How To make Karithopita Spiced Walnut Cake
6 Eggs 3/4 c Sugar
2 1/2 c Bisquick 1/2 c -Water
1/2 ts Cinnamon 1 2" strip orange peel
1 ts -Salt 1 2" strip lemon peel
1/2 ts Ground cloves 1/2 Cinnamon stick
3/4 ts Baking powder 1/4 c Honey
2 c Sugar 1/2 Lemon; juiced
2 1/2 c Chopped walnuts 1/4 c Walnuts
1 1/2 c Milk 1 ts Ground cinnamon
1 1/2 c Vegetable oil
In a large mixing bowl place the eggs, Bisquick, 1/2 teaspoon cinnamon, salt, cloves, baking powder, the 2 cups of sugar, the 2 1/2 cups of chopped walnuts, milk, and oil. Blend them together with an electric mixer for 5 minutes. Turn the mixer on high and beat the batter for 15 seconds. Preheat the oven to 375 F. Pour the batter into a baking pan that is 10 x 14 inches, and 2 1/2 inches deep. Bake the cake for 45 minutes, or until a
toothpick inserted comes out clean. Remove the cake and let it sit for 2 hours. In a medium saucepan place the 3/4 cup of sugar, water, orange peel, lemon peel, and cinnamon stick. Bring the ingredients to a boil and then simmer them for 5 minutes. Add the honey and bring the mixture to a boil. Remove the pan from the heat and add the lemon juice. Stir the ingredients together and let the syrup cool. Remove the orange and lemon peels, and the cinnamon stick. Spread the syrup over the cake. A Moist & Delicious Holiday Cake: Greek Chocolate Walnut Cake Karidopita me Sokolata
This Karidopita has walnuts, chocolate chips, and a smooth ganache topping. It's ultra-moist because of the honey syrup and has all of the warm flavors of the holiday season. Make it for a dinner party or for tea time!

Ingredients
The cake:
1 cup light olive oil
6 eggs
1 cup whole milk
1 cup of sugar
2 cups all-purpose flour
4 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon salt
1 and 1/2 cups coarsely ground walnuts plus 1 tablespoon flour
1 cup semi-sweet chocolate chips
For the Syrup:
1 and 1/2 cups granulated sugar
2 cups of water
1/2 cup honey
1 teaspoon pure vanilla extract
For the ganache:
8 ounces semi-sweet chocolate, chopped
1 cup heavy whipping cream
1 teaspoon pure vanilla extract
Instructions
Preheat the oven to 350 °F, 180 °C.
Grease the inside of a 9 by a 13-inch baking pan with vegetable oil.
Beat the eggs and sugar together for a few minutes until thick and pale. Add the olive oil and milk. Beat well to incorporate.
In another bowl, sift the flour, baking powder, baking soda, ground cinnamon, ground cloves, and salt. Slowly add them to the egg mixture while gently whisking just until incorporated and most of the batter is smooth. Do not over mix! Otherwise, your cake will not be light and fluffy.
Combine the ground walnuts and the chocolate chips with 2 tablespoons of flour and mix it. This will prevent the walnuts from sinking to the bottom of the cake.
Fold in the walnuts and chocolate gently with a spatula.
Pour the batter into the already prepared baking dish.
Bake it for about 45 minutes or until a toothpick inserted into the center of the cake comes out clean.
While the cake is baking, prepare the honey syrup. Combine the sugar and water into a saucepan. Bring it to a boil while stirring. Add the honey and vanilla extract and mix together. Allow the syrup to cool completely.
As soon as the cake is done baking, remove it from the oven and poke it all over with a toothpick. Pour all of the cooled honey syrup over the cake and set it aside at room temperature so that all of the syrup is absorbed. About an hour.
Make the Ganache:
Coarsely chop the chocolate and place it in a mixing bowl. Bring the cream to a boil and pour it over the chocolate. Add the vanilla and whisk it together until smooth and glossy. Spread the chocolate over the cake and let it set for about an hour in the refrigerator. It is best to refrigerate it overnight and then serve with tea/coffee.
Notes

Yiayia's Famous Greek Walnut Cake!
I've had this recipe for over 50 years! This Greek walnut cake is so simple and tastes absolutely amazing!

Recipe:
Ingredients
Cake
8 eggs, separated
¾ cup white sugar
3 cup crushed walnuts
1½ cup breadcrumbs
½ salt salt
2 oz brandy
1 tsp vanilla
1½ tsp baking powder
1 tbsp cinnamon
1 tsp cloves
Syrup
3 cup sugar
2 cup water
1 tbsp lemon juice
1 cinnamon stick
1 tbsp butter
Directions
Preheat oven to 350 F and prepare a 9×13 baking pan by greasing it and adding a sparse layer of breadcrumbs.
Make the syrup by adding all the ingredients except the butter in a medium saucepan.
Bring to a boil for 5 minutes.
While the syrup is cooking, make the meringue by adding the egg whites and salt to a stand mixer with the paddle or whisk attachment.
Beat until stiff peaks form.
Transfer the meringue to a large mixing bowl, and add the egg yolks and sugar to the bowl of a stand mixer and mix on low speed to combine.
Check the syrup by removing it from the heat and stirring in the butter.
Set it in the fridge to cool.
Add all the ingredients to the meringue mixture then add the yolk/sugar mixture to the top.
Begin to fold it gently with a spatula.
Folding the meringue instead of mixing it here is crucial for a fluffy cake!
Once the cake is cooked through, remove from the oven and add the cold syrup to the hot cake.
Let it sit refrigerated for 18-24 hours before you cut into it! This will allow the syrup to soak it without leaving it mushy as well as allow the rich flavours to marry.
Enjoy with a scoop of vanilla ice cream or with a dollop of whipped cream!
