How To make Festive Irish Cream Cheesecake
1 c Graham Cracker Crumbs
1/4 c Sugar
1/4 c Margarine, melted
1 Env. Unflavored Gelatin
1/2 c Cold Water
1 c Sugar
3 Large Eggs, Separated
16 oz Cream Cheese, Softened
2 T Cocoa
2 T Bourbon
1 c Whipping Cream, Whipped
Combine graham cracker crumbs, sugar, and margarine; press onto bottom of 9-inch springform pan.
Soften gelatin in water, stir over low heat until dissolved. Blend in 3/4 cup sugar and beaten egg yolks; cook stirring constantly, over low heat, 3 minutes. Combine cream cheese and cocoa, mixing at medium speed on
electric mixer until well blended. Gradually add gelatin mixture and bourbon, mixing until well blended. Chill until thickened, but not set. Beat egg whites until foamy; gradually adding the remaining sugar, beating until stiff peaks form. Fold egg whites and whipped cream into cheese mixture and pour over crust. Chill until firm. Garnish with chocolate curls and small silver candy balls, if desired. VARIATION: Substitute 2 T cold coffee for bourbon.

Step By Step Irish Bailey's cream cheesecake With recipe
Ingredients for a 9-inch cheesecake:
250g Digestive Biscuits
125g of Melted Butter
350g of Soft Cream Cheese
125g Icing Sugar
2tbspof Baileys Irish Cream
Method
Gently melt the butter in a saucepan. Add the crushed biscuits and mix until the butter has been absorbed. Remove from the heat.
While it's still warm, press the mixture (using the back of a spoon) into the bottom of a lined 23cm/9inch springform or flan tin. Leave to set for one hour in the fridge.
While it is chilling in the fridge, grate the chocolate. If your kitchen is warm, you should pop the gratings in the fridge, too.
Refrigerate and allow to set for at least two hours. If you can bear to leave it overnight, so much the better.

How To Make Irish Cream Cheesecake
INGREDIENTS
For the crust:
1 (10-ounce) package Mint Oreo Thins
6 tablespoons butter, melted
Pinch of salt
For the filling:
12-ounces of cream cheese, room temperature
2 large eggs, room temperature
2/3 cup granulated sugar
1/2 cup Bailey’s Irish cream
1 teaspoon vanilla extract
For the ganache:
1/2 cup heavy cream
8 ounces semisweet chocolate chips
4 tablespoons Bailey’s Irish cream
INSTRUCTIONS
Make the crust: Preheat oven to 325 degrees.
In a food processor, pulse together all crust ingredients until smooth and combined. Press crust into a springform pan in an even layer, making sure to cover the walls of the pan as well. Bake crust for 8 to 10 minutes. Let cool completely before adding filling.
Make the filling: Preheat oven to 350 degrees.
In a large mixing bowl, add all filling ingredients. Using a hand mixer on medium speed, mix everything together until filling is smooth and there are no cream cheese lumps. Pour filling into cooled crust and bake for 20 minutes. If cheesecake is starting to look too dark, carefully shield top with aluminum foil. Bake for an additional 10 to 15 minutes. Center will not look completely set. Cool cheesecake completely on a wire rack. As it cools, center will firm up. Place cake in refrigerator to chill completely before serving.
Make the ganache: In a small saucepan, carefully heat heavy cream over low heat until hot, but not boiling. Pour hot cream over chocolate chips along with the Irish cream. Stir continuously until chocolate has melted into a silky smooth consistency. Pour ganache over cooled cheesecake and serve. Enjoy!

Here is the recipe:
Irish cream:
470g/ 2 cups heavy cream
249g/ 1 cup Irish whisky
132g/ 2/3 cup granulated sugar
14g/ 1 tbsp. light brown sugar
14g/ 1 tbsp. melted dark chocolate
8g/ 2 tsp instant coffee
4g/ 1 tsp vanilla
(refrigerate until ready to use)
192g/ 1.5 cups tea biscuits (crust)
75g/ 1/3 cup melted butter (crust)
14g/ 1 tbsp. light brown sugar (crust)
680g/ 3-8oz packets cream cheese (room temperature)
150g/ 2/3 cup granulated sugar
64g/ 1/3 cup light brown sugar
60g/ 1/4 cup sour cream
155g/ 2/3 cup Irish cream (see recipe above)
3 eggs
6g/ 1.5 tsp vanilla
30g/ 1/4 cup cornstarch
Bake crust @ 350F/176C for 10 minutes
Bake cheesecake @ 350F/176C for 50 minutes
Turn oven to OFF and allow cheesecake to rest in over for 30 minutes
Allow cheesecake to cool at room temperature (60 minutes)
Chill/setup cheesecake in refrigerator for 6 hours/overnight
Brush top of cheesecake with Irish cream (see recipe above)
Top with shaved dark chocolate (28g/ 1oz shaved chocolate)
Note: This recipe contains liquor (Irish whisky).
An 8 or 9 inch springform pan is recommended for this cheesecake recipe.
