How To make Mexican Meatball Soup
MEATBALLS:
1 lb Ground round
1/2 md Onion; minced
2 tb Bread crumbs
1 tb Fresh mint minced OR 1 ts
-of dried mint crushed 1 Egg; slightly beaten
1/2 ts Salt
pn Cumin 2 tb Raw rice
brOTH:
16 oz Can whole tomatoes
1 md Onion; copped
2 Garlic cloves, minced
1 tb Oil
6 c Beef OR chicken stock
2 Carrots; sliced
2 Zucchini; sliced
1/2 ts Salt or to taste
GARNISH:
Salsa Sour Cream Place all the ingredients for the meatballs in a bowl, mix together thoroughly. Form small meatballs. Moisten your hands frequently with cold water to prevent the meat from sticking. Drain juice from the tomatoes and reserve. Coarsely chop the tomatoes. Set aside. In soup pot, saute onion and garlic in oil until soft. Add the stock and bring to a boil. Slowly add the meatballs and bring to a second boil; skim if necessary. Reduce heat, add the tomatoes and their juice. Cover and simmer 20 minutes. Add carrots and zucchini. Check for seasoning and salt if necessary. Cover and continue cooking for 30 minutes. Source: Calif. Culinary Academy-Mexican Cooking

ALBONDIGAS INGREDIENTS:
For the meatballs:
► 1 1/2 lbs ground beef
► 1/3 white onion
► 1 minced garlic clove
► Some cilantro
► 1/8 tsp black pepper
► 1/4 tsp oregano
► 2 eggs at room temperature
► 1/3 cup of rice
► Salt to taste
For the soup:
► 2 minced garlic cloves
► 1/4 white onion
► 3 tomatoes
► 2 tbsp beef bouillon
► Pepper to taste
► 2 corn on the cob
► 2 chipotle peppers in adobo sauce
► 1 carrot
► 2 small potatoes
► 1/2 lb green beans
► 1 zucchini
► Bunch of cilantro
► Salt to taste

Albondigas Soup {Easy, Mexican Meatball Soup}
This Albondigas Soup, is a hearty, healthy, Mexican soup made with beef & rice meatballs, potatoes, and veggies cooked in a flavorful tomato broth. It's an easy one-pot meal made on the stove top! But you can also make it in the Instant Pot or Crock Pot...instructions included on recipe card!
Note: For the meatballs I used cilantro, because it's what I always have on hand. But, you can also use fresh mint (or a combo of mint and cilantro) and it's also delicious!

Tip:
Skim the top of broth as often as possible this all depends on the ground beef you use also if you don’t want this to be a little spicy use 1 chipotle or just skip in it I personally love the flavor it gives also use tomato sauce instead

For the broth:
3 roma tomatoes
1/4 onion
2 garlic cloves
3 chipotle peppers in adobo sauce (optional)
7 oz el pato hot sauce or tomato sauce
1 tbsp chicken bouillon
1 tbsp tomato bouillon
1 1/2 tsp salt
1/2 tsp cumin
1/2 tsp black pepper
For the meatballs
2 lbs ground beef
30 unsalted saltine crackers (pulverized)
1/4 onion;finely chopped
1/2 cup;finely chopped
2 minced garlic cloves
1 chipotle in adobo sauce ;finely chopped
2 tsp garlic salt
2 tsp oregano
2 tsp black pepper
1/2 tsp ground cumin
1/2 tsp salt

Today I am making a subscriber-requested recipe of albondigas en caldillo or Mexican meatball soup. This Mexican-style soup is a family favorite and tastes even better the next day.

1/2 cup uncooked rice
1/2 tsp onion powder
1/2 tsp garlic powder
1 tsp salt

PUREE INGREDIENTS
1 Roma tomato
2 garlic cloves
1 guajillo chile
1 cup water
2 Tbsp beef bouillon powder
1/2 tsp cumin seeds
1/2 tsp cracked black pepper
1/2 tsp dried oregano
SOUP INGREDIENTS
1/2 small onion
1 celery stock
1 large carrot
1 1/2 lb potatoes
2 Mexican squash
1 dried bay leaf
6 cups water
