How To make Julekake Cardamom Bread
2 1/2 c All-purpose flour
2 pk Active dry yeast
3/4 ts Ground cardamom
1 1/4 c Milk
1/2 c Sugar
1/2 c Butter
1 t Salt
1 Egg
1 c Candied fruits -- optional
1 c Light raisins
2 1/2 c All-purpose flour
In a large mixer bowl combine 2 1/2 cups all-purpose flour, yeast, and cardamom. In a saucepan heat milk, sugar, butter, and salt just till warm (115F) and the butter is almost melted; stir constantly. Add heated milk mixture to flour mixture; add 1 egg. Beat at low speed of electric mixer for 1/2 minute. Beat 3 minutes at high speed, scraping sides of bowl constantly. Stir in 1 chopped mixed candied fruits and peels (optional), raisins, and as much of the 2 1/2 cups all-purpose flour as you can mix in with a
spoon. Turn out onto a lightly floured surface. Knead in enough of the remaining all-purpose flour to make a moderately stiff dough that is smooth and elastic (6 to 8 minutes total). Shape dough into a ball. Place in a lightly greased bowl; turn once to grease surface. Cover, let rise in a warm place till double (about 1 1/2 hours). Punch dough down; divide dough in half.
Cover; let rest 10 minutes. Shape into 2 round loaves; place on greased baking sheets. Flatten each slightly to a 6-inch diameter. Cover; let rise till nearly double (45 to 60 minutes). Stir together 1 slightly beaten egg yolk and 2 tablespoons water, brush over loaves. Bake in a 350F oven for 35 minutes or till done. Cool on a wire rack. Makes 2 round loaves.

30 grams (2 Tbsp) Water
30 grams (2 Tbsp) Sourdough Starter
60 grams (½ Cup) Flour
Filling
30 grams (2 tbsps) Butter at room temperature
25 grams (2 tbsps) Sugar
90 grams (½ cup) Raisins

Christmas Jule Kake
Directions. Heat milk with sugar and butter. Let milk mixture cool. Mix together flour and cardamom and dried yeast. Add flour mixture to milk mixture. Mix well. Cover dough with a clean cloth, let stand in a warm place overnight. In the morning, work raisins and chopped citron into the dough. Form into loaves.The traditional spice used in Julekage is cardamom, although nutmeg, cinnamon, and other flavors may be used as well. Many fans of the bread believe that it tastes best warm out of the oven, although it can also be toasted and served with butter. It also makes very intriguing French toast, thanks to its rich flavor.”

Jukekake! I found this recipe online at
and it turned out AWESOME. I've made this twice, once for our Jul ritual last week and to take to my dad's for Christmas. Both times it was a hit. Give it a shot!!

Makes one round loaf
Ingredients:
Milk-1/3 cup
Sugar-1/4 cup
Butter-1/8 cup
Salt-1 tsp
Warm Water-1/4 cup
Instant Yeast-2- 3/4 tsp
Milk-1/4 cup
Apple Cider Vinegar-1 tbs
Flour-2 1/2 cups
Ground Cardamom-1 tsp
Raisins-3/4 cup
Candied Citron-1/4 cup (I used Candied Orange)
Procedure:
1. In a sauce pan mix together butter, milk, sugar and salt.
2. Heat on low flame until butter melts.
3. Set aside and let it come to luke warm temperature.
4. Mix together milk and vinegar in a bowl and let it stand for 5 minutes. The milk will curdle.
5. In a bowl, mix together warm water and yeast.
6. Add the luke warm milk mixture and milk vinegar mixture.
7. Add half a cup of flour and beat until combined.
8. Add in another 1/2 cup of lflour, cardamom powder and beat until combined.
9. Add raisins and orange peel.
10. Mix well.
11. Add another cup of flour and mix to incorporate.
12. If the dough is still soft, then add the remaining 1/2 cup of flour and knead until incorporated.
13. Take the dough on the counter, cover with a towel and let it sit for 10 minutes.
14. Now knead the dough for 8-10 minutes until smooth and elastic.
15. Place it in a oiled bowl and rotate the dough so that it is completely coated with oil.
16. Cover and allow it to double. This process takes nearly 2 hours.
17. Now knead it again for two minutes.
18. Grease a baking tray. Shape the dough into a round loaf and place it on the tray.
19. Cover and set it aside for 1 1/2 hours.
20. Preheat oven to 175C. Aplly milk on the loaf with a pastry brush.
21. Bake the loaf for 20 minutes.
22. Cover it with foil and bake for another 20 minutes.
23. Remove from oven and allow it to cool on a wire rack.
24. Slice it up and enjoy
