Mix in sauce pan butter,crisco, cocoa & water. Bring to a boil over high heat. Pour into sifted mixture, stir and add buttermilk, vanilla,eggs and soda. TEXAS SHEET CAKE RECIPE Nothing says tradition like Texas Sheet Cake. I’m not exactly clear as to why this is called “Texas” sheet cake when it is really just a chocolate sheet cake. Some sources say it’s because the cake is “big as Texas”. Others note that it is a traditional southern cake, passed down from generation to generation. Whatever the official name or where it came from, this homemade sheet cake is delicious! EASY CHOCOLATE SHEET CAKE If you’re nervous about making from-scratch cakes, this is a good recipe to start with. You’ll find it easy to melt the butter, water and cocoa powder together to make a creamy chocolate sauce. From that point, just add the dry ingredients, then add in the eggs and sour cream, which is going to make this cake very moist. FROSTING FOR SHEET CAKE It’s important to make this easy chocolate frosting while the cake is baking. One thing I love about Texas sheet cake is how the frosting “soaks” into the cake, making it extra moist. This happens because you frost the cake as soon as it comes out of the oven. Pour the frosting on and allow it to settle and “melt” into the cake. This is what gives the sheet cake such a shiny, smooth look.
For the Cake: 1 cup butter (2 sticks) 1 cup hot water 4 tablespoons cocoa powder 2 cups granulated sugar 2 cups all-purpose flour 1/2 teaspoon salt 3 large eggs 1/2 cup sour cream 1 teaspoon baking soda For the Frosting: 1/2 cup butter (1 stick) 4 tablespoons cocoa powder 6 tablespoons milk 1 pound powdered sugar 1 teaspoon vanilla extract 1 cup chopped walnuts (for topping) Instructions For the Cake: Preheat the oven to 400 degrees. Grease the bottom and sides of a 17x11 cookie sheet pan. In a saucepan, mix the butter, water and cocoa powder. Bring to a low boil. Pour the chocolate mixture into a large bowl. Set aside. In a small bowl, mix together the sugar, flour and salt. Gradually add the dry mixture to the chocolate and mix well. Add the eggs and mix well. Add the sour cream and baking soda. Mix well. Pour into the greased cookie sheet and bake for 20 minutes. For the Frosting: *Plan to make the frosting about 15 minutes before the cake is done. The cake should be frosted while it is warm. Melt the butter in a saucepan over medium low heat. Add the cocoa powder and milk. Heat just until the mixture starts to bubble. Remove from the heat. Using a hand mixer, gradually beat in the powdered sugar and vanilla until completely blended. Spread the frosting on the cake as soon as it is out of the oven. Allow the cake to cool completely. Store any leftovers in an airtight container.

Ingredients
Cake:
2 cups all-purpose flour 2 cups granulated sugar 1/4 teaspoon kosher salt 1/2 cup buttermilk 1 teaspoon baking soda 1 teaspoon vanilla extract 2 large eggs 2 sticks (1 cup) salted butter 4 heaping tablespoons cocoa powder 1 cup semisweet chocolate chips
Frosting:
4 cups powdered sugar 2 sticks (1 cup) salted butter, softened 2 tablespoons whole milk Dash of kosher salt 1 vanilla bean, split and caviar scraped
Directions
For the cake: Preheat the oven to 350 degrees F.
Add the flour, granulated sugar and salt to a large bowl and stir together; set aside. Add the buttermilk, baking soda, vanilla and eggs to a separate bowl. Mix with a fork and set aside.
In a medium saucepan, melt the butter. Add the cocoa and whisk to combine.
Meanwhile, bring 1 cup water to a boil. Pour the boiling water into the butter and cocoa pan. Allow to bubble for a moment, then turn off the heat.
Pour the cocoa mixture into the flour mixture. Stir together for a moment to allow it to cool slightly, then pour in the egg mixture. Stir together until smooth. Add the chocolate chips, stirring, then pour into an ungreased jelly roll pan (or rimmed baking sheet). Bake until an inserted cake tester comes out clean, about 20 minutes. Allow to cool for about 20 minutes.
For the frosting: While the cake bakes, combine the powdered sugar, butter, milk, salt and vanilla bean caviar in a large bowl. Using a hand mixer, mix on low until incorporated. Increase the speed and mix until light and fluffy; set aside.
Spread the top of the cake with the frosting, slice and serve.

Flourless Chocolate Cake (pan size 38 x 26 cm or 15 x 10 in) 1 cup = 240ml; 1 tbsp = 15ml; 1 tsp = 5ml

Cocoa Syrup 75ml hot water (1/3 cup) 1 tbsp cocoa powder (7g) 2 tbsp sugar (25g) Mix to dissolve and let it cool down completely
Chocolate Glaze 50g cocoa powder (1/2 cup) 115g sugar (1/2 cup + 1 tbsp) 85ml water (1/3 cup) 85g heavy cream (1/3 cup) 1 tbsp gelatine powder (9g) 3 tbsp cold water to bloom gelatine (45ml)

Texas sheet cake!
Ingredients:
For the Cake:
1/2 cup water (120mL)
1/2 cup unsalted butter (113g)
2 tablespoons unsweetened cocoa powder (12.5g)
1 cup all-purpose flour (120g)
1 cup granulated sugar (200g)
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup sour cream (60g)
1 large egg
1/2 teaspoon vanilla extract
For the Frosting:
1/4 cup plus 1 tablespoon unsalted butter (70.5g)
1/4 cup whole milk (60mL)
2 tablespoons unsweetened cocoa powder (12.5g)
2 cups powdered sugar (240g)
1/2 cup finely chopped pecans (optional, 56.5g)
Instructions:
For the Cake:
Preheat your oven to 350°F (175°C) and grease a 9x12 inch baking pan.
In a medium saucepan, combine the water, butter, and cocoa powder. Heat over medium heat, stirring until the mixture comes to a boil. Then, remove it from the heat and set it aside.
In a large mixing bowl, combine the flour, sugar, baking soda, and salt.
Pour the hot cocoa mixture over the dry ingredients and stir well.
In a separate bowl, whisk together the sour cream, egg, and vanilla extract. Add this mixture to the batter and mix until smooth.
Pour the batter into the prepared baking pan and bake for about 15-20 minutes, or until a toothpick inserted into the center comes out clean.
For the Frosting:
In a saucepan, combine the butter, milk, and cocoa powder. Heat over medium heat, stirring until it comes to a boil. Remove from heat.
Stir in the powdered sugar and pecans (if using). Mix until it's smooth.
While the cake is still warm, pour the frosting over it and spread it evenly.
