Stir-fried Beef with Scallions / spring onions and Ginger is easily one of the top 10 best-loved Chinese dishes. It has a terrific flavor, yet can be made in just a few minutes.
Ingredients:
1 lb (about 1/2 kg) sirloin beef
4 to 5 stalks scallions or spring onions
One piece thumb-sized fresh ginger
2 cloves of garlic
Marinade
1/4 tsp baking soda (as meat tenderizer)
2 tsp corn starch
1 tbsp (15 g) Shioxing wine
1 tbsp (15 g) soy sauce
Stir-fry sauce
1/4 cup (60 ml) water
2 tsp corn starch
2 tbsp (30 g) oyster sauce
1 tsp sesame oil

Marinating the beef

280g chuck tender - sliced thinly against the grain
2 teaspoons of corn flour
1 tablespoon of cooking oil
0.5 teaspoon of baking soda
2 tablespoons of water
A few dashes of pepper

7 - 8 slices of young ginger
2 onions - sliced thinly
1 tablespoon of oyster sauce
2 tablespoon of dark soya sauce
2 tablespoons of light soya sauce (low sodium)
4 stalks of spring onion
1/2 cup of water
2 tablespoons of Chinese cooking wine (Shaoxing Huatiao Wine)
1 tablespoon of sesame oil

This Delicious Gluten Free Mongolian Beef dish is amazing! It's basically a replica of PF Chang's and Joey Tomato's Ginger Beef but for the quarter of the cost of dining out.
It's easy to make, tastes wonderful and is gluten free when you use gluten free soy sauce. Serve with brown or white rice. Reserve the extra sauce for a marinade as it's excellent on chicken or salmon.

RECIPE:
Ingredients:
some shredded carrot, onion, and pepper bell (optional)
½ lb marinated beef
½ cup white vinegar
2⁄3 cup sugar
6 tsp sliced garlic
6 tsp shredded ginger
2 tsp light soy sauce
1 tsp dark soy sauce
1 tsp salt
3 tsp chilli flakes (adjustable)
Marinate:
½lb shredded beef
1 cup water (or until beef is complete bathe in water)
½ tsp baking soda
Beef Batter:
½ beaten egg
½ tsp baking powder
½ cup all purpose flour
2⁄3 cup water
1 cup corn starch
Method:
1. Prepared the beef by cutting it into shred, approximately 1cm x 1cm and under 15cm in length would be good. Bath the beef in a bowl of water and baking soda. Cover it in plastic wrap or lid and refrigerate for 30 minutes. This process remove all the gamy beef smell.
2. Slightly wash and strain the beef from the baking soda bath, add in half of a beaten egg, baking powder, all purpose flour, and corn starch. Add the water in 3 parts as you mix. Hand mix the beef batter to ensure that it is smooth and have no lumps.
3. In a homestyle wok or regular cooking pot, heat the oil until smoking and then in batches, deep fry the beef until medium golden brown *BE CAREFUL OF OIL SPLASHES*
4. While frying the beef, make sure that they do not stick together, if they do, carefully pull them apart using chopsticks (or any utensil).
5. With some oil in the wok or cooking pan, add shredded ginger, minced garlic, and chilli flakes. Add the shredded vegetables before pouring in the vinegar, sugar, dark soy sauce, and light soy sauce. Bring to a boil before tossing the fried beef in the sauce. Coat the fried beef generously before plating it to enjoy!

Ginger Beef Stir-Fry Chinese Style
Welcome to Xiao's Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes.
Ingredients:
350g Beef Fillet
20g Dark Brown Sugar
10g Ginger
3 Cloves Garlic
160g Pak Choi
1 Tsp Coarse Black Pepper
1 Tbsp Dark Soy Sauce
1 Tbsp Cooking Wine
1 Tsp White Wine Vinegar
Salt to Taste
Method:
1. Finely chop the garlic & ginger
2. Thinly slice the beef
3. Cut the pak choi in half lengthways
4. Place the beef in a mixing bowl
5. Add the brown sugar, soy sauce, white vinegar, cooking wine & black pepper
6. Then mix well & leave to marinate for 20 minutes
7. Boil 1 litre of water with 1 Tsp of salt
8. Add the pak choi & boil for a minute
9. Then remove & drain
10. Heat 2 Tbsp oil - Add the garlic & ginger, stir-fry for a few seconds
11. Add the beef & stir-fry for 2 minutes
12. Add salt, sesame oil & stir
13. Place the pak choi on a dish in a single layer
14. Then place the beef on top
15. Serve & enjoy
