How To make Cardamom Fudge ( Sheer Payra)
2 c Sugar
2/3 c Milk
1/4 ts Salt
2 tb Light corn syrup
2 tb Margarine or butter
1/2 ts Ground cardamom
1/4 c Chopped walnuts
1/4 c Chopped pistachios
Cook sugar, milk, salt and corn syrup in 2-quart saucepan over medium heat, stirring constantly, until sugar is dissolved. Cook, stirring occasionally, to 240F on candy thermometer or until small amount of mixture dropped into very cold water forms soft ball that flattens when removed from water. Remove from heat. Add margarine. Cool mixture to 120F without stirring. (Bottom of pan will be lukewarm.) Add cardamom. Beat vigorously and continuously until candy is thick and no longer glossy, 5 to 10 minutes. (Mixture will hold its shape when dropped from spoon.) Quickly stir in nuts. Spread mixture in buttered 9x5x3-inch loaf pan. Let stand until firm. Cut into 1-inch squares.

Ingredients
2 Cups Water
2 Cups Sugar
2 1/2 Cups Milk Powder
1 Teaspoon Cardamom
1 Teaspoon Rose Water
1/2 Teaspoon of Salt
A handful of nuts of your choice (I like pistachios at a minimum!)
Recipe
1. First, prepare your baking sheet. I use a square one. Line with parchment paper, grease the parchment and clip down on the sides.
2. Now, you will make your sugar syrup. Take your sugar and water and bring the water to a boil in a saucepan.
3. Then, reduce your mixture to a simmer for about 15 minutes. You want a lovely syrup.
4. After 15 minutes, you will add your milk powder. Stir in. Also, add your cardamom, rose water, and salt. You want a lovely batter-like texture. Fold in your chosen nuts.
5. Now, bring out your prepped baking pan and pour in. I then decorate it with a few more pistachios. Let set for at least 2 hours or overnight.
6. Cut fudge into squares and serve with some Afghan chai.

How To Make Sheer Pera (Milk Fudge)
Ingredients:
◦ 2 cups water
◦ 2 cups sugar
◦ 3 cups dry milk
◦ 1 cup chopped walnuts
◦ 1 teaspoon rose water
◦ 1 teaspoon cardamom
◦ Chopped pistachios (to taste)
◦ About 1 tablespoon of oil of choice
◦ Directions:
◦ Add sugar, water, and cardamom to a pot. Let simmer on medium-high heat for 25-30 min until mixture bubbles, adding rose water halfway through. Reduce heat and add dry milk and walnuts. Turn off heat and mix well until mixture thickens. Brush oil on a sheet pan covered with aluminum foil. Pour mixture onto sheet pan and smooth out until even. Add desired amount of pistachios on top. Let cool for 2 hours. Slice into diamond shaped and enjoy!

دونیم پیاله بوره و دونیم پیاله آب را با هم در یک دیگ انداخته جوش بنین تاکه تیره شوه تقریبا پانزده تا هژده دقیقه دوام میکنه در دیگ که مه شربت را جور کدیم زود جوش کد شما اگر در سر داش در دیگ عادی تیار میکنین زیاتر تایم را میگیره که شربت تیار شوه باید از دونیم گیلاس آب که انداختین نیم گیلاس آبش خشک شوه و دو گیلاس شربت باقی بانه اگر شربت را بعد از اینکه جوش کد و تیره شد بهتر بدانین شربت را اندازه کنین که نیم گیلاس آبش خشک شده باشه و دو گیلاسش باقی مانده باشه یک ضرف را چرب کرده تیار بانین بخاطر شیر پیره را انداختن وقتکه دیدین که قیام بوره تیره شد سخت نباشه فقط تیره باشه باز سه ونیم پیاله شیر خشک را همرایش مکس کنین کمی هیل هم اضاف کنین خوب مکس کنین باز داخل ضرف که قبلا آماده کرده بودین بندازین و بگزارین که سرد شوه داخل یخچال بگزارین وبعد از اینکه سرد شد توته توته کنین در اول کمی چسپوک میباشه بعد از سه چهار ساعت بیخی چسپوکیش گم میشه
