How To make Mexican Cinnamon Rice

onion, chopped

garlic clove, finely chopped

margarine or butter

cup
regular rice, uncooked
1/2
cup
currants
2 1/4

chicken broth

teaspoon
cinnamon, ground
1/4
teaspoon
salt
1
cilantro, fresh, snipped (to taste)
Directions:
Cook and stir the onion and garlic in the margarine in a 3 quart saucepan until the onion is tender. Stir in the remaining ingredients except the cilantro. Heat to boiling, stirring once or twice, then reduce the heat and simmer, covered, 16 minutes. (DO NOT lift the cover or stir.) Remove from the heat and fluff the rice lightly with a fork. Recover and let steam for about 10 minutes before adding the cilantro.

Basic Rice Pudding
Serves 6 to 8
Ingredients:
1 cup medium grain white rice
4½ cups whole milk
1 tablespoon butter
½ cup sugar
1 cinnamon stick
1 teaspoon pure vanilla extract
½ cup heavy cream
ground cinnamon (for garnish)
Directions:
1. Place the rice, milk, butter, sugar and cinnamon stick into a non-stick saucepan. Bring the mixture to a simmer, reduce the heat and simmer gently, covered but stirring occasionally for 35 minutes, or until the rice has absorbed the liquid. Stir in the vanilla extract, the heavy cream and any other flavoring ingredients you choose. Loosen to the desired consistency.
2. Remove the cinnamon stick and decide if you are serving this warm or cold. If you are serving this warm, spoon the pudding into bowls, topping with a sprinkling of ground cinnamon or a little heavy cream, some nuts, raisins, chocolate, or whatever you like. If you are serving this cold later, transfer the pudding to a baking dish and cover with plastic wrap (pressing the wrap right down onto the surface of the pudding). You may need to loosen the pudding again once it is cool.

Horchata recipe - a refreshing creamy rice milk drink with Ceylon cinnamon and spices
Horchata is a classic Mexican drink that is a liquid culinary journey south of the boarder. For years we have been fortunate enough to enjoy this refreshing drink anywhere from taco stands, small towns, villages, and now in the comfort of our own homes, we believe this is one of the most universally loved drinks from Mexico. A mixture of white rice, Ceylon cinnamon (commonly referred as Mexican cinnamon) vanilla, sugar and splash of milk (optional but recommended) this drink is best served fully chilled.
Ingredients:
1 cup white rice
2 cups water + 1 cup water
1 Ceylon cinnamon stick
1 cup milk
½ cup white sugar
1 tablespoon vanilla extract
½ teaspoon ground Ceylon cinnamon
Directions for making horchata at home:
1. In a blender add rice, water and cinnamon sticks. Allow them to soak for 3-5 hours.
2. Roughly grind the rice mixture and add the remaining cup of water. Puree the mixture until smooth for another 2 minutes.
3. Pour the rice mixture over sieve into a bowl and discard the lumps.
4. Add the milk, sugar, vanilla extract and ground cinnamon into the rice water. Mix it well and refrigerate for an hour at minimum or more.
5. Before serving, stir well and pour over the glass filled with ice cubes.

A dish I learned from my grandmother, Arroz con Leche. it's a vegetarian recipe, creamy cinnamon rice pudding.
A dish that is usually eaten for spring.
It is very easy to prepare this recipe.

4 orange zest
4 lemon zest
1 cinnamon stick
100g of rice
1l of milk
75g sugar
30g butter

How To Make - Cinnamon Arroz con Leche || Easy Recipe
Ingredients:
3 cups of milk
1 cups of rice
2 cups of water
1/2 cup of sugar
Add 2 cups of water and cinnamon sticks to a medium size pot and bring to a boil. After about 10 minutes, the water will be infused with the cinnamon(basically making tea). The, add your rice and stir.
After rice absorbs all the water, add 3 cups of milk and 1/2 cup of sugar. Keep on medium-high heat and keep an eye on it. It should be getting thicker the longer it cooks.
Stir often so the rice doesn't stick to the bottom. When you think its ready, take a fork and taste test it. If it's too grainy or chewy, it's not done. It should be easy to bite through.
When it's ready, get a bowl or plate and spread throughout. Add cinnamon powder on top and let cool.
