How To make Fettuccine with Tomato, Basil and Yogurt Sauce
1/4 c Basil Leaves, freshly
-chopped fine 1 tb Parsley, minced
1/2 c Scallions, thinly chopped
-(including the tender green -leaves) 1 c Tomatoes, coarsely chopped
-(2 large) 2 c Low-Fat Plain Yogurt
Salt White Pepper, freshly ground 1 lb Fettuccine cooked al dente
-according to package -directions Indian cuisine is one of John's favorites. This pasta sauce is basically a variation on the Indian raita, a cooling, soothing combination of cucumber, cilantro and yogurt. Do not substitute non-fat yogurt for low-fat: over the heat of the pasta, the former becomes too runny. Have all the ingredients 1 lb Fettuccine cooked al dente according to package directions In a large bowl combine the basil, parsley, scallions and tomatoes, and toss well to mix Spoon the yogurt over the herbs and vegetables and blend well. Taste and add salt and pepper if necessary. Dive the hot fettuccine among four warm bowls. Spoon the sauce over it and serve immediately. Grilled Cheese & Roasted Tomato Soup
Good soup ????
Fix those late night cravings with some bomb as grilled cheese and spicy tomato soup ???????? here’s my recipe:
6 tomatoes, quartered
1 onion, quartered
1 capsium/ bell pepper, chopped
1 whole garlic bulb
Chilli flakes (optional)
1/2-1 cup unsalted vegetable stock
1/2-1 cup cream
3-4 basil leaves
Salt and pepper
2 slices of your favourite bread
Mozzarella cheese
Cheddar cheese
Butter
Method:
1. Chop off the top of your garlic bulb, leaving the cloves exposed. With your garlic, place all your other chopped vegetables into a large baking dish, drizzle generously with olive oil, chilli flakes, salt and pepper and bake at 200C for 50-60 mins until the vegetables are slightly charred and soft.
2. [optional] Use a blow torch and lightly torch your roasted vegetable to add extra char if you like your soup smokey. Careful not to burn it.
3. Transfer your vegetables into a pot or a blender with your stock, cream and basil. With a stick blender or a normal blender, blend your soup until smooth. Salt and pepper to taste.
4. For your grilled cheese, cut up 2 slices of bread. You can use any cheese you want or have on hand. I used mozzarella for the stretch and cheddar for the bitey taste. Butter your bread and grate as much cheese as your heart can take. Grill in a pan over medium heat until golden brown and cheese melted. Serve with tomato soup.

Ingredients -
500g (1.1lbs) - Pasta of your choice (I used shells)
1 Tbsp (14g) - Unsalted Butter
1 tsp (5ml) - Olive Oil
6 - Garlic Cloves, Minced
1/3 Cup (80ml) - Chicken or Vegetable Stock
400ml (13.5floz) - Thickened Cream (Heavy Cream, Whipping Cream)
120g (4.2oz) - Baby Spinach, Washed
60g (2.1oz) - Grana Padano Cheese, Freshly Grated
5g (0.2oz) - Flat Leaf Parsley or Basil, Roughly Chopped

Basil & Yogurt Dip♥️
The perfect dip recipe that will make a hit at any gathering! It comes together so easily and is soooo creamy!
Here’s how you make this flavourful Cashew Basil Dip at home ☺️
Ingredients :
Cashews - 1/4th cup (substitute with walnuts)
Garlic - 3 Cloves
Cream Cheese - 1/3rd Cup
Hung curd - 1/2 Cup (hung for atleast 1 hour)(the thicker the better- you can also use hung Greek yogurt)
Mint - 1 Tbsp
Basil - 2 Tbsps
Salt & Pepper - to Taste
Lime Juice - 1 Tbsp
Sugar - pinch
Olive Oil - Garnish
Chilli Flakes - Garnish
Process :
* Boil the cashews for 4-5 minutes or soak them overnight
* To a blender - add in the boiled cashews, chopped garlic cloves, mint & basil leaves, lime juice, cream cheese, hung curd, a pinch of sugar & salt & pepper to taste & blend until smooth & lump-free
* Transfer the dip to a bowl, Garnish with some olive oil & chilli flakes
* Serve alongside some chips/ veggies of your choice or use it as a dip or a spread & Enjoy ????????
