Greek Walnut Cake (Egg-Free, Dairy-Free) Vegan & Perfect for Lent!

Ingredients
The Dry Ingredients:
3 cups (400g) all-purpose flour
2 tablespoons baking powder
zest of an orange
2 teaspoons ground cinnamon
1 cup (160g) ground walnuts
The Wet Ingredients:
1 and 1/3 cup (330ml) light olive oil
Flax egg: 4 tablespoons ground flax seeds plus 1/2 cup (125 ml) water
1 and 1/3 cup orange juice
1 cup (220g) granulated sugar
1/2 teaspoon baking soda
1 teaspoon pure vanilla extract
Garnish:
confectioner's sugar
Sweetened shredded coconut
Instructions
Preheat the oven to 350 °F, 180 °C.
Make the flax egg by combining the flax seeds and water in a small bowl. Set aside.
Combine the dry ingredients in a mixing bowl and whisk together. Zest the orange prior to juicing.
In a large mixing bowl, combine the oil, sugar, vanilla extract, flax egg, and whisk together.
Add the baking soda to the orange juice and mix. It will rise so, do this over the wet ingredients. Add to the bowl and whisk together.
Add the dry ingredients in a few batches and whisk until just combined.
If the batter is too thick, add a quarter cup of water.
Grease a 9 by 13-inch baking pan with olive oil and transfer the batter to the prepared pan.
Bake on the center rack for about 35 minutes or until springy to the touch. A toothpick inserted in the center of the cake should come out clean.
Cool completely and dust with confectioner's sugar.
Serve with Greek coffee. Kali Orexi!
Notes
A can (425g) of pure pumpkin puree can be used as an egg substitute in place of the flax-egg.
Store the cake in an air-tight container or covered tightly in plastic wrap so taht it does not become dry.

Flourless Walnut Chocolate Cake Recipe:
Prep time: 15 mins
Cook time: 40 to 55 mins
Serves: 8-10 people
Makes: 1 large cake
1 cup sugar
8 oz (250 g) dark chocolate
2 Tbsp brandy
2 Tbsp strong hot black coffee
6 1/2 oz (200 g) butter, chopped + 1Tbsp to butter pan
2 tsp vanilla extract
1 3/4 cups ground walnuts + 1/4 cup whole
6 eggs, separated
To garnish (optional):
1 Tbsp Powdered sugar, any berries or fruit (I use strawberries and cherries)
Bake in 340 F (170 C) preheated oven on the middle rack until risen and set (40-55 minutes). The cake may still be a little gooey in the center. It may look a little cracked as it develops a crust and can be quite fragile, but this is normal.
High Altitude Adjustment:
Use 7 eggs and bake at 355 F for about 55 min.

Gluten- Free Walnut Coffee Cake
Recipe
8 “/ 20 cm Ring
Serves 8-12
Ingredients:
7 oz/200g Butter Room Temperature
3.5 oz/100g Powdered Sugar
3 Large Egg Yolks
1 Tbsp/ Vanilla Extract
5.3 oz/150g Gluten- Free Flour
5.6 oz/160g Potato Starch
Steps:
1-Add butter, powdered sugar, and egg yolks while mixing on low
2-Increase the speed to medium low and add the vanilla
3-Gradually increase the speed to medium
4-Add the gluten- free flour, the potato starch and the baking powder
5-Mix until all are well combined and forms one mixture
6-Cover it with plastic wrap and place in the fridge for 30 minutes
7-Place it in the fridge for 30 minutes
Filling
Ingredients:
5.3 oz/150g Butter Room Temperature
5.3 oz/150g Sugar
3 Large Eggs Room Temperature
1 Tbsp Vanilla Extract
5.3 oz/150g Fine Chopped Walnuts
1.2 oz/35g Gluten Free Flour
1.4 oz/40g Potato Starch
Steps:
1-Add butter, sugar, and eggs (start with egg yolks) and mix on medium low
2-Add the egg whites and increase the speed to medium
3-Add walnuts, gluten-free flour, and potato starch
4-Mix until all are well combined
5-Transfer the filling to a pastry bag and set aside
6-Remove the dough from the fridge and cut it using the cake ring
7-Dock the dough and add the filling
8-Decorate with walnuts
9-Bake at 355 °F/180 °C for 50 minutes (Baking temperature may vary depending on the oven)
10-Use a knife to loosen the edges
11-Combine 3 Tbsp of honey with 1 Tbsp of water and brush the cake
12-Let it cool down

Ingredients
For the Syrup:
1 cup granulated sugar
5-6 whole cloves
1 cinnamon stick
1 cup water
1/2 cup honey
1 teaspoon vanilla extract
For the Cake:
1 cup (140g) King Arthur Gluten-free Flour
1 and 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon salt
3 eggs at room temperature
1/2 cup (110g) granulated sugar
1/2 cup olive oil
1/2 cup milk at room temperature
1 teaspoon pure vanilla extract
1 cup ground walnuts plus 1 tablespoon flour
For the topping:
1/2 cup ground walnuts
1/2 teaspoon ground cinnamon
confectioner's sugar
Instructions
Preheat the oven to 350 °F, 180 °C.
Grease an 8-inch baking pan with oil or cooking spray.
Make the syrup: Combine the sugar, water, cinamon, and cloves in a small saucepan. Bring the mixture to a boil and as soon as the sugar has dissolved remove the pan from the heat and add the honey and vanilla. Stir together and set aside to cool completely.
Make the cake:
Combine the flour, cinnamon, ground clove, baking powder, and baking soda together in a bowl. Whisk together and set aside.
In the bowl of a tabletop mixer that has been fitted with the whisk attachment, combine the eggs and sugar along with the vanilla extract. Whisk together on high speed until thick and fluffy. About 3-4 minutes.
Add the olive oil and mil and whisk together. Add the flour mixture and whisk together until just combined.
Toss the walnuts together with the tablespoon of flour and add to the batter. Whisk together until incorporated. Pour the batter into the prepared pan.
Bake on the center rack of the preheated oven for 30-35 minutes or until a toothpick that has been inserted into the center of the cake comes out clean.
Poke the cake all around with a toothpick and pour the cooled syrup over the cake.
Allow the cake to cool completely. About an hour.
To make the topping, combine the walnuts with the cinnamon and toss together. Sprinkle the mixture over the cake and dust with confectioner's sugar. Cut into serving slices and serve with Greek coffee. Kali Orexi!
Notes
The cake can be stored in an airtight container in the refrigerator for up to a week.
