Directions:
In a medium saucepan, bring the water to a boil. Stir in the rice. Reduce heat, cover, and simmer 20 minutes. Preheat oven to 350 degrees F (175 degrees C). In a skillet over medium heat, cook the sausage until evenly brown. In a medium baking dish, mix the cooked rice, cooked sausage, picante sauce, and sour cream. Top with cheddar cheese. Bake 20 minutes in the preheated oven, until cheese is bubbly.

Mexican Rice, also known as Arroz Rojo or Spanish Rice, is a zesty and flavorful vegan dish. This Mexican rice recipe features hearty long-grained rice, sautéed with tomatoes and lots of veggies and spices. It’s easy to make as a quick dinner or satisfying lunch.
It's a flavored and healthy rice-based side dish recipe prepared with tomatoes and vegetable stock. it is a popular dish in Mexico and Spain but in India, it is mainly served for mains and as a lunch box recipe. the rice is very similar to our own vegetable pulao recipe and tastes good when served with raita or spicy curry.
Ingredients:-
1 TBSP OIL
1 TSP BUTTER
1 TSP GARLIC (Chopped)
1 ONION (Chopped)
1/2 CUP FRESH TOMATO PUREE
SALT TO TASTE
1 RED CHILLY POWDER
1 TBSP TOMATO SAUCE
1 TSP CUMIN SEEDS POWDER
1 TSP CORIANDER POWDER
1 TSP OREGANO
1 TSP RED CHILLY FLAKES
2 TBSP SWEET CORN (Boiled)
2 TBSP RED BELL PEPPER
2 TBSP YELLOW BELL PEPPER
2 TBSP CAPSICUM
1/2 CUP RAJMA/KIDNEY BEANS (Boiled)
1/2 TSP BLACK PEPPER POWDER
2-3 TBSP WATER
1 CUP BASMATI RICE (Boiled)
Method:-
➡️Heat up a pan and add oil and butter.
➡️When heated add garlic and onion and cook until onions turn light golden brown.
➡️Then add fresh tomato puree and salt and cook further for 2-3 minutes.
➡️Then add tomato ketchup and all the spices and cook further for 2-3 minutes.
➡️Then add vegetables and cook on high flame for a minute.
➡️Then add rajma and water, and mix them well.
➡️Finally, add rice and mix them gently.
➡️Mexican Rice is ready to serve.

-Chicken fillets 250g
-Cooking oil 1 & ½ tbs
-Anday (Eggs) whisked 3
-Cooking oil 2 tbs
-Lehsan (Garlic) chopped 1 tbs
-Gajar (Carrot) julienne ½ Cup
-Shimla mirch (Capsicum) julienne ½ Cup
-Bund gobhi (Cabbage) 3/4 Cup
-Sugar ½ tsp
-Namak (Salt) 1/4 tsp or to taste
-Chawal (Rice) basmati ½ kg (soaked & boiled with salt)
-Knorr chicken powder 1 tbs
-Kali mirch powder (Black pepper powder) 1 tsp
-Safed mirch powder (White pepper powder) ½ tsp
-Sirka (Vinegar) 1 tbs
-Soy sauce 1 & ½ tbs
-Hara pyaz (Green onion) leaves ½ Cup

Directions:
-Cut chicken fillet into thin strips & set aside.
-In wok,add cooking oil and eggs,mix well and cook until crumbled & set aside.
-In the same wok,add cooking oil,garlic and fry until light golden.
-Add chicken and mix well until it changes color and cook for 2-3 minutes.
-Add carrot,capsicum and mix well for a minute.
-Add cabbage and mix well.
-Add sugar,salt and mix well.
-Add boiled rice and give it a good mix.
-Add chicken powder and mix well.
-Add black pepper powder,white pepper powder,vinegar,soy sauce and mix well.
-Now add eggs,green onion leaves and mix.
-Garnish with green onion leaves & serve!

-Chicken dal dein aur rang tabdeel hunay tak ache tarhan mix karein aur 2-3 minutes kliya paka lein.

Hola and Happy Cinco de Mayo my Friends, welcome to my Southern Kitchen!
Today I am making a classic Mexican Side Dish, Mexican Rice AKA Spanish Rice but with a twist using Brown Rice!
Moist, healthy, and full of Mexican flavors; perfect with your favorite Mexican dishes, taste like you’ll get at a Mexican Restaurant and it is Restaurant Quality!!!

1/2 cup (1 bunch) green onions (both white and green parts)
1 red bell pepper, diced (or any color)
1/4 cup canola or olive oil, plus more for the rice
1 tablespoon unsalted butter
2 cups uncooked long grain brown rice, rinced
3 3/4 to 4 cups vegetable broth (or chicken broth)
1 1/4 cups crushed tomatoes
2 teaspoons kosher salt
2 teaspoons garlic powder
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
Freshly chopped cilantro or parsley, for garnish (optional)
In a large pot over medium heat, add in the 1/4 cup oil and bring to temperature. Next add In the green onions and bell pepper and fry until translucent about 5 minutes. Remove the veggies from the pot (pat them with paper towels to drain the oil) and set aside. In the same pot and temperature, add a little more oil and butter then add in the brown rice, stir constantly and let it brown and toast for 8 to 10 minutes. Add in the vegetable stock, reserved green onions and bell pepper, crushed tomatoes, salt, garlic powder, cumin, and cayenne pepper; stir until well incorporated turn the heat up to high and bring to a boil. After it comes to a boil, cover, turn the heat down to low and simmer for 45 to 55 minutes or until all the liquid has absorbed and the rice is soft. Turn the heat off, fluff the rice, pour into a bowl, garnish with chopped cilantro or parsley (if desired) serve immediately and enjoy!
