1 c Liquid shortening
2 tb Granulated fructose
4 Eggs
1/2 c Water
2 c Flour
1 ts Ea baking soda & powder
2 ts Ground cinnamon
1 ts Ground nutmeg
1/2 ts Salt
1/2 c Pecans chopped
3 c Grated carrots
Preheat oven to 350^.Grease and flour a 3 quart tube pan. In a mixing bowl cream together the shortening,fructose and eggs until light and lemon colored. Add remaining ingredients except carrots and pecans.Beat well then stir in carrots and pecans. Pour batter into prepared pan and bake for 30-40 minutes. Light and healthy dessert for breakfast in 5 minutes! The recipe is simple and quick, but very tasty. Easy dessert recipe in 5 minutes. A dessert loved by both adults and children. All I can say is that it was over very quickly, and I will definitely do it again soon. Great taste from simple ingredients!

Ingredients:
300 g rolled oats / 3 1/4 US cups.
10 g baking powder / 2 teaspoons
40 g chia seeds / 4 tablespoons
1 tbsp carob powder / or cococa
1 teaspoon cinnamon
2 eggs
70 ml maple syrup / 4.7 tbsp.
380 ml almond milk / 1.6 cups
3 medium chopped carrots (170 g)
50 g chopped walnuts / 1/4 cup.
baking dish 26 x 9 cm / 10 x 3.5 inches
bake 40-45 minutes at 180°C /360°F
For cream:
100 g greek yogurt / 1/4 cup.
2 tbsp honey
1 teaspoon vanilla extract

Bake at 180°C or 350°F for 40 min.

Healthy Carrot Cake with Oats (+a healthy cake icing idea)
Healthy Carrot Cake with Oats
- 2 large eggs
- 1 cup of Greek yogurt
- 1/2 maple syrup
- 1 package vanilla sugar ( 7 gr, 1 tsp) but vanilla extract is a better idea
- 3 tbsp melted butter
- 3 medium carrots
- 1/2 cup walnuts
- 1/2 cup raisins
- 1 cup of oats
- 1 package of baking powder (tbsp)
- 1 tsp cinnamon
180 C - 35 minutes
Healthy Cake Icing
- 3 tbsp mascarpone cheese
- 2 tbs orange juice
- 1 tsp maple syrup

All Purpose Flour 2 Cups (250 g)
Grated Carrots 2 Cups (350 g)
Egg 4 medium sized
Sugar 2/3 to 1 Cup. ( depending on the sweetness you want)/(135g to 200g)
Oil 2/3 Cup ( 150ml)
Vanilla Essence. 1 tsp
Baking Powder. 1&1/2 tsp
Baking Soda 1/2 tsp
Bake in a preheated oven @ 165 C for 60 minutes or until a skewer inserted in the middle comes out clear..
Pan. 6 inch
This goes well with cream cheese frosting.
