How To make Mel's Mexican Rice
2 c Long-grain rice;uncooked*
2 Cloves garlic; crushed
1/4 c Corn oil
5 c Chicken broth; **
* NOT Uncle Ben's converted type or the precooked type. ** When using substitutions (see below) always remember to keep the proportions of rice to liquid the same. Heat the oil on med-high in a large skillet or 4-5 quart pot. Add the garlic and sautee about 1 minute. Add the rice and fry it, stirring frequently, until the rice is golden brown. Add the liquid and stir. When it comes to a boil, lower to a simmer, stir once more and cover. Cook until all water is absorbed. This is the basic recipe, and there is a lot more you can do with it. For example: Substitute 1/2 cup tomato juice, or a pureed tomato, for part of the liquid. Substitute part of the liquid with black bean soup broth. Add 1/2 cup frozen peas and carrots. Add 1/2 cup sliced mushroom and green onion. Use beef or other broth instead of chicken. Add 1/2 cup cooked chick peas(garbanzo). Substitute part of the rice with some vermicelli. The possibilities are really endless if you use your imagination. Just stick to the basic recipe and proportion of rice to liquid. From Melanie Miguel

Pizza Casserole ????(could serve 4-6)
-1 onion sliced and then cut in half
-1 green bell pepper chopped
-8 oz of mushrooms sliced
-1 lb of ground mild italian sausage
-1 tbsp of minced garlic
-1 (24 oz) jar of your favorite marinara or spaghetti sauce
-1/2 tsp of red pepper flakes (OPTIONAL)
-1 package of pepperoni, I used turkey (less greasy)
-1 to 2 cups of shredded mozzarella (freshly shredded is better)
-1 can of pizza dough
-2 tbsp of butter
-1/2 tsp of garlic powder
-1/2 tsp of oregano
a few shakes of grated parmesan cheese and parsley to top it off after baking
Baked at 350 for 12 minutes or until crust is golden????

“BRATS” Casserole (4-6 people)
**I pretty much made this up so I listed ingredients as close as possible**
-1 lb of mild italian brats, cooked and sliced
-about 1 to 1 1/2 lbs of potatoes cubed with skin
-2 tbsp of olive oil and 2 tbsp of butter to fry potatoes
-1-2 tsp cajun/creole seasoning (or to taste)
-1/4 tsp of pepper (or to taste)
-3/4 tsp of garlic powder (or to taste)
-1/2 tsp of onion powder (or to taste)
-8 oz of sliced mushrooms
-1 yellow onion sliced, and cut in half again
-1 bell pepper of choice cubed (I used red)
-1/3 of a bag of cooked small shrimp, deveined and tail off
-1 cup of shredded mozzarella or cheese of choice.
Served with watermelon!!????

What I did differently:
-I cooked the bacon first and then cooked the onion in the same pan for extra flavor!
-used heavy cream instead of regular milk
-seasoned a little extra with salt pepper and garlic powder.
-I layer it more like a lasagna in 2 layers.
Served with italian style green beans!

Southwestern Casserole
-1/2 yellow onion chopped
-2 chicken breasts cubed
-1 cup of long grain white rice (not instant)
-1 tbsp of minced garlic
-1 cup of low sodium chicken broth
-1 can of drained and rinsed black beans
-1 can of corn( i actually only use about half the can but thats just me)
-1/2 tsp of cumin
-1/2 tsp of onion powder
-1/2 tsp of chili powder
-1/2 tsp of paprika
-a few shakes of pepper
-a few shakes of Cayenne
-1/4 to 1/2 tsp of salt
-1 (16 oz) jar of salsa mild or spicy
-1 to 2 cups (or more????) of mexican style shredded cheese
Topped with sour cream, guacamole, hot sauce, cilantro… etc!!

