Chocolate Macadamia Banana Bread
1 ½ cups whole wheat pastry flour
½ cup almond flour (almond meal)
1 tsp baking soda
1 tsp salt
½ tsp ground cinnamon
½ cup apple butter (Find a brand with as little sugar as possible.)
¼ cup almond butter, chunky preferred
¼ cup date syrup
½ cup date sugar
1 ½ tsp pure vanilla extract
2 tablespoons ground flax seed mixed with 6 tablespoons of water (set aside for 10 minutes)
3 ripe bananas, mashed (1 cup)
½ cup roasted macadamia nuts, chopped (Bake on a baking sheet at 350° for 5 minutes)
½ cup 70% dark chocolate disks (El Rey), chopped plus more for topping
Preheat oven to 350 degrees. Use 4 mini loaf pans or a large 9 by 5 loaf pan. Line with parchment paper or use the USA pans which are non-stick. They are in my Amazon store.
In a bowl, combine flours, baking soda, salt, and cinnamon.
In a large bowl, stir together apple butter, almond butter, date sugar, date syrup, flax mixture, and vanilla. Mix well. Add the mashed bananas. Add the flour mixture, stirring until just combined. Do not overmix. Stir in the dark chocolate and macadamia nuts. Spoon batter into prepared pans. For mini loaves, bake approximately 35 minutes, or until a toothpick inserted in the center comes out clean. For 9 x 5 pan, bake for 45-50 minutes. Let cool in pan on a wire rack for 10 minutes. Lift out of pans using parchment paper overhang. Cool completely before slicing.

Homemade Macadamia Nut Butter
Try this one ingredient homemade macadamia nut butter. It's a great kitchen staple to add that extra wow to your recipes. See the full recipe post here Use it in pancake batters, smoothies, oatmeal, dressings, sauces and the list goes on and on. Make sure to keep an eye on it as you blend to get crunchy, creamy or even a super thin texture. I store mine in a glass mason jar in the refrigerator where it will last at least up to week. However, in my house it 's almost always gone before the week is up. :) Stay tuned as we use this macadamia nut butter to make more clean and easy to prepare recipes. My favorite is macadamia nut butter banana ice cream!
