How To make Breakfast Casserole (Pennsylvania Dutch)
6 ea Large eggs
2 c Milk
1 t Salt
1 t Dry mustard
2 ea Slices white bread, cubed
1 lb Sausage browned
1 c Sharp/mild cheddar shreds *
* Use either sharp or mild Shredded Chedder Cheese. ~

Beat eggs, add milk, salt and mustard, mixing well. Grease bottom of 9 x 13 baking dish. Place in layer of bread cubes, the sausage, then cheese. Pour egg mixture over the top. Refrigerate overnight. Bake at 350 degrees F. for 45 minutes. Let stand about 5 minutes before cutting. NOTE: For 8 people use 3 slices of bread and 8 eggs.

This week the kids pulled together all their favorites and created our breakfast meal plan.
Week of farmhouse breakfasts
Monday: Scrambled egg burritos
Tuesday: Banana Muffins
Wednesday: Puff Pancake
Thursday: Fruit and Yogurt Parfaits
Friday: Baked Oatmeal
Saturday: Buttermilk Pancakes
Sunday: Sausage Egg casserole

Banana Muffins:
¾ Cup rapadura or sugar
1 ½ Cup mashed bananas
¾ Cup oil (coconut or pork lard)
2 eggs
Mix these first four ingredients together.
Stir in:
2 Cups flour
1 tsp baking soda
½ tsp baking powder
½ tsp salt
2 tsp vanilla
½ Cup chopped nuts(optional)
Bake at 400* for 15-20 min

Puff Pancake:
In blender, combine:
6 large eggs
1 cup milk
1 cup flour
Dash of salt
1 tsp Almond extract
½ cup coconut or almond flour
¼ cup maple syrup
-Melt ½ stick ( 4TB) butter in 9x13 pan, after blending ingredients together, pour in pan.
Bake at 425* for 22-27 min
(I double this recipe for my family of 8)

Baked oatmeal:
Mix together:
6 cups rolled oats
1 cup rapadura or sugar
1 stick (8 TB) melted butter
2 cups milk
4 eggs
4 tsp baking powder
3 tsp salt
4 tsp vanilla extract
Pour into 9X13 dish and bake on 350* for 30-35min

The BEST Buttermilk Pancakes:
-Whisk together:
2 Cups flour
2 TB rapadura or sugar
4 tsp baking powder
1 tsp salt
- In another bowl separate 2 large egg whites from yolks. Beat the whites until stiff peaks form.
-Beat the egg yolks and then add 2 1/2 cups of buttermilk and 1/4 cup oil(I use coconut or pork lard)
-Pour wet ingredients into dry ingredients, but don't overmix.
-Gently fold in your egg whites.
-Fry on buttered pan.

Lebanon PA, 6.7.2021: PA Dutch Lunch or Dinner Casserole in Jo Ellen’s Kitchen
2 meats, 2 vegetables, 2 cheeses, & eggs
Ingredients:
• 8 eggs
• ½ teaspoon salt
• 1 box or small bag of frozen broccoli florets
• 1 – 6 ounce container fresh sliced mushrooms
• 1 medium sized onion, chopped (Optional)
• 1 thick slice of ham, cut into 1/2” cubes
• 1 pound of hamburger, fried
• 1 ½ cups sharp cheddar cheese
• 1 ½ cups mozzarella cheese
• PAM
Directions:
• Crack 8 eggs into a large mixing bowl.
• Add salt, broccoli, mushrooms, onion, ham, hamburger, and cheeses.
• Toss until eggs coat ingredients.
• Pour mixture into a 9” x 12” baking pan sprayed with PAM.
• Bake in the oven on 350 degrees for up to 35 minutes until eggs are done, contents are hot, and cheese is melted.
• Enjoy!