Feta Tomato Pasta (can serve about 6-8 people with a vegetable side)
-2 Chicken Breasts
-1 (14 oz can) of italian style diced tomatoes
-1 (8 oz) block of cream cheese, cubed
-1 (8 oz) block of feta cheese
-1 tbsp of minced garlic
-1 tsp of salt
-1 tsp of oregano
-1/4 red pepper flakes (OPTIONAL)
-1/4 tsp of pepper
-1/4 tsp of thyme
-1/4 tsp of onion powder
-10-12 oz of pasta, any shape!
Top with parmesan and serve with broccoli.
Enchilada Beef (Serves 8-10 if made with rice)
-1 1/2- 2 lb chuck roast
-1 (10 oz can) of red enchilada sauce
-1 (4 oz can) of green chiles
-3/4 cup of beef broth
-1 cup of your fav salsa, I use a medium heat salsa for kick!
-1 tbsp of minced garlic
-1/2 onion thats been chopped
-1 tsp of chili powder
-1 tsp of cumin
-1 tsp of pepper
-1/4-1/2 tsp of salt ( can always adjust seasonings at the end!)
-1 (15 oz can) of black beans, drained and rinsed
-1 cup of triple cheddar MIXED IN TO BEEF
-1 cup of Triple cheddar melted over the top
Serve with mexican rice, sour cream, pico, and sliced avocado or toppings of choice:)
Cheesy Mushroom and Chicken Pasta (serves approx.4-5)
-1/2 yellow onion chopped
-8 oz of mushrooms, sliced
-1 large chicken breast
-1 (10 oz can) of cream of chicken soup
-1/2 cup of low sodium chicken broth
-1/4 tsp of pepper, or to taste
-1/2 tsp of oregano
-1/2 tsp of garlic powder
-1/2 tsp of onion powder
-SALT TO TASTE
-8 oz of cooked pasta
-1/2-3/4 cup of sour cream
-1 cup of shredded cheddar MIXED IN TO PASTA
-1 cup of shredded cheddar melted on the top
Serve with breadsticks!

One-Pan Easy Enchiladas
-an oven safe skillet
-2 chicken breasts cut into bite size pieces
-a few tbsp of olive oil for cooking
-1/4 tsp of salt
-a few shakes of pepper
-1/4 tsp of chipotle chili powder
-1/2 tsp of cumin
-1/2 tsp of onion powder
-2 (10 oz) cans of mild enchilada red sauce
-1 (10 oz) can of diced tomatoes with green chiles
-2 cups of shredded Mexican style cheese
-1 package of your favorite tortillas (I only used 6)
Top with sour cream and hot sauce or your favorite toppings!
Bake on 375 for 20 minutes uncovered????

Turkey and Potato Skillet
-2 large potatoes cubed (I had to use 5 potatoes because they were smaller)
-1 lb of ground turkey
-1 tbsp of minced garlic
-1 (10 oz) can of diced tomatoes with green chiles (don’t drain)
-1 (15 oz) can of black beans drained and rinsed
-1 tsp of salt
-1 tsp of chili powder
-1 tsp of cumin
-maybe a 1/4 tsp of chipotle chili powder
-1 to 1/2 cups of shredded mild cheddar, colby jack or mexican style cheese
Top with sour cream salsa and green onions!!
Cook the potatoes in the microwave for 5 minutes then the rest is done in the skillet!

Creamy Tuscan Potato Skillet
-2 chicken breasts cut in half to make 4
-1 tbsp of butter
-1 tbsp of olive oil
-season chicken with salt pepper and garlic powder on both sides (no measurements)
-1 lb of baby red potatoes cut in half
-a little more olive oil may be needed for the potatoes
-1 tsp of minced garlic
-1/2 tsp of salt to start
-1/4 tsp of basil
-1/4 tsp of oregano
-a few shakes of pepper
Be sure to adjust your seasonings according to taste
-1/4 cup of frozen spinach
-1 (10 oz) can of diced tomatoes with celery, green pepper, and onion!
-1/2 cup of chicken broth or veggie broth
-1 tbsp of cornstarch
-1/2 cup of heavy cream (half and half can be substituted if needed )
-1/2 cup of shredded parmesan cheese (freshly shredded is BEST)
Top with extra shredded parmesan!
