- 5 Green Onion Stalks
- 1 Small to Medium Yellow Onion
- 1 lb Ground Pork Sausage (Feel free to use whatever ground sausage you like!)

- 1 Cup Shredded Cheese of Choice (We used Mild Cheddar.)
- Salt (to taste)
- Pepper (to taste)

Sausage Egg Brunch Casserole

Sausage egg casserole
In fry pan on high brown 1 pound of sausage with 1 small chopped onion....add: 1 ½ cups shredded cheese (cheddar, swiss, whatever you have ) ½ cup mozzarella cheese, 2 cups cooked broccoli florets ( cooked in microwave for 1 minute) and 4 cups of shredded potatoes (I did red and left the skins on ). Stir on medium heat for 5 minutes…. In a bowl, put 8 eggs and ¾ cup heavy cream…and whisk…. Spray a casserole dish, and dump ½ of the sausage mixture into it….pour ½ egg mixture over that…add the remainder of the sausage mix, and then top with remaining egg mixture….bake at 375 for 40 minutes….
