How To make Bulgarian Meatball Soup
1 lb Ground beef
6 tb Rice
1 t Paprika
1 t Dried savory
Salt, pepper Flour 6 c Water
2 Beef bouillon cubes
1/2 Bunch green onions
sliced
1 Green bell pepper :
chopped
2 Carrots peeled,sliced thin
3 Tomatoes :
peeled & chopped
1 Sm. yellow chiles, split *
1/2 Bunch parsley -- minced
1 Egg
1 Lemon (Juice only)
*Note: Remove most of the seeds from the chiles. Combine beef, rice, paprika and savory. Season to taste with salt and pepper. Mix lightly but thoroughly. Form into 1-inch balls, then roll in flour. Combine water, bouillon cubes, 1 tablespoon salt, 1 teaspoon pepper, green onions, green pepper, carrots and tomatoes in large kettle. Cover, bring to boil, reduce heat and simmer 30 minutes. Add meatballs, cover and bring to boil again. Reduce heat and simmer 20 minutes. Add chiles and simmer, covered, 40 minutes or until rice is cooked. Add parsley during
last 5 minutes of cooking time. Taste and add more salt and pepper, if needed. Just before serving, beat egg with lemon juice. Stir 1 to 2 tablespoons hot soup into egg mixture, then stir egg mixture into soup. Heat and stir until soup is thickened slightly, but do not allow to boil.

THE FAMOUS BULGARIAN MEATBALLS (kufteta) - BULGARIAN FOOD RECIPES IN ENGLISH
These are my all time favorite fried Bulgarian meatballs. The recipe belongs to my mom, I only added parsley, which makes it better than hers...
The Bulgarian fried meatballs are also known as kufteta, kyufteta, or kofteta in case you are in Bulgaria and you need to order them in a restaurant :)
For 16 meatballs you will need:
4 pounds of ground pork (2 kilos)
2 eggs
2 large onions (shredded)
1/2 cup of finely chopped parsley
8 hands-full of bread crumbs
4 pinches of salt (1 pinch per pound of ground pork)
1/2 tbsp of grounded black pepper
4 pinches of sharena sol (mixed Bulgarian spices)
4 pinches of dried savory
2 pinches of cumin
2 cloves of minced garlic
Water as needed
1 cup of sunflower or canola oil
Mix all the ingredients very well together (for about 6-7 minutes), cover the container and let it sit in the refrigerator for at least 2 hours.
To form the meatballs, grab a hand full of ground pork and form a patty similar to the hamburger patty. Keep dipping your hands in water so the patties don't stick to them.
In a large frying pan preheat 1 cup of sunflower or canola oil and set the burner to medium.
Fry each meatball for 3 to 4 minutes on each side.

Hello and thank you for visiting Bulgarian Mama Is Cooking YouTube channel! This week's recipe is about soups! Meatball soup is very popular dish in Bulgaria and it is so easy to make! Not to mention delicious! My daughter absolutely loves this soup!
Here is what I added the ground beef:
1/2 cup chopped onions;
1 egg;
1/4 cup bred crumbs;
1/2 tsp salt;
a little bit of black pepper;
a little bit of dried cilantro;
a little bit of dried parsley;
1 tsp cumin powder;
a little bit of dried ginger;
Mix it all up and let it stay at your fridge for over night!
