Bailey’s Irish Cream No Bake Chocolate Cheesecake
Later this week is St. Patrick’s Day! In honor of St. Patrick’s Day this week, I wanted to share a fun and festive themed recipe, I made an Irish cream cheesecake! This is a delicious, no-bake chocolate cheesecake made with Irish cream. There are 3 layers, a chocolate chip cookie and Irish cream crust, a chocolate, cream cheese and Irish cream filling, and an Irish cream whipped frosting on top of the cake. Together they make for a sinfully delicious sweet treat, you don’t want to miss. The month of March is also my boyfriend Jon’s birthday month and he loves cheesecake and chocolate, so I made this cake for him to celebrate his birthday. Tastes Like Home S04E01 Baked Irish Coffee Cheese Cake with Cherry Sauce
Makes 1 x 23cm
For the base
300g digestive biscuits
½ tsp ground ginger
150g butter, melted
For the filling
300g soft cream cheese
100g crème fraiche
50g soft dark brown sugar
3 eggs
3 tbsp espresso coffee
3 tbsp Irish whiskey
For the cherry sauce
1 tbsp arrowroot
4 tbsp water (or port)
350g jar pitted morello cherries (retaining juice too)
3 tsp caster sugar
2 star anise
To finish
150g cherries with stems attached, to decorate
Small sprigs of lemon balm or mint, to decorate
Preheat the oven to 170∞C/fan 150∞C/gas 3. To prepare the tin, generously brush a 26cm loose base tart tin with melted butter.
To make the base, place the biscuits in a food processor and crush until fine crumbs form.
Transfer the biscuit crumbs to a bowl, add the ginger then pour over the melted butter and mix thoroughly until the crumbs are completely coated.
Tip them into the prepared tin and press firmly down into the base and up the sides. Set in the fridge for 30 minutes.
To make the filling, mix the cream cheese, crème fraiche, dark brown sugar, eggs, espresso coffee and whiskey together in a large jug.
Pour the mixture into the biscuit base and smooth evenly. Place in the oven to bake for about 30 to 35 minutes or until just set.
Carefully remove from the oven and cool completely before removing from the tin.
For the cherry sauce: Drain the cherries, reserving the juice. Mix the arrowroot and the water (or port) together in a small bowl. Add the reserved juice, sugar, arrowroot mix and star anise in a saucepan over medium heat for 5 minutes or until the mixture boils and thickens. Stir in the cherries. Set aside to cool slightly. Remove the star anise before serving
To decorate, arrange the cherries with stems attached as well as some sprigs of lemon balm or mint in a quarter moon shape on the one side and serve with the cherry sauce.

Cherry Liqueur Cheesecake
Preheat oven to 300 - 325 degrees
Cherries:
1 Pkg (approx 16 ounces) Montmorency Dried Cherries (I used organic)
1 C water
1 C cherry liqueur
In a stainless saucepan, bring cherries to boil in water until cherries are soft and water is almost gone. Take cherries off heat. Then add (drown) the liqueur to hot mixture of cherries. You should have a really nice rich and sweet sauce with chunks of whole cherries. Soak in the liqueur overnight if you can for added flavor.
Crust:
2 C ground Honey Graham Crackers
1/4 C butter (melted)
1/4 C sugar
Pat into a 10 spring form pan
Filling:
5 - 8 oz Philadelphia Cream Cheese (room temperature)
1 1/2 C bakers fine sugar
2 whole eggs and 2 egg yolks (room temperature)
1 C heavy cream
1 T vanilla (or try fresh vanilla beans)
Cream together until smooth - pour into prepared (crust) spring form pan and bake slowly until JUST set - it may be slightly golden brown - (but not necessary) and even better if not. Usually takes about 40 minutes REMEMBER ONLY UNTIL SET not dry
OPTIONAL: you can add some cherry mixture in the fold of the cake before baking (approximately 1/2 C) reserving the rest for later placement on cheesecake
OPTIONAL: you may add lemon rind (yellow part zest only) for a wonderful flavor
Topping:
2 C sour cream
1/2 C bakers fine sugar
1 t vanilla
Stir together - pour over hot cheesecake and bake 5 minutes and then bring to room temperature cool and refrigerate - seal with handy wrap and refrigerate.
Lastly pour the cherry mixture over the cooled cheesecake and let the mixture spill over side. Garnish with whip cream, holly sprigs, greens or cherries
Baileys Super Chocolate Cheesecake (Dairy-Free Option)
Happy New Years Eve! This week, I wanted to challenge myself and make something I never made before. A dairy-free cheesecake. With Baileys. The trouble with dairy-free cheesecake is the dairy-free cream cheese has a distinct flavour that can be hard to cover up. For a first go, I think I did pretty well. It didn't turn out as expected but it was still delicious!
**All ingredients that I used are dairy-free, but you can use dairy ingredients and it will taste just as delicious!
