Fettuccine with Parsley Pesto and Walnuts | Everyday Food with Sarah Carey
If you're used to serving spaghetti or fettuccine with a red sauce, you've got to try this green version. A super-fresh parsley pesto comes together while your pasta cooks, and a few handfuls of baby spinach make it a meal that's pretty darn good for you, too. I mean, it's practically salad, right? Either way, I think I can safely say that green has never tasted this good.

Recipe Ingredients:
1 bunch fresh parsley, washed and patted dry
1/2 cup walnuts, toasted if desired, plus more for serving
5 ounces baby spinach
Coarse salt and ground pepper
3/4 pound fettuccine or other pasta
1 small garlic clove, peeled
1/4 cup grated Parmesan, plus more for serving
1/2 lemon or 1 tablespoon fresh lemon juice
1/4 cup olive oil

creamy pesto pasta ????/ recipe

Serves 4
400 grams pasta, your choice
2 tbsp butter
1 shallot, minced
2 garlic cloves, minced
1-2 tsp red pepper flakes
Pepper
1/4 cup pesto
1/2 cup heavy cream
1 cup reserved pasta water
Grated parmigiano reggiano to serve
INSTRUCTIONS
Bring 4 qts of water to boil & add salt. Once boiling, add your pasta of choice and cook until Al dente (follow box directions if unsure). Drain and set aside about a cup of pasta water.
Heat pot to medium heat and add butter. Once butter is melted add shallots. Stir and cook until shallots are slightly translucent. Add garlic and cook until fragrant, about 30 seconds-1 minute.
Season with red pepper flakes and freshly ground pepper.
Add pesto, stir, and add heavy cream. Reduce heat to medium low and let the sauce thicken until it coats the back of the spoon.
Add pasta and stir. If the sauce is too thick, slowly add the reserved pasta water, a small splash at a time (think like 1/8 of a cup), until it reaches desired consistency.
Turn off heat and top with freshly grated parm cheese! Enjoy ????
