How To make Black Bean Soup with Rum
2 c Onion, chopped
1 c Celery, chopper
6 Parsley
2 Fresh thyme
1 Bay leaf
3 tb Unsalted butter
1 lg Ham hock
2 c Dried black beans, picked ov
-er 6 c Beef broth
1/3 c Dark rum
Lemon juice to taste Garnishes: Eggs, hard-cooked, chopped Fresh parsley, chopped Lemon slices The night before, soak beans in cold water to cover by 2 inches. Change water at least once. Drain and rinse. In a heavy kettle, cook onion, celery, parlsey, thyme, and bay leaf in the butter over mod-low heat, stirring, for 10 minutes. Add ham hock, beans, broth, 4 cups water, salt and pepper to taste. Bring the mixture to a boil, reduce heat, and simmer, uncovered, adding more water if necessary to keep beans covered, for 3 hours. Discard ham hock and bay leaf. Put the mixture through a medium disk of a food mill into a large bowl and then return it to the kettle. Stir in rum, lemon juice, and salt and pepper to taste. Adjust the consistency with hot water and garnish for serving with the eggs, parsley, and lemon slices. Makes about 7 cups.

El Pollo Locoish Barbeque Black Beans
I discovered El Pollo Loco Black Bean Burritos one day when I was in Hollywood during lunch time. It's not always easy to find something for lunch if you're a vegetarian. It was harder back them. But when I bit into the burrito, I was hooked. I turned my kids on to them and we were all fans. Years later, I found a recipe for mock El Pollo Loco barbeque black beans. The flavor is very similar and I've made it vegetarian.
It's been a long time since I made these, so they turned out a little dry. I've left notes to show where I made a mistake. You've got to keep them moist, so keep that lid on and don't be shy about adding water when you need to.
I've never made them with canned beans, but you could. Just skip everything up to the point of having cooked beans and where you start adding the other ingredients. Be sure to heat the beans first and don't drain them! You need that juice.
Finally, this doesn't make a whole lot of beans. If you're making this to share with people, you might want to consider doubling the recipe.
Here's what you need:
c. = cup(s) / T. = tablespoon(s) / t. = teaspoon(s) / lb. = pound / lbs. = pounds / oz. = ounce(s)
1 c. dried black beans OR 32 oz. canned black beans, not drained
1 liter water
2 t. powdered vegetarian chicken flavor ( ) OR 1/4 cube Not Beef bouillon ( I bought mine at Sprouts, but you can get them from Amazon. You'll just have to buy at least 2 packs from Amazon. )
1/2 c. dark brown sugar
1/4 c. ketchup
5 T. oil or butter (I used 41-Olive Butter flavored Olive Oil: )
1 t. Bacon Salt ( from Amazon: )
2 T. red wine vinegar
2-3 T. minced red Fresno chiles OR canned green chiles
1 t. Chipotle Tabasco (or regular Tabasco or Sriracha)
1 small onion
2 cloves garlic
2 t. apple cider vinegar
