How To make Diana's Chocolate Sheet Cake
Cake: 2 c Sugar
2 c All-purpose flour
1/3 c Cocoa
1 ts Baking soda
1/2 ts Salt
1 c Butter
1 c Water
1/2 c Buttermilk
2 lg Eggs
1 ts Vanilla
Frosting: 1/2 c Butter
1/4 c Cocoa
6 tb Milk
4 c Powdered sugar (1 pound)
1 c Chopped walnuts
CAKE: Combine sugar, flour, cocoa, baking soda and salt in large mixing bowl. Mix well. Heat butter and water in saucepan until boiling. Pour over dry ingredients and mix. Beat in buttermilk, eggs, and vanilla. Pour thin batter in greased and floured 15x10-inch pan. Bake in 400F oven 20 minutes. Serve warm or cold. FROSTING: Combine butter, cocoa, and milk. Heat to boiling. Pour over sugar and nuts. Mix well. Spread on hot cake. NOTE: I like to substitute strong coffee for the milk and add 1/2 ts vanilla to the frosting. This cake is reminiscent of "Texas Brownies." -----

All Purpose Flour 2 Cups (250 g)
Grated Carrots 2 Cups (350 g)
Egg 4 medium sized
Sugar 2/3 to 1 Cup. ( depending on the sweetness you want)/(135g to 200g)
Oil 2/3 Cup ( 150ml)
Vanilla Essence. 1 tsp
Baking Powder. 1&1/2 tsp
Baking Soda 1/2 tsp
Bake in a preheated oven @ 165 C for 60 minutes or until a skewer inserted in the middle comes out clear..
Pan. 6 inch
This goes well with cream cheese frosting.

3-Ingredient Chocolate Mousse | Easy and Delicious | Crumbs and Confetti with Diana

INGREDIENTS:
1 1/2 cups (360g) heavy whipping cream
1/2 cup (60g) powdered sugar
1/4 cup (25g) cocoa powder
1 teaspoon almond extract, optional
DIRECTIONS:
In a large mixing bowl, add heavy whipping cream and mix with a hand mixer until slightly thickened. Chill bowl in refrigerator prior to beginning recipe to help the heavy whipping cream whip easier.
Add powdered sugar and cocoa powder and whip until thickened.
Add optional almond extract.
Place in piping bag with piping tip or use a zip top bag and snip off one end.
Pipe into glasses or serving bowls.
Enjoy!

Chocolate Covered Peanut Butter Balls | Crumbs and Confetti with Diana

INGREDIENTS:
1 cup (240g) creamy peanut butter
1/2 cup (45g) old fashioned rolled oats
1 tablespoon (21g) honey
1 1/3 cups (226g) semi-sweet chocolate chips
2 teaspoons (8g) coconut oil
1 teaspoon (5g) coarse sea salt (optional)
Recipe makes 10-12 peanut butter balls
DIRECTIONS:
Line a baking sheet with parchment paper
In a large bowl, combine the peanut butter, old fashioned oats and honey and stir until well combined
Using a cookie scoop, scoop out the mixture and place on the baking sheet
Place peanut butter balls in the freezer for 10 minutes then roll into round balls with your hands
Return the peanut butter balls to the baking sheet and freezer while melting the chocolate
In a medium size bowl, add the semi sweet chocolate chips and 2 teaspoons of coconut oil.
Melt chocolate in the microwave on high in 30 second increments stirring in between until smooth.
Remove the peanut butter balls from the freezer and dip into the semi-sweet chocolate covering completely and place on the baking sheet.
Sprinkle with coarse sea salt before the chocolate sets (note: chocolate will set pretty fast due to the peanut butter mixture being placed in the freezer).
Refrigerate chocolate covered peanut butter balls until ready to serve
