How To make Macaroni & Cheese with Vegetables
8 oz Pasta (bow-ties or ribbed)
1 T Unbleached Flour
3/4 c Milk
1/2 c Grated Parmesan cheese(2 oz)
1 t Basil
1/4 t Black Pepper
1 x Med sweet red pepper,chopped
2 x Scallions, sliced
3 T Margarine, divided
1/2 c Vegetable stock
1/2 c Grated Cheddar cheese (2 oz)
1 T Chopped fresh parsley
1/4 t Paprika
2 c Broccoli florets
1 c Sliced Mushrooms (3 oz)
Bring a large pot of water to boil; cook pasta until al dente. While pasta is cooking, in med saucepan, melt 2 T of the margarine. Remove from heat; add flour and stir until blended in. Whisk in stock and milk, stirring over med heat until mixture comes to a boil and thickens. Reduce heat to low. Stir in cheeses and seasonings. Continue stirring until cheese is melted. Remove from heat and set aside. In a large skillet, melt remaining 1 T margarine. Add remaining ingredients. Cook vegetables, stirring constantly, for about 5 minutes, until tender/crisp. Reduce heat to low. When noodles are done, drain well. Toss with vegetables; stir in cheese sauce. Garnish with scallion curls.

PERFECT Macaroni Cheese with HIDDEN Veg! | EAT with Channel Mum
This macaroni cheese recipe is a great way of getting vegetables into your children without them knowing. It is cheap and easy to make too.
Hidden Veg Macaroni Cheese
Ingredients:
1 medium cauliflower
300g macaroni pasta
4 rashers of bacon
200ml milk
100g grated cheddar cheese
1 tbsp butter
Salt and pepper to taste
25g dried breadcrumbs
Directions:
1. Preheat the oven to 200c.
2. Cut the cauliflower into small florets. Place in a saucepan, cover with boiling water and cook for 5-6 minutes until softened.
3. Snip or cut the bacon into small bitesized pieces, place in a large baking dish and bake for 10 minutes until crisp.
3. Meanwhile cook the pasta according to the package instructions. Add a little oil to the water to stop the pasta from sticking together.
4. Once the cauliflower has cooked, drain it and add to a blender. Add in the milk, cheese and butter and blitz until all the ingredients have combined to a sauce consistency. If it seems too thick then add a little extra milk. Season with salt and pepper if you wish.
5. Drain the pasta and mix it with the cauliflower sauce and bacon pieces in the dish. Sprinkle the breadcrumbs on top. Bake in the oven for 10-15 minutes minutes until the top is crispy.
Serve immediately!
