Shahi Phirni is a royal dessert that is served chilled. it has the goodness of saffron and nuts. It is made with rice and milk and has a rich and creamy texture.
Ingredients
Basmati Rice - 1/4 Cup
Full-fat Milk - 1 Liter
Ghee - 1 Tsp
Cinnamon
Unsweetened Khoa - 75 Gms
Sugar - 1 Cup
A Pinch Of Saffron
Cardamom Power - 1/2 Tsp
Chopped Pistachios
Sliced Badam
Chopped Cashew Nuts
Method:
1. Soak the rice for 30 minutes.
2. Grind it to a coarse mixture
3. Heat a pan with some ghee, add the cinnamon stick.
4. After a minute add milk and boil it.
5. Add the ground rice mixture and mix well
6. Once the rice is cooked, add the unsweetened khoa and sugar
7. Add saffron, cardamom powder, pistachios, badam, cashew nuts and mix well.
8. Simmer on low flame for 10 mins.
9. After all the ingredients combine well pour it into moulds
10. Let it come to room temperature, place it in the refrigerator for 4-6 hours to set
11. Serve it chilled.

Ingredients
- ½ cup of long grained rice
- 1 cup of sugar
- 1 litre of milk
- 2-3 pinch of grounded green cardamom
- dry rose petals
- finely chopped pistachios
- finely chopped almonds
- saffron strands
Method
- Soak long grained rice and later grind it into course mixture.
- In a pan add the course mixture, sugar and milk.
- Switch on the flame and keep stirring until the milk reduce to half it's quantity.
- Add freshly grounded green cardamom.
- Take shikora and add the phirni in it.
- Garnish it with dry rose petals,pistachios, almonds and saffron strands.
- Refrigerate it for 1 hour.
- Phirni is ready to be served.

Today I am going to show you how to make Shahi Phirni in Pressure cooker within 15 minutes. Generally Phirni is a time consuming dessert but my Shahi Phirni Recipe is one of the easiest & the quickest. It's a traditional Asian dessert made by combining milk, rice, sugar, khoya & cardamom & has a creamy texture. You can create different flavors with this recipe such as Mango Phirni, Rubbry Phirni, Caramel Phirni, Sewai Phirni & Carrot Phirni.

Caramel Firni
Serves 6-7
Recipe in English:
Ingredients:
-Chawal (Rice) ¼ Cup (soaked for 30 minutes)
-Doodh (Milk) 1 litre
-Ilaichi ke daane (Cardamom pods) crushed ½ tsp
-Olper’s dairy cream ¼ Cup
-Cooking oil 1 tbs
-Sugar ¾ Cup
-Badam (Almonds) chopped 1-2 tbs
-Olper’s dairy cream ¼ Cup
-Badam (Almonds) sliced 2-3 tbs
Directions:
-In blender,add soaked rice,blend coarsely & set aside.
-In a wok,add milk,bring it to boil & keep mixing in between.
-Add coarsely blended rice,mix continuously and cook on low flame for 8-10 minutes.
-Add cardamom pods and mix well.
-Add cream and cook on low flame until thickens (15-20 minutes) & keep mixing in between.
-Grease another wok with cooking oil,add & spread sugar and cook on very low flame until it starts caramelizing and mix until sugar melts & turns brown.
-When sugar is completely dissolved,carefully spread ¼ cup caramel on baking sheet,sprinkle almonds & let it cool completely then break into small pieces & set aside.
-In remaining caramel,add cream,turn off flame,mix well & set aside.
-In frini,add almonds and mix well.
-Now add prepared caramel sauce,mix well and cook for 2-3 minutes.
-Let it cool.
-In serving dish,add caramel firni,garnish with almonds,caramel crunch & serve!

Directions:
-Blender mein soaked chawal dal ker coarsely blend ker lein & side per rakh dein.
-Karhai mein doodh dal ker ubal lein aur bech bech mein chamcha chalatay rahein.
-Coarsely blended chawal dal dein aur halki ancch per 8-10 minutes kliya paka lein aur musalsal chamcha chalatay rahein.
-Ilaichi ke daane dal ker ache tarhan mix ker lein.
-Cream dal dein aur halki ancch per garah ho Janay tak paka lein (15-20 minutes) aur bech bech mein chamcha chalatay rahein.
-Alag karahi ko cooking oil sa grease ker lein,cheeni dal ker pheela lein aur bohat halki ancch per cheeni caramelize huna start ho jaye phir cheeni gul janay aur brown ho janay tak ache tarhan mix ker lein.
-Jab cheeni completely dissolve ho jaye tou baking sheet per ¼ cup dal ker pheela lein,badam dal dein aur completely thanda ker lein phir chotay pieces mein tor lein & side per rakh dein.
-Baqi caramel mein cream dal ker chulha bund ker dein aur ache tarhan mix ker ka side per rakh dein.
-Firni mein badam dal ker ache tarhan mix karein.
-Ab tayyar caramel sauce dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
-Thanda ker lein.
-Serving dish mein caramel firni dal dein,badam aur caramel crunch sa garnish ker ke serve karein!

Ingredients:
-Badaam (Almonds) 4 cup
-Doodh (Milk) 500 ml
-Pani (Water) 4 cup
-Elaichi powder (Cardamom Powder)
1 tsp
-Cheeni (Sugar) 5 tbs or to taste
-Namak (Salt) A tsp
-Chawal ka atta (Rice Flour) 4 tbs
-Arq e gulab (Rose water) 1 tsp
-Nuts for garnishing
Directions:
-In mixer, add almonds and grind to make
almond powder,set aside.
-In wok,add milk, water and keep stirring.
-Add cardamom powder,almond powder
and keep stirring.
-Add sugar and salt, mix well.
-When sugar dissolves completely,gradually
add rice flour while stirring to avoid lumps.
-Keeping whisking so it becomes thick like
pudding.
-Add rose water and mix well.
-Garnish with nuts and refrigerate.Recipe in Urdu:
-Badaam (Almonds) V4 cup
-Doodh (Milk) 500 ml
-Pani (Water) VA4 Cup
-Elaichi powder (Cardamom Powder)
1 tsp
-Cheeni (Sugar) 5 tbs or to taste

-Chawal ka atta (Rice Flour) 4 tbs
-Arq e gulab (Rose water) 1 tsp

badam ka powder bana ker side per rakh
dein.
-Karhai mein doodh aur pani dal ker
musalsal chamcha chalatay rahein.
-Elaichi powder aur badam powder dal ker
musalsal mix kertay rahien.
-Cheeni aur namak dal ker mix ker lein.
-Jab cheeni ghul jaye tou chawal ka atta
thora thora ker ka daltay rahein aur musalsalmix kertay jayein.
-Musalsal whisk kertay rahein yahan tak ka
thick pudding bun jaye.
-Arq e gulab dal ker mix ker lein.
-Nuts sa granish ker ka refrigerate ker lein.
