How To make Firnee (Almond & Cardamom Cream Pudding)

1 pn Salt
1/3 c Granulated sugar
1/2 c Cornflour (cornstarch)
1/4 c Cold water
1/2 c Slivered blanched almonds
1/4 ts Ground cardamom (or more)
1/4 ts Saffron threads (pounded)
1/4 c Finely chopped pistachios
-- (blanched) Put all but 1/2 cup milk into a heavy pan and add salt and sugar. Put on to heat gently, stirring to dissove sugar. Blend cornflour into reserved milk with the 1/4 cup water and pour into warm milk, stirring constantly. Add almonds and keep stirring until mixture thickens and bubbles. Use a whisk if mixture becomes lumpy. Add cardamom to taste and the pounded saffron. Cook on low heat for 5 minutes, letting pudding simmer very gently. Stir occasionally. Pour into 6 or 8 individual sweet dishes, spreading evenly. Sprinkle pistachio nuts around edge of each dish. To serve firnee in the traditional manner, the pudding should be poured into two plates, decorated with pistachio nuts and cut into quarters to serve in wedges. Yields: 4 Servings
INGREDIENTS
Milk - 1 liter
Rice - 250 grams
Ground cardamom - 1 teaspoon
Sugar - 250 grams
Rose water - 1/2 teaspoon
Raisin - 50 grams
Cashew - 50 grams
Saffron syrup - 1 tablespoon
Chopped almond - 50 grams
Chopped pistachio - 50 grams
PREPARATION
1. Rinse rice and then drain. Wipe the grains dry and then grind well in a grinder to a semi fine powder. Keep aside.
2. Heat milk in a pot on medium high. Once milk starts to boil, reduce the heat to medium low and add the rice flour and stir. Then add cardamom and sugar. Stir till sugar is completely dissolved.
3. Add rose water, raisin, cashew, and saffron syrup. Continuing stirring in intervals so that lumps are not formed.
4. Without covering the pan, cook for 5-6 minutes till the phirni thickens a little.
5. Turn off the heat and let it rest for a few minutes before serving.
6. Serve and garnish with chopped almonds and pistachios.

Lychee Phirni
Serves- 3-4
Ingredients-
1 litre milk
4 tbsp basmati rice, soaked
¾ cup lychee
1 ½ cup lychee crush
1 tsp water
¼ tsp cardamom powder
½ cup khoya
10-12 almonds, blanched and chopped
10-12 pistachios, blanched and chopped
½ tsp rose water
7-8 saffron strands
Method-
Boil milk and rice in a non-stick pan.
Stir continuously, till mixture thickens
Once it thickens add sugar, lychee pieces, lychee crush and mix well.
In about 1 tsp of water add the cardamom powder and mix it with the lychee mix.
Add the grated khoya, rose water, almonds and pistachios.
Once the mixture is thick remove from the flame and mix continuously till the mixture turns cold.
Pour in an earthen pot and set it aside to set.
Serve with a garnish of almonds, pistachios and lychee.

INGREDIENTS
Rice - 60 grams
Water
Milk - 1 litre
Granulated sugar - 60 grams
Almonds - 2 tablespoons
Cashews - 2 tablespoons
Cardamom powder - 1/2 teaspoon
Saffron - 1/8 teaspoon
Raisin - 1 tablespoon
Rose water - 1 teaspoon
Pistachios - for garnishing
PREPARATION
1. Wash and soak 60 grams rice in sufficient water for 30 minutes.
2. Heat 1 litre milk in a pot and bring it to a boil.
3. Add 60 grams soaked rice, 60 grams granulated sugar and cook on low heat till the rice is half done.
4. Add 2 tablespoons almonds, 2 tablespoons cashews, 1/2 teaspoon cardamom powder and mix well.
5. Add 1/8 teaspoon saffron, 1 tablespoon raisin and allow to simmer on low heat till the rice is cooked and the mixture is thick.
6. Remove from heat, allow to cool a little, add 1 teaspoon rose water and stir. Transfer into bowls.
7. Garnish with pistachios.
8. Serve.

- dry rose petals

Method
- Soak long grained rice and later grind it into course mixture.
- In a pan add the course mixture, sugar and milk.
- Switch on the flame and keep stirring until the milk reduce to half it's quantity.
- Add freshly grounded green cardamom.
- Take shikora and add the phirni in it.
- Garnish it with dry rose petals,pistachios, almonds and saffron strands.
- Refrigerate it for 1 hour.
- Phirni is ready to be served.
