Chicken Tortilla Casserole
1 Rottisorie Chicken - shredded
2 - 10 oz Can Rotel Original
1 - 15 oz Can Black Beans - drained
1 1/2 C Frozen Corn
1 C Chicken Broth
1 Tbsp Chili Powder
1 1/2 tsp Garlic Powder
1 tsp Cumin
1 tsp Salt
12 Small Corn Tortillas - cut into quarters
8 oz Block Monterey Jack - shredded
8 0z Block Cheddar - shredded
1/3 C Cilantro - chopped
1/2 C Sour Cream
1/2 C Red Onion - diced
In a large bowl mix together rotel, chili powder, cumin, garlic powder & salt. Add in black beans, frozen corn & chicken broth. Stir. Add in shredded chicken, 1/2 of the monterey jack & cheddar cheeses. Add your quartered corn tortillas and mix.
Lightly spray a 9 x 13 baking dish with cooking spray. Pour ingredients into bowl and spread evenly. Cover with foil.
Bake @ 350 for 25 minutes.
Remove foil and top with remaining cheeses.
Turn oven up to 400 and bake for 10 - 15 minutes or until cheese is melted.
Top with diced red onion & cilantro. Serve with sour cream if desired.

✅Ingredients
• 1 ½ pounds ground beef
• 1 (7 ounce) can green chiles, diced
• 1 medium onion, diced
• 2 tablespoons butter, salted
• 1 tablespoon cumin powder
• 2 teaspoons kosher salt
• 2 teaspoons garlic powder
• 12 corn tortillas, cut in half
• 2 tablespoons olive oil
• 1 (14.5 ounce) can black beans, rinsed and drained
• 2 cups salsa, divided
• 1 can corn, drained
• 3 cups cheddar cheese, shredded, divided
Garnish, all optional:
• 1 bunch cilantro, chopped
• 1 cup sour cream
• 2 limes, wedges
• 1 cup lettuce, chopped
• 1 avocado, slices
• 1 cup tomatoes, chopped or sliced
• 1 jalapeno, minced
• 1 bunch green onions, sliced
• 1 cup black olives, sliced
✅Instructions
1️⃣ Preheat oven to 350 degrees. Grease a 9x13 pan.
2️⃣ In a skillet over medium-high heat, cook onion in the butter until the onion softens and starts to brown a bit, about 3-5 minutes. Add in beef, green chiles, cumin, salt, chili and garlic powder and cook beef until it browns making sure to stir and break beef up while it cooks, about 6-8 minutes.
3️⃣ In a separate skillet, brown the corn tortilla halves in a very small amount of oil in a pan over medium heat. Flip after about 1 minute and get both sides of tortilla golden in color.
4️⃣ Line the bottom of a 9x13 dish with 8 of the tortilla halves. Not to worry if they overlap. Sprinkle with 1 cup of cheese. On top of cheese, spoon half of the ground beef mixture.
5️⃣ On top of the ground beef mixture, layer the black beans across. Then spoon 1 cup of salsa across the beans. On top of the salsa, layer 6-8 more browned tortilla halves.
6️⃣ Layer the remaining ground beef across the tortillas, spoon the corn on top of the ground beef and then top that with the remaining cup of salsa. Top the casserole with 2 cups of shredded cheddar cheese.
7️⃣ Bake until bubbly and cheese is browning, about 25-30 minutes.
8️⃣ Garnish as desired

Hi guys. Today was a super busy day and I needed a quick and easy dinner. So...I made Taco Casserole. :)
Taco Casserole
1 pound ground beef
1/2 tablespoon butter
1 medium onion, diced
2 jalapeno peppers, seeded and diced
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1 packet taco seasoning
3/4 cup water
14.5 ounce can diced tomatoes, undrained
14.5 ounce can of rotel
1 1/4 cups corn chips
16 ounce can refried bean
15 ounce can kidney beans
2 cups of cheese
Brown ground beef with onion and peppers. Stir in taco mix, water and diced tomatoes, do not drain.
Set aside. Stir together refried beans, rotel and kidney beans.
in a 9x13 baking dish, start by crush corn chips in the bottom to create a crust layer. Next, add the bean. Next add the meat. Next add the cheese. Bake at 375 for 15 minutes. Garnish with lettuce, tomatoes, black olives and green onion. Enjoy :)

Taco Lasagna -- Easy Mexican Casserole Full of beef, beans, tomatoes and flour tortillas.
Taco Lasagna
Ingredients:
• 2 lbs. ground beef
• 1 poblano pepper (seeded and diced)
• 1/2 cup chopped onion
• 1 cup water
• 2 envelopes of taco seasoning
• 1 can black beans rinsed and drained
• 1 28oz can diced tomatoes undrained Rotel or Mexican
• 9 flour tortillas (8 inches)
• 1 can refried beans
• 4 cups shredded Mexican cheese blend
Instructions:
1. Preheat the oven to 350 degrees
2. Spray a 9×13 baking pan with cooking spray.
3. In a large skillet, cook the beef, pepper and onion over medium heat until meat is no longer pink. Drain off any fat.
4. Add water and taco seasoning packets. Bring to a boil. Reduce heat and then simmer, uncovered, for 2 minutes.
5. Stir in black beans and tomatoes (with juice). Simmer, uncovered, for 10 minutes.
6. Place 2 tortillas in the bottom of a greased 13×9-in. baking dish. Break a third tortilla and piece it together in any holes to make as much of a complete layer of tortillas as possible.
7. Spread with half of the refried beans and half of the beef mixture.
8. Sprinkle with 1 cup cheese.
9. Repeat layers (3 tortillas, remaining beans, remaining beef, 1 cup of cheese).
10. Top with remaining tortillas and 2 cups cheese.
11. Cover with sprayed foil and bake at 350° for 25-30 minutes or until heated through and cheese is melted.
12. Serve with sour cream and fresh pico de gallo.
