How To make Black Bean Salsa
1 Chile, Poblano
-roasted, peeled, stemmed -seeded and diced 2 c Beans, Black, cooked
- rinsed 2 tb Juice, Pomegranate, fresh
1/4 c Bell Peppers, Red
- stemmed, seeded, diced 1/4 c Bell Peppers, Yellow
- stemmed, seeded, diced 2 Garlic cloves; roasted
- peeled, chopped 1 sl Onion, white
- (3/4" inch) - roasted and chopped 1 tb Chiles Chipotle en adobo
- (canned) 1 tb Cilantro, fresh, chopped
1/4 ts Cumin Seed, toasted
-ground Salt Combine all ingredients in nonreactive bowl; toss briefly in saute pan over medium heat; salt to taste.

Black Bean and Corn Salsa Recipe | Camp Chef

Ingredients:
2 8-oz cans of Rotel tomatoes & chilies
1 fresh tomato, diced
1 14-oz can Mexican-style corn
1 16-oz can black beans
1 4-oz can green Jalapenos
1 cup diced red onion
garlic powder, to taste
chili powder, to taste
cumin, to taste
½ cup coarsely chopped fresh cilantro
dried cilantro, to taste
salt and pepper, to tastes
Directions:
Except for one can of the Rotel tomatoes, drain canned vegetables. Mix together all ingredients, making sure spices are well blended in the veggies. Cover and refrigerate, allowing flavors to blend. Serve with “Scoops” chips and enjoy!

This simple summer salsa recipe is bursting with flavours, vitamins, and is out-of-this-world delicious. It's truly a flavour winner and packed with power foods like black beans and vegetables. My kids were scarfing it down, having completely forgotten that they can’t stand tomatoes!
We eat this recipe with tortilla chips, in tacos and burritos, or all on its own as a fresh, healthy salad. The perfect addition to Cinco de Mayo!
