Kay's Molten Lava Chocolate Cakes Recipe
My individual molten lava cakes are warm, rich and decadent. A real chocolate lovers dream … Serve with a scoop of vanilla ice cream and strawberries for the ultimate treat!
The ingredients used and step-by-step make-at-home recipe is detailed below -
Ingredients:
------------------
150 g dark chocolate (Kandos).
100 g salted butter.
2 large eggs.
2 large egg yolks.
1/4 cup sugar.
2 tbs plain flour.
A pinch of salt.
Method:
-------------
1. Preheat the oven to 225 °C.
2. Butter and flour 4, 6 oz (or 8 oz) oven-safe ramekins. Remember to dust off any excess flour.
3. Place the ramekins on a baking sheet. Set aside.
4. In a double boiler over simmering water, melt together the chocolate and butter.
5. Slowly mix to incorporate the butter and chocolate until smooth. Set aside.
6. Into a bowl, add the eggs, egg yolks, sugar, pinch of salt.
7. Using a hand-mixers, beat on high until the eggs are pale and thick. About 3-4 minutes.
8. Pour the chocolate into the egg mixture.
9. Add the flour.
10. Using a whisk, slowly incorporate the chocolate into the egg mixture until combined. Do not over mix.
11. Pour the batter into the ramekins.
12. Bake at 225 deg C. For 10-12 minutes.
13. The top should be slightly cracked.
14. Allow the cakes to cool for 2-3 minutes.
15. Unmold the cakes onto individual dessert plates.
16. Serve with a scoop of vanilla ice cream and strawberries.

Miss Kay’s Banana Nut Cake with Caramel Icing
Cake Layers:
2 ½ cups sifted cake flour or 2 cups sifted all-purpose flour
1 ⅔ cups sugar
1 ¼ tsp. baking powder
1 ¼ tsp. baking soda
1 tsp. salt
⅔ cup Crisco shortening
⅓ cup buttermilk
1 cup mashed bananas (about 2 medium bananas)
2 large eggs
⅔ Cup chopped pecans or walnuts
Caramel Icing:
1 stick butter
1 cup packed brown sugar (light or dark is fine)
⅓ Cup whole milk
3 ½ cups sifted powdered sugar
1. Heat the oven to 350°F. Butter and flour 2 round cake pans.
2. Make the cake layers: In a large mixing bowl, sift together the flour, sugar, baking powder, baking soda and salt. Add the shortening, buttermilk and bananas. (I also add a tsp. of vanilla.) Mix with an electric mixer on medium speed for 2 minutes. Add the eggs and beat 2 more minutes. Fold in the nuts.
3. Pour the batter into the pans. Bake until the layers start to pull away at the sides and toothpick inserted comes out clean, 35-40 minutes.
4. Let the layers cool in the pans for a few minutes, then run a spatula around the sides and invert the layers onto a wire rack to cool completely.
5. While the layers are cooling, make the frosting. In a medium saucepan on medium heat, bring the butter and brown sugar to a boil and boil for 2 minutes. Add the milk and bring back to a boil. Remove from the heat and let cool slightly. Stir in the powdered sugar.
6. When the cake layers are cool, frost the top of one layer. Put the other layer on top and frost the top and sides.
