How To make Healthy Meat Loaf
4 c Packed, finely shredded
Cabbage (about 1 pound) 1 md Onion,finely chopped
(1/2 cup) 1 1/2 tb Corn oil
1 c Packed shredded carrot
(2 medium) 1 cl Garlic,minced (1 heaping
Tablespoon) 1/2 lb Ground round or lean ground
Beef 1 Egg white
1 Whole egg
1/3 c Bread crumbs,preferably
Whole wheat 1 ts Dried basil,crumbled
1/4 ts Oregano,crumbled
1/2 ts Fresh ground black pepper,
To taste 1/4 c Water
2 tb Vinegar
1 c Packed shredded potatoes
(2 medium) Saute cabbage and onion in the oil in a large skillet over medium heat,stirring them often,for about 5 minutes.Reduce the heat to medium low and saute the vegetables for 5 to 10 minutes longer or until cabbage begins to turn golden. Add the carrots and garlic;saute the vegetables another 5 minutes.Remove the vegetables from the heat and let them cool to room temperature. In a large bowl,combine the beef with the egg white and whole egg,bread crumbs,basil,oregano,black pepper,water and vinegar. Add the cooked vegetables and shredded potatoes to the beef mixture.Mix ingredients well. In a shallow baking pan,shape the meat and vegetable mixture into a loaf about 8" long.Cover the pan tightly with aluminum foil. Bake the meat loaf in a preheated 350 degree oven for 30 minutes.Uncover the meat loaf and bake it 30 minutes longer. Let the meat loaf rest for about 15 minutes before slicing it. Serve 8.

1 lb 80/20 ground beef
1 lb ground pork
1 box Boursin Garlic and Herbs
1/4 cup diced parsley
1 bell pepper diced
1/2 large onion diced
2 tbsps sour cream
1-2 tbsps garlic paste
2 beaten eggs
1 1/2 - 2 cups bread crumbs
smoked paprika/italian seasoning/red pepper flakes
salt/pepper/garlic/onion powder
Sauce:
1 cup BBQ
1 cup ketchup
1-2 tbsps tomato paste
2 tbsps dijon mustard
1 tbsps worcestershire sauce
1/4 cup brown sugar
salt and pepper / smoked paprika
Directions:
Begin by prepping your veggies and parsley. Next, saute veggies, parsley, and garlic for 3-4 minutes. Place in freezer to chill after softened. In a large mixing bowl combine remaining ingredients (except sauce ingredients). Work everything together with your hands until it forms one large meatball. Add bread crumbs a little at a time until the loaf takes shape. Place mixture in the fridge for 30 minutes.
Preheat oven to 375 and form into a loaf shape. Place on wire rack or into a loaf pan. Bake for 30-45 minutes. Mix together sauce ingredients over medium low heat. Baste meatloaf with sauce during final 20-30 minutes. Meatloaf is done when it registers 165 degrees internal temp in the middle.

This lighter version subs in hearty lentils & mushrooms for 1/2 the ground beef. So flavorful, you won't miss the extra meat!
MEAT-LITE MEATLOAF
INGREDIENTS
8 ounces (227g) white mushrooms
1 tablespoon olive oil
1 cup (114g) onion, finely chopped
2 cups (300g) cooked lentils
8 ounces (227g) 90% lean ground beef
1 teaspoon garlic powder
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1 large egg
1/3 cup (75g) ketchup
1 teaspoon chili powder
DIRECTIONS
Preheat oven to 375°F (190ºC). Line a sheet pan with parchment paper.
Place mushrooms in a food processor and pulse until very finely chopped. Heat a large skillet over medium-high heat. Add oil to the pan and swirl to coat. Add onion; sauté 3 minutes. Add mushrooms; cook until tender and mushroom liquid evaporates, about 4 minutes.
Place half of the lentils in a food processor and pulse until almost pureed; scraping down the sides of the bowl as needed. In a large bowl, combine the pureed lentils, whole lentils and mushroom mixture. Add ground beef, garlic powder, salt, pepper and egg. Mix until well combined. Shape the mixture into a 7-by-4-inch freeform loaf on the prepared sheet pan. Bake at 375°F for 20 minutes.
Combine ketchup and chili powder. After 20 minutes, remove the pan from the oven. Brush ketchup mixture all over. Bake until a thermometer inserted in center registers 160°F (71ºC), about 10–15 minutes more. Slice loaf into 8 pieces.
