How To make Irish Cream and Chocolate Cheesecake
1 2/3 c Crushed chocolate wafers
-(200 gr package) 1/3 cup -butter, melted
FILLING:
2 Envelopes unflavored gelatin
1/4 ts Salt
1 tb Instant coffee granules
2 c Milk
4 Eggs, separated
1/3 c Irish Cream liquer
1 lb Cream cheese
1/2 c Granulated sugar
4 oz Semisweet chocolate
This can be made a day ahead, and it freezes well too. CRUST; In bowl, combine wafers and butter. Press into 13 x 9 inch glass baking dish. Refrigerate. FILLING; In saucepan, cook gelatin, salt, coffee and milk, stirring constantly, over medium heat until hot and coffee is dissolved. Reduce heat. Stir a little coffee mixture into egg yolks, then pour egg mixture back into saucepan. Cook, stirring frequently, until mixture thickens slightly, 4 - 5 minutes. Remove from heat and add liqueur. Using electric mixer or food processor, blend cream cheese and 1/4 cup of the sugar until smooth. Slowly blend coffee mixture into cream cheese. Chill, stirring occasionally, until consistency of raw egg whites, about 1 - 1-1/2 hours. Meanwhile, melt chocolate in double boiler over hot water. Let cool. Beat egg whites until soft peaks form. Gradually add remaing sugar and beat until stiff peaks form. Gently fold egg whites into coffee mixture. Transfer 1-1/2 cups of coffee mixture to small bowl and fold in chocolate. This is my favorite cheesecake. The Bailey's Irish Cream Cheesecake.
Restaurant quality dessert
Ingredients:
Crust:
9 ounces of chocolate cookies or wafers or crackers (250g)
7 Tablespoons melted butter (100g)
Filling:
2 pounds (room temperature) cream cheese (900g)
1 cup sugar (200g)
5 eggs (room temperature)
1 teaspoon vanilla extract (5ml)
3/4 cup Bailey's Irish Cream (180ml)
1/4 cup heavy cream (60ml)
3/4 cup semi-sweet chocolate (160g)
Bake in hot water bath for 20 minutes @ 350F, then turn down oven to 225F and bake 110 minutes longer. Allow to cool to room temperature, then refrigerate overnight till cold.

This was a BIG HIT at work, as some co-workers had samples.
I saved 3/4 cup of the crust crumbs for garnish.
I never liked the garnish look, so I should have just used all of the crumbs and went up the side of the pan with all of the crumbs.

Learn how to make a no-bake Baileys chocolate cheesecake with my easy recipe. After being sent Hummingbird Bakery's Bailey's collaboration cheesecake a couple of months ago and sharing it with the folks, my dad asked me if I could dupe it for his birthday. No problem!
Or at least, that was until it happened to reach 31°C in my flat on the day I was due to bake it. So I decided to make it a no-bake cheesecake instead to save myself and Mr Tashcakes from cooking ourselves in the process. It turned out delicious.

Another boozy one for you because...Christmas! But this time I'm using a classic Chrimbo tipple - Baileys. Sweet, creamy and delicious, this stuff is like a naughty milk shake (but please drink it responsibly!!!) This cheesecake uses the distinctive flavour of Baileys's to ramp up the Christmas vibes.
