Beef Madras curry- Easy recipe with slow cooker
Today I am making a simple beef Madras. The goal is to make a delicious curry with minimum effort. It is especially useful when I am busy yet want to cook something delightful.
This simplified recipe uses store-bought ground spices and relies on my slow cooker to do most passive cooking.
This beef Madras recipe is not very hot and can be served with flavored rice, naan, and cooling raita (Indian yogurt salad) for a complete meal.
I hope you will enjoy this curry.

(Please download the recipe and read the full details at )
Ingredients A
2 tbsp cooking oil
1 kg beef (chuck, brisket, or rump) cut into 1-inch cubes
Ingredients B
1 tsp cumin seeds
Curry leaves
1 cup chopped onions
1 tbsp garlic paste
1 tbsp ginger paste
Ingredients C
Bay leaves
1/2 tsp turmeric powder
1/2 tsp cumin powder
1 tbsp coriander powder
1 tbsp garam masala
1 tbsp Kashmiri chili powder
2 tbsp tomato paste
1/4 cup chopped coriander (cilantro) leaves
Salt to taste
Water or stock sufficient to stew the beef
Method
Preparation
- Cut the beef into one-inch cubes.
- Get prepared one cup of chopped onions, one tbsp of chopped garlic, and one tbsp of chopped ginger.
- Gather and measure all the ground spices: 1/2 tsp turmeric powder, 1/2 tsp cumin powder, 1 tbsp coriander powder, 1 tbsp garam masala, 1 tbsp Kashmiri chili powder, and some curry leaves (optional)
- Also, prepare 2 tbsp of tomato paste, chopped coriander, and curry leaves.
Tempering and sauteing
- Sear the beef cubes in hot oil until they develop some charred marks. (This is an optional step).
- Place the beef and all other ingredients we have prepared so far into a pot. There are various options you can choose from. Using a pressure cooker is the fastest way.
- Temper the cumin seeds in oil, then add the garlic, ginger, and curry leaves. When aromatic, add the chopped onion and saute until translucent.
Stewing the beef
- Transfer all the ingredients in A, B, and C to a pot. Add water to stew the beef.
- Season with salt.
- When the beef becomes tender, do a taste test to make the final adjustment.
- Dish out and garnish with coriander leaves to serve.

Hi folks!
I hope you’re having a great day so far and welcome back to what’s for tea, and I hope I find you all very well.
Tonight for tea I made a very easy Chinese takeaway style beef curry in the slow cooker.
This has such a lovely authentic Chinese takeaway flavour and is a nice ‘saucy’ chicken curry…this will be enough for 4 generous servings but if you’re feeding more folk, just add more beef…it just won’t be as saucy :) Thanks for popping over and let me know if you decide to give it a go, take care guys x

Serves 4 generously - I used a 2.5 litre Crockpot
Oil for frying
2 Tablespoons plain flour
500g (17.5 oz) Diced casserole beef or steak - cut into bite size chunks
1 Large onion - diced
1/2 Tablespoon cayenne pepper - add more or less depending on how spicy you want it!
2 Teaspoons minced garlic
1 Teaspoon of Chinese 5 spice
60g (2.1 oz) Curry powder or curry paste
200ml (7 oz) Coconut milk
300ml (10.5 oz) Warm water
Salt to taste - I used about a teaspoon
*Optional 1 teaspoon cornflour/cornstarch with a little water and mix in at the end to thicken*
*Optional garden peas | add 30 minutes before serving*
Lovely with plain steamed/boiled short grain rice, fried rice or noodles….lovely with chips/fries too :)

Mouth-Watering Slow Cooked Beef Madras: A Curry Lover's Dream
Melt-in-the-mouth beef, slow-cooked in a rich, spicy sauce. The heat cooks out a little in this recipe, so it’s more of a warming heat, rather than a hard-hitting raw heat.
I love the texture of the sauce in this recipe. It's thick and sumptuous, and of course it's rich and flavourful too. Spicy-but-not-too-spicy. That beautiful texture comes from the blending of the onions, garlic and ginger. It's such a great way to start a curry sauce as it means no 'bits' in the sauce, which some people don't like.
This recipe is featured in our book Its All About Dinner'. For the full recipe including hints and tips check out our website or the book. My New book is out now!
