5 T Salad oil 3 T Crushed red pepper 1 1/2 T Fermented black beans, -rinsed and drained 1 1/2 T Minced garlic 2 t Each dry sherry & sesame o 1/2 t Salt In a jar or bowl, place oil, red pepper, black beans, garlic, sherry, sesame oil and salt. Cover tightly with foil. Set jar on rack over simmering water; cover and steam for 45 minutes. Cool, cover and refrigerate indefinitely. Serve at room temperature. Makes 1/2 cup

Ingredients: Half a small onion 1 red pepper 2 stems of spring onions 3 cloves of garlic 1 thumb-size ginger 1 and 1/2 tablespoons of black beans 450g of rump steak cut into 2 inches long strips (marinated) Half a chilli (optional) 1 tablespoon of potato starch/corn flour mixed with 2 tablespoons of water 2 tablespoons of oyster sauce 2 tablespoons of light soy sauce 1 teaspoon of dark soy sauce 1 teaspoon of sugar
HOW TO MARINATE BEEF (add all the following ingredients into a bowl): 1/2 teaspoon of white pepper 1 tablespoon of dark soy sauce 1 tablespoon of potato starch or corn flour 1 tablespoon of soy sauce 1 teaspoon of sesame oil 1 tablespoon of oyster sauce 1 teaspoon of cooking wine 1/2 teaspoon of baking powder (optional) 2 tablespoons of water
Mix these ingredients in well with the beef and leave to marinate for 30 minutes ______________________________________________________

How to make king prawns and black bean sauce
King prawns in black bean sauce is one of my favorites dishes. It is a savory and slightly sweet dish. Not as hot as the name suggested. The link above to my blog has detail recipe . Ingredients 10 raw 26/30 tiger prawns 80g peppers cut to pieces 2 table spoon vegetable oil
Ingredients A 25g onions cut to small pieces 5g fresh chillies thinly sliced 5g garlic thinly sliced 10g black bean
Ingredients B 60ml water
Ingredient C 1g salt mix 1g oyster sauce 2g sugar 5g dark soy sauce Dash of pepper Dash of wine Dash of sesame oil
Ingredient D 2g potato starch dissolved in 10ml cold water.
Blanch the king prawn in boiling water for 3 minutes to cook and set aside on a colander. Heat wok till hot and add 2 tablespoons of vegetable oil. Add ingredients A and stir for 10 second. Add the peppers and king prawn. Stir for 10 seconds and add water (ingredient B). Add ingredients C. When it begins to boil; turn down heat and stir in the dissolved potato starch. As it thickens turn the heat back up for another 5 seconds to finish off.
