South West Chipotle Meatballs Recipe
Game day meatballs for your Super Bowl party! This Tex-Mex Southwest chipotle meatball recipe is what you should be cooking for any get together where you need a meatball recipe that your guests will rave about!
Ingredients:
750g (1½ pounds) ground beef
100g grated cheddar cheese
30 mL (2 Tbsp) Cilantro, plus more for garnish
2 cloves garlic, minced
5 mL (1 tsp) ground cumin
5 mL (1 tsp) chipotle chill powder
1 jalapeño, minced
1 large egg
Coarse salt and pepper to taste
15 mL (1 Tbsp) oil
1 onion, chopped
1-2 jalapeño, sliced
16 oz. crushed tomatoes
30 mL (2 Tbsp) chopped chipotle peppers in adobo sauce
Method:
Combine ground beef, cumin, chipotle chill powder, jalapeño, cilantro, cheese, egg, and garlic.
Season with salt and pepper.
Mix, and divide into meatballs.
Heat oil in a large pan over medium-high heat.
Add meatballs and brown on all sides.
Remove the meatballs and add the onions and sliced jalapeños and cook until softened.
Add tomatoes and chipotle peppers and season with salt and pepper.
Stir together and simmer until the flavour develops.
Reduce heat to low and add meatballs tossing in the sauce.
Cover and cook until meatballs are heated through.
Garnish with cilantro, and grated cheese.

What can go wrong???
-not soaking lentils will only require you to cook them longer
-cutting your potato into larger cubes will require you to cook longer than 15 mins ????
‼️‼️Tip!!! Soak your lentils to reduce cooking time by about half.

Optional: bacon,chorizo or ground beef
2 bay leaves
1 onion
2 garlic cloves
1 potato
1 roma tomato
1-2 chile serranos
1 handful of cilantro or parsley
Chicken bouillon or salt
1 tsp black pepper
Top it with lime juice and oregano
Crackers, tortillas, tostadas or bread!

Today I want to share with you how to make the best Mexican chicken tortilla soup or also known as sopa azteca , The flavors on this soup is like no other, it’s soooo delicious and it’s perfect to enjoy on any day, any occasion, specially now that its cold!!!! This soup is not spicy at all the chiles just add a good amount of flavor, if you want it to be spicy, add Chile chipotle or arbol! So I hope you all enjoy it! Old recipe found here ????????

Today we made Albondigas Soup. A very easy and delicious soup to make. You will see how the soup uses very few seasonings as the soup is seasons by the albondigas meatballs with Chorizo and lean ground beef. It makes a heaty meal.
Albondigas are meatballs, often used in a soup, known to many as “Mexican soul food.” Though we consider albondigas soup (or sopa de albondigas) Mexican food, history follows a line that dates back to the sixth Century, where the Islamic influence dominated the region of Southwestern Europe. Then in the 13th Century, the Spanish King Ferdinand and Queen Isabella conquered the region which had been occupied by the Muslims. Many of the culinary traditions were integrated into the Spanish community. From there, albondigas made its way to Mexico by way of the conquistadors, where it has remained and flourished into a cultural favorite.
The Islamic nations of the Middle East influenced many of the European countries with their refinements in the cooking of meatballs. Recipes go back to ancient Baghdad for meatballs, wrapped in pastry dough and deep-fried in coriander oil. Ancient Rome had their version of meatballs as well. Their history shows evidence that they too could have been influenced by Middle Eastern cuisine. Their meat of choice was peacock, followed by pheasant, rabbit, chicken and pork.
In the Spanish language, albondigas translates as “meatballs.” However, the Muslim and Middle Eastern influence is also present in that the Arabic word al-bunduq means “hazelnut,” referring to small meatballs, the size of hazelnuts. There are several references in Spanish cookery indicating the crossover did take place. The Arabic version of this soup also shows evidence that they originated from similar sources.
