How To make Hawaiian Sweet Bread
Servings: 1
6 1/2 to 7 c. flour, unbleached
3/4 c mashed potato flakes
2/3 c sugar
1 ts salt
1/2 ts ginger or mace
2 ts vanilla
2 env active dry yeast
1 c milk
1/2 c water
1/2 c butter or margarine
1 c pineapple juice at room
temperature 3 eggs
Glaze (optional)
In a large bowl, combine 3 cups flour, mashed potato flakes, sugar, salt, ginger or mace, vanilla, and yeast. In medium saucepan, heat milk, water and butter until very warm, 120 to 130 degrees. Add warm mixture, pineapple juice and eggs to flour mixture. Blend at low speed of mixer until moistened. Beat 4 minutes at medium speed. By hand, stir in 3 cups flour to form a stiff dough. On floured surface, knead in 1/2 to 1 cup flour until smooth and elastic, 5 to 8 minutes. Place dough in a greased bowl turning to grease top of dough. Cover loosely with plastic wrap and cloth towel. Let rise in a warm place, 80 to 85 degrees, until light and doubled in size, 1 to 1 1/2 hours. Punch dough down. Divide into 3 parts, form each into a round ball. Place in 3 (8 or 9-inch) round cake pans that have been well greased. Cover and let rise in a warm place until light and doubled insize, about 1 hour. If desired, brush loaves with glaze made of lightly beaten eggs. Also sprinkle with sugar, if desired. Bake at 375 degrees for 25-35 minutes or until loaves sound hollow when lightly tapped. Remove loaves from pan immediately.

3 tbsp melted butter
2 tbsp (50g) honey
1/2 tbsp active dry yeast
360g all-purpose flour (give or take 3 cups, but technically a bit less)
1 tsp salt
1 egg, beaten, divided in half (into two bowls if needed)
*Temperature needed for the oven is 350F (175C), and real baking time was ~45 minutes.

I can't believe I figured out Hawaiian Sweet rolls! I was playing around with different ingredients for a new loaf of PSMF bread. I made the loaf, took one bite and thought, That tastes like a Hawaiian sweet roll! I grabbed my scoop and thought, why not try it. I didn't even try a trial batch before I turned on the camera, so you get to see the VERY FIRST TRIAL RUN of these guys! I'm so happily surprised it worked! Maybe Maria will see this and make them in Hawaii... I bet they will taste even better! ????

Into a dry bowl place:
1/2 cup egg white powder
1/3 cup allulose
2 tbsp nutritional yeast (reduce to 1 T or omit If desired)
1/8 -1/4 tsp quick rise yeast (Omit if desired, this is just for flavor)
1/4 tsp salt
2 tsp cream of tartar
1 tsp xanthan gum (use beef gelatin for a much healthier option! Or omit altogether)
Whisk those together. Add
1 cup liquid egg whites. (OPTIONAL: Add 1/4-1/2 tsp Pineapple Extract to the liquid egg whites)
Stir to combine. Beat on high till stiff peaks form. Turn the speed down to half, and slowly add
5 egg yolks, one at a time. If the batter starts to fall, stop at 3 yolks. I turn the speed back up for just a few seconds to fully incorporate.
Cover a baking sheet with parchment paper and spray with nonstick oil. Ypu can spray your scoop (1/4 cup, 2 Tbsp, 2 oz scoop!) with oil, inside and out. Scoop batter onto the pan with the rolls barely touching. Bake at 325 for 15 minutes then turn off the oven. Set a timer for at least 15 minutes and let them sit in the oven till it goes off. Remove and eat the WHOLE PAN!

Hello friends.Hawaiian Sweet Bread Rolls,is similar to brioche which is enriched with egg and butter.But instead of milk,I replace it with pineapple juice ( that gives the rolls sweetness ) and light brown sugar.The texture is soft and stretchy.
Ingredients: 16pcs bread rolls
320g bread flour
30g light brown sugar
4g instant dry yeast
3g salt
1 egg ( 50-55g )
160g pineapple juice
30g unsalted butter
*Eggwash ( 1 egg + 1tbsp milk )
*Brush with butter
Bake in a preheated oven at 180c for 20 minutes

INGREDIENTS:
1 cup warm pineapple juice
2 1/4 teaspoon Dry Active Yeast
2 tablespoon cooking oil plus more for bowl
3/4 cup sugar
1 teaspoon salt
3 cups Bread Flour plus more for dusting
***Stand mixer method
Place water/pineapple juice in the bowl of a heavy-duty stand mixer. Add the sugar and stir. Sprinkle yeast over liquid. Let stand for 10 minutes. If bubbles form you may proceed
Attach dough hook to machine. Add the oil and salt. Mix at low speed
Add flour one cup at a time and knead for 3 minutes. Proceed with rising and shaping as shown in the video
***Bread machine method
Add ingredients as per manufacturers instructions. Set on dough cycle. When time is up proceed to SHAPING as shown in video
