How To make Macaroni and Cheese with Vegetables
8 oz Pasta (bow-ties or ribbed)
3 T Margarine, divided
1 T Unbleached Flour
1/2 c Vegetable stock
3/4 c Milk
1/2 c Grated Cheddar cheese (2 oz)
1/2 c Grated Parmesan cheese(2 oz)
1 T Chopped fresh parsley
1 t Basil
1/4 t Paprika
1/4 t Black Pepper
2 c Broccoli florets
1 x Med sweet red pepper,chopped
1 c Sliced Mushrooms (3 oz)
2 x Scallions, sliced
Bring a large pot of water to boil; cook pasta until al dente. While pasta is cooking, in med saucepan, melt 2 T of the margarine. Remove from heat; add flour and stir until blended in. Whisk in stock and milk, stirring over med heat until mixture comes to a boil and thickens. Reduce heat to low. Stir in cheeses and seasonings. Continue stirring until cheese is melted. Remove from heat and set aside. In a large skillet, melt remaining 1 T margarine. Add remaining ingredients. Cook vegetables, stirring constantly, for about 5 minutes, until tender/crisp. Reduce heat to low. When noodles are done, drain well. Toss with vegetables; stir in cheese sauce. Garnish with scallion curls.

Ingredients -
Butter – 2 Tbsp
All Purpose Flour (Maida) – 2 Tbsp
Milk – 2 Cups
Cheddar Cheese – 2 Cups, 175 Gms (you may also use 8 slices of cheese)
Garlic Powder – ½ Tsp
Black Pepper – ¼ Tsp
Salt – ½ Tsp (or to taste)
Red Chilli Powder – ¼ Tsp (or to taste)
Nutmeg (Jayfal) – 1/8 Tsp
Macaroni Pasta – 2 Cups (Boiled)
Instructions to Boil Pasta -
1. In a saucepan bring water to boil.
2. Add 1 tsp salt and 1 tsp cooking oil.
3. Add 2 Cups of macaroni pasta and boil for 7 minutes (or as per packet instructions)
4. Now drain the pasta using a strainer and rinse with cold water to avoid over cooking.

Easy 3-Ingredient Mac and Cheese Recipe (One Pot)

4 cups (1 liter) Milk
12oz (340g) Pasta (elbow macaroni)
7oz (200g) Cheddar cheese, shredded
1 teaspoon Salt
1/4 teaspoon Black pepper
1/4 teaspoon Paprika
Directions:
1. In a large pot, bring milk to a boil.
2. Reduce to medium-low heat, add macaroni and cook, stirring frequently, until the pasta is cooked, about 12 minutes.
3. Remove from heat, add the cheese and stir until melted and incorporated.
4. Serve and enjoy!
Notes:
• You can use any kind of cheese that you like. Or combination of several cheeses.
• For extra creamy mac and cheese add 1 more cup to the pot of milk.
