Easy Sausage Breakfast Casserole
This homemade easy sausage breakfast casserole recipe makes the best breakfast!

INGREDIENTS FOR CASSEROLE:
1 pound Jimmy Dean refrigerated roll sausage
8 eggs
2/3 cup milk
1.5 cups mild cheddar cheese
1 16 oz can refrigerated biscuit dough I used flaky butter flavored
2 cups sausage gravy
Salt and pepper to taste
Optional: Chopped green onion for garnish
INGREDIENTS FOR GRAVY
Grease from 1 pound Jimmy Dean sausage
2 tablespoons bacon grease OR butter
1/4 cup flour
3 cups milk
Salt and pepper to taste
INSTRUCTIONS
Preheat the oven to 350 degrees.
In a large skillet brown 1 pound Jimmy Dean sausage over medium heat. Remove sausage from the skillet and set aside.
Add 2 tablespoons of bacon grease OR butter to the pan. Once melted, whisk in 1/4 cup flour. The grease and flour will form a paste. Slowly whisk in milk. Continue whisking until no lumps remain. Add salt and pepper to taste. Simmer gravy over medium-low heat until thickened, about 15 minutes
While the gravy is cooking, whisk together eggs and 2/3 cup milk. Add salt and pepper. Add cheese and sausage to the eggs and mix well.
Spray 9x13 baking dish with cooking spray. Tear biscuits in to small pieces and place them in the 9x13 baking dish. Pour the egg mixture over the biscuits.
Pour 2 cups of gravy evenly on top of the casserole. Reserve remaining gravy to serve with the casserole.
Bake casserole for 35 minutes at 350 degrees.
Serve warm. Optionally, garnish with chopped green onion and top with remaining gravy.

Breakfast Sausage Casserole

Ingredients
Butter, for greasing
1/2 loaf of sliced white loaf bread
1 pound fresh bulk pork sausage with sage
10 ounces sharp Cheddar, grated
2 cups half-and-half
1 teaspoon dry mustard
1 teaspoon salt
5 large eggs, lightly beaten
Directions
Cut the bread into 1-inch cubes and spread in the bottom of a greased 9- by 13- by 2- inch casserole dish.
In a medium skillet, brown the sausage over medium heat until fully cooked and no longer pink. Remove the sausage with a slotted spoon to drain the fat. Spread the cooked sausage over the bread and top with the cheese. Then stir together the, half-and-half, dry mustard, salt and eggs. Pour this mixture over the cheese. Cover the casserole with aluminum foil and refrigerate for 8 hours or overnight.
The next day, preheat the oven to 350 degrees F.
Bake the covered casserole until set and slightly golden, about 50 minutes. Remove from the oven and allow the casserole to set for 15 minutes before serving.
