How To make Cardamom Fudge ( Sheer Payra)
2 c Sugar
2/3 c Milk
1/4 ts Salt
2 tb Light corn syrup
2 tb Margarine or butter
1/2 ts Ground cardamom
1/4 c Chopped walnuts
1/4 c Chopped pistachios
Cook sugar, milk, salt and corn syrup in 2-quart saucepan over medium heat, stirring constantly, until sugar is dissolved. Cook, stirring occasionally, to 240F on candy thermometer or until small amount of mixture dropped into very cold water forms soft ball that flattens when removed from water. Remove from heat. Add margarine. Cool mixture to 120F without stirring. (Bottom of pan will be lukewarm.) Add cardamom. Beat vigorously and continuously until candy is thick and no longer glossy, 5 to 10 minutes. (Mixture will hold its shape when dropped from spoon.) Quickly stir in nuts. Spread mixture in buttered 9x5x3-inch loaf pan. Let stand until firm. Cut into 1-inch squares.

SHEER PAYRA
Ingredients
2 cups milk powder
1 cup sugar
2 green cardamoms
1 tsp ghee
2 tbsps chopped black raisins
2 tbsps chopped dried golden apricot
2 tbsps chopped walnuts
2 tbsps chopped almonds
1 tbsp rose water
1 tsp green cardamom powder
Dried rose petals for sprinkling
Pistachios powder for sprinkling
Method
1. Heat sugar and 1 cup water in a non-stick pan. Add green cardamoms and cook till the sugar melts and the mixture reaches one string consistency.
2. Discard the green cardamoms and add milk powder and continuously mix and cook till well combined.
3. Add ghee and mix well. Reduce the heat to low, add black raisins, golden apricots, walnuts, almonds, rose water and green cardamom powder and continuously mix and cook on low heat till the mixture thickens.
4. Transfer the mixture into a greased and lined burfi tray and tap it a few times. Sprinkle dried rose petals and pistachios powder. Keep aside for 2-3 hours or till set completely.
5. De-mould the fudge, cut in desired shape and arrange on a serving plate. Serve.

-150 g milk powder
- 220 g of granulated white sugar
- 75 g of walnut
- 450 mL of water
- 1 Tsp of Cardamom powder
- Chopped pistachios & walnuts for garnish
- 1/2 Tsp of rosewater (optional)
You can store the Sheer Pira (Afghan fudge) in an airtight container in the refrigerator. It can be enjoyed chilled or at room temperature. Enjoy the creamy, nutty sweetness of Sheer Pira whenever you desire a delightful treat.

How To Make Sheer Pera (Milk Fudge)
Ingredients:
◦ 2 cups water
◦ 2 cups sugar
◦ 3 cups dry milk
◦ 1 cup chopped walnuts
◦ 1 teaspoon rose water
◦ 1 teaspoon cardamom
◦ Chopped pistachios (to taste)
◦ About 1 tablespoon of oil of choice
◦ Directions:
◦ Add sugar, water, and cardamom to a pot. Let simmer on medium-high heat for 25-30 min until mixture bubbles, adding rose water halfway through. Reduce heat and add dry milk and walnuts. Turn off heat and mix well until mixture thickens. Brush oil on a sheet pan covered with aluminum foil. Pour mixture onto sheet pan and smooth out until even. Add desired amount of pistachios on top. Let cool for 2 hours. Slice into diamond shaped and enjoy!
