500g dried elbow pasta
120g unsalted butter
70g all purpose flour
950ml whole milk
450g grated medium sharp cheddar cheese
225g grated Gruyere cheese
Salt to taste
Black pepper to taste
1/2 tsp. smoked paprika
60g panko breadcrumbs

16 oz. Sharp yellow cheddar
16 oz white chicken
8 oz Colby jack cheese
8 oz Gouda cheese
1 tablespoon onion powder
1 tablespoon creole seasoning
1 teaspoon ground black pepper
2 cups milk
1 2 tbsps all purpose flour
1 cup heavy cream
1/2 teaspoon celery salt
1 teaspoon paprika
4 ounces sour cream
4 oz. Cream cheese
1 tablespoon minced garlic
1 tablespoon chicken bouillon

5-Star Mac & Cheese Ingredients & Cooking Instructions
- 2 cups Macaroni
- 3 cups Sharp Cheddar plus ½ cup for topping at the end
- 1 cup Fontina
- ½ cup White Cheddar
- ¼ cup Melted Butta ( 4 TBL )
- 3 ½ cups Whole milk ( or 3 cups cream 1 cup Whole Milk )
- Pinch Smoked Paprika
- Pinch Ground Mustard
- 1 tsp Salt & Pepper

- Preheat oven to 350
- Add butter, noodles, dry spices to the pan and stir
- Coat all of the noodles before adding dairy
- Add 3 cups cheddar, 1 cup Fontina, and Milk ( or cream ) and stir, press it down with a spoon to keep it tight in the pan
- Cover with foil and place in the oven for 20 minutes
- After 20 minutes, uncover and stir noodles
- Top with ½ cup Cheddar, place back in the oven and cook for another 20 minutes

Mac and Cheese Recipe - Lighter Three-Cheese Mac - Everyday Food with Sarah Carey
You're going to love absolutely everything I'm making this week. How do I know? Because you asked for it! Yep, it's Reader Request Week here at Everyday Food: You wrote in on Facebook, Twitter, and YouTube, and now I'm whipping up the dishes you wanted to see me make. Plenty of you asked for lightened-up comfort-food recipes and foods with hidden veggies that even picky eaters would like. This mac and cheese fits the bill!
Sarah's Tip of the Day:
The base is pasta mixed with broccoli florets (there's your hidden veggie) and the sauce is made from olive oil, onion, ground mustard, flour, and a lighter cheese trifecta: Neufchatel, which is naturally low in fat, plus extra-sharp cheddar and grated Parmesan, which are so flavorful you don't need to use that much. Some low-fat milk makes it creamy, while toasted panko breadcrumbs give the casserole a nice crunchy topping. Watch the video and I'll show you why making a fancy-sounding bechamel sauce is actually super easy!

Serves 6
Ingredients
Salt and pepper
1/2 pound short tubular pasta, such as cavatappi
2 cups broccoli, cut into florets, stalks peeled and thinly sliced
1 tablespoon olive oil
1 small yellow onion, minced
1/2 teaspoon ground mustard
5 tablespoons all-purpose flour
5 ounces Neufchatel cheese
3 cups 1% milk
1 1/4 cups grated extra-sharp cheddar cheese (5 ounces)
1/2 cup grated Parmesan cheese (2 ounces)
1/4 cup panko breadcrumbs, toasted
Directions
Preheat oven to 350 degrees. In a large pot of boiling salted water, cook pasta 3 minutes less than package instructions. Add broccoli and cook 3 minutes more. Drain.
Meanwhile, heat oil in a large pan over medium-high. Add onion, 1/2 teaspoon salt, and ground mustard. Saute until onion is translucent, about 4 minutes. Add flour and cook, stirring, 1 minute. Add Neufchatel, 1 tablespoon at a time, stirring until incorporated. Gradually whisk in milk, then bring to a boil. Reduce heat and simmer, about 3 minutes, stirring constantly. Stir in cheddar and Parmesan, then add pasta and broccoli. Season with salt and pepper.
Transfer to an 8-inch square baking dish and bake until bubbling in center, about 25 minutes. Sprinkle with panko, and serve.

Recipe Makeover!
A serving of mac and cheese can pack up to 800 calories and 40 grams of fat. We whittled those numbers way down by subbing 1% milk for whole and creamy Neufchatel for higher-fat cheeses. Broccoli adds substance and vitamins.
