pizza dough/crust
-1 tsp of minced garlic
-1 tsp of rosemary OR oregano
-2 tsp of olive oil
-1 cup of ricotta cheese
-1 1/4 cups of shredded mozzarella cheese
-1/2 cup of fresh shredded parmesan cheese
-OPTIONAL: Sprinkle with red pepper flakes
-Sprinkle with parsley
Bake on 400° degrees for 12-ish minutes until the dough is cooked and cheese is golden✨

Pork Tenderloin with Oven Veggies
-1 Garlic and Herb Smithfield Pork Loin about 2 lbs
-2 red potatoes cubed
-1 yellow potato cubed
-1 yellow squashed sliced
-2 large carrots cut up
-10 to 15 frozen brussel sprouts
-2 to 3 tbsp of olive oil
-1 tsp Garlic and Herb All Purpose Seasoning
-1/2 tsp of garlic powder
-1 tsp of Kinders Buttery Steakhouse seasoning
-a few shakes of salt
Bake on 375 for 15 minutes, mix the veggies and potatoes then bake 10 ish more minutes!
Steak and Pepper Pitas
-1 (4 pk) of pitas
-1 red bell pepper sliced
-1/4 to 1/2 a large red onion sliced
-8 oz of mushrooms sliced
-1 lb of thin sirloin steak sliced, large fatty pieces removed
-2 tbsp olive oil
-1 tbsp of butter
-1/2 tsp of garlic powder
-1 tsp of oregano
-1/4 tsp of pepper
-a few shakes of salt (to taste)
-sour cream
-shredded mild cheddar cheese
I warmed the pitas in a skillet lightly.You can also serve this over a salad or in a tortilla
Fish Taco Bowls
-4 pieces of your fav fish, I used cod
-2 tbsp of taco seasoning
-olive oil/ butter for cooking
-Mexican rice or riced cauliflower (recipe for cauliflower below)
Easy Pico
-1 roma tomato, chopped
-a small amount of red onion finely chopped
-a small handful of cilantro chopped
-a few drops of lime juice
-a dash of salt
For the sour cream i just mixed about 1/4 cup with a few drops of lime juice until it was tangy enough for me.
Top with any other desired taco toppings.

Beef Picadillo with Potatoes - Mexican Style (Ground Beef with Potatoes)

Serving size: 3-4 people
Ingredients:
-1 lb of ground beef
-2 tablespoons of butter (estimated)
-3 tablespoons of olive oil (estimated)
-1 medium Russet potato or 2 white potatoes
-Half of a Tablespoon of garlic salt (estimated - add more or less if preferred)
-1 teaspoon of ground cumin
-Half a teaspoon of tomato bouillon (optional but recommended)
-2 large roma tomatoes (quartered)
-1 to 2 Serrano peppers chopped (depending on amount of heat desired)
-1 clove of minced garlic
-1/4 of a white onion (minced)
-1/4 cup of water
-Salt & pepper
Instructions:
- Rinse potatoes and peel completely. Cut into medium size cubes, about the same size to cook evenly.
- In a medium size pan, heat about 2 tablespoons of butter over medium low heat.
- Add potatoes to pan, season with salt and pepper and cover to cook for about 15 minutes. Stir occasionally.
- After about 15 minutes, turn heat up to medium high and cook potatoes for additional 5 minutes or until golden brown (uncovered), set aside.
- Rinse tomatoes and serrano peppers, briefly chop peppers and quarter the tomatoes. Add tomatoes, peppers, 1/4 of water, and 1/2 of a teaspoon of salt to the blender and blend until smooth.
- Mince one clove of garlic and 1/4 of an onion, set aside.
- In a large pan heat about 3 tablespoons of olive oil over medium high heat. Add ground beef and season with garlic salt and cumin powder.
- Once meat is almost fully cooked (no more pink or red), add in garlic and onion and cook for an additional 3 to 4 minutes.
- (OPTIONAL) Add tomato bouillon powder and combine.
- Add sauce to meat, bring to a light boil then reduce temperature to a simmer until sauce thickens. Fold in potatoes.

1 egg yolk
1 tbsp of instant coffee
1 tbsp of warm water
1 can of condensed milk (397g)
fil the same can with milk (290 ml)
1/2 tbsp of liquid vanilla

THE BEST GROUND BEEF NACHOS - EASY QUESO ROTEL DIP
Nachos are always a comfort food - who doesn't love cheese? Well I'm here to share a Nachos recipe made with ground beef, velveeta, and Rotel that you NEED to try! Can also be used more specifically as a Rotel Dip. These are the perfect snack or appetizer for any party or get together. I hope you enjoy!
INGREDIENTS:
- Garlic Salt to Season
- 1 TBSP of oil to cook ground beef
- 1 lb of ground beef
- 16 oz block of Velveeta cheese (Original)
- Your choice of tortilla chips
- One 10 oz can of Rotel (I used the Mild version)
- 1/2 cup of water
- OPTIONAL: Pico de Gallo or Guacamole
DIRECTIONS:
- Begin by cooking ground beef fully, set aside once fully cooked
- Cut Velveeta cheese into small squares (for easier melting)
- In a larger pot or saucepan, pour half of the cheese, the entire Rotel can, and 1/4 cup of water and cook over a Low heat. Stir continuously.
- Once most of the cheese is melted, pour the rest of the cheese in and melt completely.
- After all cheese is melted, add in 1 cup of cooked Ground Beef and 1/4 cup of water. Mix in completely.
