How To make Hawaiian Macadamia Bread
Servings: 1
3 c unsifted all purpose flour
3 1/2 ts baking powder
1/2 ts baking soda
1/4 ts salt
1/4 c butter or margarine,
softened 3/4 c sugar
2 eggs
1 cn (20 oz.) crushed pineapple,
well drained, reserving 1 c. syrup 1/2 ts vanilla extract
1 c packaged, flaked coconut
1 jar (3 1/2 oz.) macadamia
nuts, chopped (3/4 c.)
Combine flour, baking powder, baking soda and salt; set aside. In large bowl cream butter and sugar and beat until fluffy. Beat in eggs and alternately flour mixture and pineapple juice. Fold in vanilla, coconut, macadamia nuts and crushed pineapple. Bake in preheated 350 degree oven 55 to 60 minutes.

Today I'm making Hawaiian Banana Bread (Aloha Loaf), a recipe from the Del Monte Kitchens Cookbook. This turned out to be AMAZING and maybe the best banana bread recipe I have ever tried. It's my new go-to!

ALOHA LOAF (Hawaiian Banana Bread)
1/2c butter, softened
1c sugar
2 eggs
1/2c mashed ripe banana
2c flour
1t baking powder
1/2t baking soda
1/2t salt
1 - 8oz can crushed pineapple
1/2c shredded coconut
Cream butter and sugar until light and fluffy. Add eggs; mix well. Stir in banana. Sift together flour baking powder, baking soda, and salt. Add to creamed mixture; mix well. Fold in pineapple and coconut. Pour into greased and floured 9 x 5 loaf pan. Bake at 350 for 1 hour and 10 minutes (I had to bake mine for an extra 8 minutes). Let stand for 10 minutes. Remove from pan and allow to cool.

Combine:
1/2 cup of unsalted butter; softened
3/4 cup of granulated sugar
2 eggs
1 1/2 tsp of vanilla extract
1 tsp baking soda
1/2 tsp salt
2 cups of flour
* Mix well
_______________________________________________________________________
Add:
2 bananas; mashed
1/2 cup of orange juice
* Continue until well mixed
_______________________________________________________________________
Stir in:
1 cup of coarsely chopped macadamia nuts
1 cup of flaked coconut
_______________________________________________________________________
*Use a 9 x 5 inch loaf pan; greased and lightly floured
*Bake on center rack at 350 degrees for 60 minutes
* Cool for approximately 10 minutes before removing from pan
