How To make Cardamom Fudge ( Sheer Payra)
2 c Sugar
2/3 c Milk
1/4 ts Salt
2 tb Light corn syrup
2 tb Margarine or butter
1/2 ts Ground cardamom
1/4 c Chopped walnuts
1/4 c Chopped pistachios
Cook sugar, milk, salt and corn syrup in 2-quart saucepan over medium heat, stirring constantly, until sugar is dissolved. Cook, stirring occasionally, to 240F on candy thermometer or until small amount of mixture dropped into very cold water forms soft ball that flattens when removed from water. Remove from heat. Add margarine. Cool mixture to 120F without stirring. (Bottom of pan will be lukewarm.) Add cardamom. Beat vigorously and continuously until candy is thick and no longer glossy, 5 to 10 minutes. (Mixture will hold its shape when dropped from spoon.) Quickly stir in nuts. Spread mixture in buttered 9x5x3-inch loaf pan. Let stand until firm. Cut into 1-inch squares.

Herbs and Spices I use for my cooking:

-150 g milk powder
- 220 g of granulated white sugar
- 75 g of walnut
- 450 mL of water
- 1 Tsp of Cardamom powder
- Chopped pistachios & walnuts for garnish
- 1/2 Tsp of rosewater (optional)
You can store the Sheer Pira (Afghan fudge) in an airtight container in the refrigerator. It can be enjoyed chilled or at room temperature. Enjoy the creamy, nutty sweetness of Sheer Pira whenever you desire a delightful treat.

Sheer Pera; An Afghan Milk Fudge
Ingredients:
Dry ingredients:
5 cups dry milk (instant full cream milk powder)
1.5 cups roughly chopped walnuts
(Almonds are optional, I did not use it for this recipe)
1/4 cup roughly chopped pistachios for garnish
Butter to grease the pan so the fudge can slide out with ease. You can also add some dry milk powder on top of the butter to make it even easier.
Syrup:
2 cups water
2 cups sugar
1/2 tsp finely ground cardamom
1-2 tsp orange blossom water (you may use rose water if you prefer)
Directions:
Bring syrup to a boil and let it boil on medium high for about 10 minutes. Stir every 3 minutes to ensure your syrup is not turning into caramel. Once the consistency is sticky (careful not to check with your finger, it’s extremely hot and you’ll burn your skin) let it cool down for a little and add to your dry ingredients. Your dry ingredients are the milk powder and chopped walnuts. Mix well, the consistency should be hard to mix by hand, if it’s too runny, adjust by adding more milk powder, 1/4 cup at a time. Once desired consistency is reached, pour into your greased pan and let cool completely (preferably in the fridge) for an hour or so.

Afghan Milk Fudge (Sheer Payra) Recipe
Sheer Payra is a milk fudge flavoured with nuts and cardamom. Serve with tea or coffee.
In Afghanistan, this sweet is served at Eid holidays, weddings, baby births and of course for very special guests.
Ingredients:
2 cups sugar
2 cups water
2 1/2 cups milk powder
1 tablespoon blossom water
1 teaspoon cardamom powder
100g almonds sliced
100g walnuts
100g pistachios
Instructions:
Place the water and sugar in a large pan over high heat and stir until the sugar dissolves.
Turn down the heat to medium, until the syrup thickens. You will feel the syrup thicken as you stir the mixture around, it’ll take around 15 minutes to get to desired thickness.
Add the blossom water and the cardamom.
Remove from heat, add the milk and half of the pistachios, and mixed it well.
Pour mixture into the prepared serving dish, and sprinkle with the almonds, walnuts, and the pistachios on the top.
Leave it for 2 hour on room temperature; after that cut it into desired shape.
