How to make the Most Delicious Eggless Carrot Cake by Deeba Rajpal!
This Eggless Carrot Almond Cake is one of the most delicious eggless cakes that's come out of my kitchen on video recently. Both this and the eggless banana bread surprised me no end. I'd happily pick these over the egg versions!
The cake is moist, has a deep earthy taste with the coconut sugar and cinnamon powder adding depth to the flavour, and is so simple. I'm so glad this was a requested recipe, as also the eggless banana bread! Thank you so much, and do keep the requests coming.
I've tried to offer substitutes as you go along, and have kept the process as easy as can be. Once again, hand mixed, dry mix + wet mix, almond meal from scratch and great great flavours.

For the Eggless Carrot Almond Cake:
1/4 cup ghee/clarified butter
100 ml milk
1 tsp white vinegar
1/2 cup coconut sugar {or brown sugar}
1 tsp cinnamon powder
Pinch salt
1/2 cup grated carrot {1 small carrot}
1/2 cup whole almonds
1/4 cup quinoa flour
3/4 cup all purpose flour/maida
1 tsp baking powder
1/2 tsp baking soda
Whipped cinnamon cream
100 ml chilled Amul Fresh Cream (discard liquid)
2 tbsp raw sugar ( or icing sugar)
1/2 tsp cinnamon powder
2 tbsp ghee/clarified butter, room temperature
Method:
For the Eggless Carrot Almond Cake:
Preheat oven to 180C. Line a round 6 tin with parchment paper, or a dessert ring with heavy duty foil.
Place the flours, almond, baking powder, baking soda, salt and cinnamon in bowl of dry grinder. Process until ground. Reserve.
Add the vinegar to the milk and leave to stand for 5 minutes, while we begin mixing the batter.
Whisk the ghee and coconut sugar in a large bowl, followed by the milk mixture.
Add the flour mix and grated carrots and whisk until just combined. It will be a firm batter.
Transfer batter to prepared tin, and even out.
Bake for approximately 30 minutes or until the tester comes out clean.
Leave to cool completely before topping with whipped cinnamon cream.
Whipped cinnamon cream
Beat the chilled cream with sugar on high speed until soft medium peaks form.
Add the ghee and cinnamon powder and whip again to a nice consistency.
Refrigerate until needed.

Grated Carrots 2 Cups (350 g)
Egg 4 medium sized
Sugar 2/3 to 1 Cup. ( depending on the sweetness you want)/(135g to 200g)
Oil 2/3 Cup ( 150ml)
Vanilla Essence. 1 tsp
Baking Powder. 1&1/2 tsp
Baking Soda 1/2 tsp
Bake in a preheated oven @ 165 C for 60 minutes or until a skewer inserted in the middle comes out clear..
Pan. 6 inch
This goes well with cream cheese frosting.

Dry ingredients:
2 Cups cake flour
1/4 Tsp salt
2 Tsp baking powder
1 Tsp baking soda

1/2 Tsp ground nutmeg
1/2 Tsp ground cardamom
1 tin of crushed pineapple
2 cups grated carrots
Wet Ingredients:
4 Large eggs
1/2 cup brown sugar
1 cup white granulated sugar
1 Tsp vanilla
1 cup oil
1 cup buttermilk
Cream cheese:
1/4 cup Medium fat cream cheese
1 Cup heavy cream
1/3 cup (80ml) powder sugar (can be reduced to make it less sweeter)
1 Tsp lemon juice
Fresh cream:
1 Cup heavy cream
1/4 Cup powder sugar (icing sugar)

BEST CARROT CAKE EVER, according to Chrissy Teigen - IS IT?
Chrissy Teigen shared what she thought was the Best Carrot Cake Ever on social media a little while back and I wanted to put that to the test. It's the perfect time because I have a special birthday request for a carrot cake - the pressure is on! Because there is a lot of carrots in the recipe, I'm going to pretend this is a healthy cake option :) Seems the star is the golden buttermilk glaze that is poured over the cake before icing. This isn't Chrissy's recipe, in fact it's a recipe from Southern Living, but she recently posted an IG story about turning this cake into a Carrot Cake Trifle and it looked yummy. You ready to see if this cake lives up to the title of best ever? Alright, let's start grating these carrots because we need 2 cups!

FOR THE RECIPE REFERENCED IN TODAY'S VIDEO:
QUICK TIPS WE LEARNED AFTER TEST:
1. This cake calls for 3 layers of cakes, I only did 2 and it was enough. Was scared it would topple over with the frosting between layers.
2. I omitted the nuts due to allergies but added in raisins, so do what you love.
3. The recipe calls for cinnamon only, which was good but it was missing that warmness/spiciness like nutmeg, cloves and ginger. If you like those flavors, maybe add a little to the dry ingredients.
4. Make sure to pour the buttercream glaze over the cake right after you pull it out of the oven while still hot. Let it sit until totally cooled down or your cream cheese frosting will melt!
5. I served this cake 4 hours after making. Still good but almost too moist from the glaze. After 24 hours, the cake was better once the glaze settled into the cake and wasn't too moist. So make it the night before if you can.

Trying his first slice of carrot cake ❤️
Steven caught us filming outside of Lloyd's Carrot Cake in the Bronx. Then his curiosity led a neighbor to start shouting at him to try a slice. Of course, we felt compelled to do the Righteous Eats thing and buy him a slice. He kindly let us film HIM as he tried it for the very first time. We're not usually lucky enough to share the food we cover *directly* with the community, and we feel especially honored that Steven gave us the opportunity to watch him try carrot cake from this Bronx institution.
