Warm & Cheesy 7-Layer Skillet Dip, Ready For Gameday | From The Test Kitchen | Bon Appétit
This Super Bowl season, you can have cold—and likely congealed—seven-layer dip from the supermarket, or…you can make this warm, melty version begging to be scooped up and eaten. 0:36 Grate American cheese and Monterey Jack
1:14 Prep onion, garlic, and chipotles
1:40 Rinse and drain pinto beans
1:52 Make refried beans
1:56 Melt butter
2:08 Add onions and cook over medium heat for 8–12 minutes
2:19 Increase heat to medium-high and cook onions until golden brown, 5–8 minutes
2:24 Add garlic and cumin
2:36 Add chipotles, salt, beans, and water
2:57 Mash with potato masher
3:06 Remove from heat, add vinegar, and set aside
3:20 Make queso
3:28 Combine water, cumin, adobo, and salt in saucepan over medium heat
3:57 Add American cheese and whisk until smooth
4:13 Add Monterey Jack and whisk until smooth
4:54 Assemble dip
5:01 Prep scallions and avocados
5:38 Spoon cheese sauce over refried beans
5:45 Top with sour cream, salsa, avocados, pickled jalapeños, cilantro, and scallions
6:22 Squeeze lime juice over dip and serve with tortilla chips

Quick, Healthy Southwestern Layered Bean Dip Recipe
To make this bean dip healthier without sacrificing great taste, we use nonfat refried beans, reduced-fat sour cream, fiber-packed black beans and chopped fresh veggies. Serve with baked tortilla chips for a healthy appetizer or snack recipe.

7 LAYER DIP | Easy Meatless No Bake Appetizer (aka Taco Dip)
Whether you call it 7 layer dip or taco dip (even though there is no lettuce in this one), this easy appetizer is sure to be a crowd pleaser, at your next party or game-day gathering (maybe your Super Bowl party!)
Original Recipe:
What you’ll need:
- 1-16 oz can of refried beans
- 2 tablespoons of milk
- 8 oz cream cheese, at room temperature
- 1/2 cup sour cream
- 2 tablespoons taco seasoning
- 1 cup of guacamole
- 1 1/4 cups salsa (if yours is very liquidy, press it through a sieve, to get out the excess moisture)
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup sliced black olives OR diced tomatoes (or both!)
- 4 green onions, sliced
What you’ll do:
1. Get out a 9x13 pan. The disposable ones that you can find a grocery store, but use whatever one you want
2. In a medium bowl, mix together the refried beans and milk, until smooth (I think water would work just fine; I think the liquid is just to help loosen up the refried beans)
3. Spread your refried beans into the bottom of your pan, in a smooth, even layer
4. Again, in a medium bowl, combine your softened cream cheese, your sour cream, and your taco seasoning. Mix it together until smooth. This may be done with a hand mixer, or in a stand mixer.
5. Spread the cream cheese mixture on top of your refried beans, in an even layer
6. On top of the cream cheese layer spread the guacamole into an even layer
7. on top of the guacamole layer evenly spread the salsa.
8. On top of the salsa layer sprinkle your shredded cheddar cheese in an even layer
9. On top of the cheese, sprinkle your sliced black olives or your diced tomatoes - or neither! (If you just don’t like them!)
10. On top of the olive/tomato layer, sprinkle year for sliced green onions
11. Place the dip in the fridge, to chill, for an hour, and then you’re ready to serve it, and enjoy! I enjoy eating it with tortilla chips, but the original recipe says you can serve it with crackers… You can serve it with us with whatever crunchy, dipping snack you want
