Ingredients

round steak, boneless

garlic, clove, minced

pepper

teaspoon
salt

chili powder

tablespoon
prepared mustard

onion, chopped

each
beef bouillon cube, crushed
16
oz
tomatoes, can, cut up
16
oz
kidney beans, can, drained
Directions:
Spread meat with mixture of garlic, pepper, salt, chili powder and mustard. Cut into 1/2 inch wide strips. Place in crockpot. Cover with onion, bouilloin cube and tomatoes. Cover and cook on Low for 6 to 8 hours. Turn control to High. Add beans and cook, covered for 30 minutes.

7—8 Cups of Hot Water
4-Pounds of Chuck Roast (Diezmillo en troso or Chuck Steak)
1-Large Onion or 2-Medium
1-Whole Garlic
10-Medium Bay Leaves
8-Carrots ( add half the carrots first. This will help enhance the broth flavor.
8-Guajillo Chiles or California/ New Mexico Or 1/4 Cup views chili powder
3- Tablespoons Chicken Boullion
1/2 Tablespoon Oregano
1-Teaspoon of Salt (adjust to taste)
Views Birria Chili Oil - (6:25)
Grind all the dry spices in your grinder of choice
4-Guajillo Chiles + 1 extra for infusing
2-Bay leaves
1/2- Tablespoon Oregano
1/2-Tablespoon Chicken Bouillon
1/2-Teaspoon Pepper Corn or 1/2-Teaspoon Black Pepper
1/4- Teaspoon Ground Clove or 2-Cloves
1/2-Teaspoon Granulated Garlic Powder
1/4-Teaspoon Sugar
1-Cup Canola or Vegetable Oil
For Spicy oil add
10- Chiltepines or 1/2- Teaspoon Cayenne Pepper
4-Puya Chiles
Toppings
1/2- Chopped White Onion
1/2-Bunch Chopped Cilantro
1/4-Finely Chopped Green Cabbage
Lemon or lime to taste

BIRRIA TACOS | Crockpot Slow Cooker Mexican Beef Recipe
Birria is a Mexican stewed meat originating from Jalisco. There are many variations through out the different regions of Mexico. Goat is a typical meat used for birria, but I like beef. You can also use lamb in place of the beef. Today I am making tacos so I am using less liquid for that purpose. For a soupier version of this add more beef broth to the Crock Pot. :)
INGREDIENTS
3 lbs beef shanks or Chuck roast meat (you can also use lamb meat)
3 guajillo chiles
1 ancho chile
1 pasilla chile
3 cups (24 oz) beef broth (1 cup for chile puree and 2 cups for Crock Pot)
**add 2 to 3 more cups of beef broth if you want it soupier**
**I used this for tacos so less liquid worked better for me**
2 tsp Mexican oregano
1 tbsp fresh thyme ( sub with 1 tsp dried thyme)
1/8 to 1/4 tsp cinnamon (adjust to your preference)
1/8 to 1/4 tsp ground clove (adjust to your preference)
2 bay leaves
salt and pepper to your taste
1/2 medium onion
6 to 7 cloves garlic
**I used a 4.5 quart Crock Pot
**Slow cook on high for 4 to 6 hours or cook on low for 6 to 8 hours

In South Texas barbacoa is a year round tradition and a must have weekend breakfast along side some corn tortillas, salsa, menudo, pan dulce and don't forget the cafecito.
Heeeeere in the 956 you can buy it by the pound in every city and at every meat market and tortilleria, even HEB sells it by the ton! Real barbacoa is made with cachete, and/or lengua and when mixed together its called, “barbacoa especial.”
The beef cheek is fatty, the tongue is lean and the two together make the perfect blend, and that's why it’s special.
You can buy it just about anywhere in South Texas but once in a while we love to make it here at home and we’re gonna show exactly how to cook it perfectly every single time.
The two most popular ways to make it at home are in the crock pot or in the oven - today it’s 8 lbs so we’re using the oven!
The most important pro tip is that you need to cook it low and slow since these are tough cuts of meat, this way the fat fully renders and you get some delicious super tender and juicy barbacoa at the end. The flavors of the meat are so good you only need a couple of simple ingredients.
In this recipe we’re gonna use:
– 8 lbs of cachete, thats beef cheek in english
– One whole lengua, thats tongue meat
– One garlic clove
– One bay leaf
– A light shake of APC OG (salt pepper garlic in the perfect ratio)
– And of course some super good homemade salsa

– Then add one boiled roma tomato, 1 tsp of olive oil, and blend to emulsify.
Were gonna slow cook it in the oven for 6-7 hours. Now let’s get fired up and start cooking barbacoa!
