Ingredients:
14oz (400g) macaroni
1 cup )115g) Cheddar cheese
3/4 cup (85g) Gruyere cheese
3/4 cup (85g) Mozzarella cheese
4 tablespoons (30g) Flour
4 tablespoons (60g) Butter
4 cups (1L) Milk
1 teaspoon Salt
1/4 teaspoon Pepper
1/4 teaspoon Nutmeg
Directions:
1. Preheat oven to 360F (180C).
2. In a large bowl combine all the cheeses and set aside.
3. Heat large pot of salted water, cook the macaroni to al dente (1-2 minutes less then package instructions).
4. While the pasta is cooking make the sauce: In a large pot, melt the butter, add flour and whisk over medium-low heat. Cook for a couple of minutes, whisking constantly. Gradually add the milk and whisk until smooth. Cook until slightly thickens, about 5-6 minutes.
5. Gradually add 3/4 of the cheeses to the sauce and whisk until melted after each addition. Season with salt and pepper and mix. If you want to add more additions like bacon, herbs or spices, now it’s the time.
6. Drain the pasta and add to the sauce.
7. Transfer to a 12-inch (30cm) round baking dish, sprinkle the remaining 1/4 of the cheese and bake for 20-25 minutes or until golden and bubbly.
Notes:
* serve warm
* you can use any type of cheese that you like
* this is pretty basic version of mac & cheese but you can add topping like bacon, herbs and spices.

6 cups whole milk
1 Lb (about 5 cups) extra sharp cheddar cheese, grated
8 oz velveeta, torn into chunks
4 oz Pecorino Romano, or Parmesan, grated
½ tsp dry mustard powder or 1 tsp dijon mustard
1 tsp onion powder
1 tsp garlic powder
1 tsp smoked paprika
Pinch of cayenne pepper
Freshly ground black pepper
Kosher salt to taste
Finish with 8oz of sharp cheddar and bake

- 1/2 Box Macaroni Pasta (Note: I'm using a 16oz sized box, so half would be 8oz)
- 2.5 Cups Water
- 2.5 Cups Chicken Broth
- Pinch of Salt
CHEESE SAUCE:
- 2 Tbsp Butter
- 2.5 Cups Heavy Cream ( Lower fat content creams will separate or curdle! Heavy Cream is the best option for this recipe!)
- 2 Cups Shredded Sharp Cheddar Cheese
-1 Cup Mozzarella Cheese ( FEEL FREE TO USE ANY COMBINATION OF CHEESES THAT YOU PREFER )
- 4oz Cream Cheese (Optional)
- 1/2 Tsp Seasoned Salt
- 1/2 Tsp Onion Powder
- 1/2 Tsp Black Pepper
- 1/2 Tsp Paprika
FAQs and Tidbits:
1. In the very beginning of the video, half and half is pictured, but heavy cream was use! The correction was made on screen.
2. Can I use milk or half and half?
While you can use any type of cream or milk that you prefer, heavy cream offers the highest fat content and gives the best results when making sauces. Lower percentage creams like half and half tend to curdle or separate at higher temperatures. That would be detrimental to your cheese sauce making it gritty or lumpy!
3. Do not over cook the macaroni! It could make your final dish mushy.
4. The cream cheese is totally optional but adds an extra richness and thickness to the cheese sauce. For a sauce with a thinner result, the cream cheese can be left out.
5. If your sauce gets too thick from too much cheese, you can always add a few tablespoons of more cream to thin it out!
6. When making macaroni and cheese, good quality cheese makes a huge difference in the end product. The most cost efficient way to substitute expensive bags of shredded cheese like Tillamook or Sargento is to just shred your own! It gives the best results every time!

SOUTHERN STYLE MAC&CHEESE|| HOW TO MAKE MACARONI AND CHEESE|| EASY
INGREDIENTS
2 cubes of chicken flavored bouillon
1 16oz of elbow Mac and cheese
1 stick of salt butter
3 tablespoon of all purpose flour
Whole milk
8 oz velvet cheese
1 block of Colby jack cheese ( shred cheese yourself)
1 block of medium cheddar cheese (shred cheese yourself)
8oz bag 4 cheese Mexican
sour cream
Salt
Black pepper
Cayenne pepper
Paprika pepper
Garlic powder
Onion powder
Badia Complete seasoning ( you can get it from Walmart, target, Publix, and Amazon)( Badia Complete Seasoning®, 6 oz
Non stick spay or butter
Step 1
Set oven on 350°
COOKING PASTA
Add 12 cups of water to a pot then add
2 cubes of chicken flavored bouillon (Maggie). Set the stove at high heat 8/7 and let water come to a boil.
Once water is boiling add
1 16oz (lb) box of elbow pasta (stirring while adding) than let pasta cook pasta (following directions on the back of the box)
Once pasta is done cooking drain the pasta then put it to a separate bowl (do not rinse), add 2 tablespoon of salted butter to help pasta not stick together. Set the pasta to the side.
MAKING THE ROUX
Add a pot to stove at medium high heat 6/7 add
4 tablespoon of salted butter let the butter melt.
Then add 3 tablespoon of all purpose flour let the flour cook for about 4 minutes than add 2 cups of whole milk let the milk come to a simmer.
Then add 8 oz of velveta cheese (chopped up), and a handful of the Colby jack cheese (And medium cheddar cheese, Add the whole bag of 4 cheese Mexican shredded cheese and let all the cheeses melt into the milk.
Once all the cheese is melted Add 1 teaspoon of salt ,1/4 teaspoon of black pepper, 1 teaspoon of cayenne pepper, 1 teaspoon of paprika , 2 teaspoon of garlic ,2 teaspoon of onion powder and 2 teaspoons of complete seasoning let cook for 2 minutes and turn off the stove.
Pour the cheeses sauce into the macaroni and mix well.
Than add 2 tablespoon of sour cream and mix well. Slowly add 1/2 cup of whole milk and mix well than add 1 tablespoon of complete seasoning and mix well.
Spray one small aluminum tray with the nonstick spray then Pour the Mac and cheese into the aluminum tray.
Cover the macaroni and cheese with aluminum foil and place it in oven for 20 minutes.
Take the Mac and cheese out after the 20 minutes mix it well.
Then add the Colby jack and medium cheddar cheese you shredded at the top of the Mac and cheese.
Sprinkle some Cheyenne pepper and some paprika on the top of the cheese place it back in the oven uncovered top rack and let it cook until cheese is gold and brown (20/30 minutes) remove Mac & cheese from oven.

My mother passed down her macaroni and cheese recipe to me about 20 years ago. I have made my own tweaks since then to create what is now known as my Ultimate Five-Cheese Macaroni and Cheese. Made with a blend of sharp cheddar, Monterey Jack, mozzarella, Pecorino Romano, and parmesan cheeses, this dish has become a favorite of every single person who has tasted it. Yes, this recipe is a little labor intensive, but it is well worth it!

Purchase the Lodge 3-quart enameled cast iron Dutch oven that was used in this video:
I normally cook this dish in glass. For this video, it was cooked in my Lodge 3-quart enameled cast iron Dutch oven. I have also had success with cooking this dish in a regular, ‘well-seasoned’ cast iron skillet. If cooked in glass, increase your temperature to 400 degrees. Also, the deeper your dish, the longer it will take to cook. If your dish is shallow, it will take less time. So, you may want to do a test run to be sure of the appropriate times for your cookware.
