How To make Fettuccine with Tomato Avocado Sauce
1 tb Olive oil
1 md Onion; finely chopped
2 Garlic cloves; minced
1 Fresh hot chile pepper
seeded and minced 4 md Tomatoes
:
cut into 1/2-inch cubes 3/4 ts Fine sea salt
1/8 ts Freshly ground black pepper
1/2 c Chopped fresh cilantro
Optional 12 oz Fettuccine made without eggs
2 md Ripe avocados
:
peeled, stone removed, -- and cut into 3/4" cubes 3 tb Extra virgin olive oil
2 tb Freshly squeezed lime juice
Heat the 1 tablespoon olive oil in a large skillet over medium heat. Add the onion, garlic, and chile pepper, and cook until softened, about 5 minutes. Add the tomatoes, salt, and pepper and cook, stirring often, until the sauce has thickened slightly, about 10 minutes. Remove from the heat, and stir in the cilantro. Keep warm. Meanwhile, in a large saucepan of lightly salted boiling water, cook the noodles until just tender, about 8 minutes. Drain well and transfer to a warmed serving bowl. Add the tomato sauce, avocados, extra-virgin olive oil, and lime juice. An easy no cook recipe, this avocado pasta sauce is a simple way to create a creamy and filling vegan pasta sauce.
Ingredients
1 avocado
1 lime
1/4 cup of sunflower oil
1 tbsp of fresh parsley
Directions
1. Add avocado, the juice of 1 lime, sunflower oil and fresh parsley to a blender.
2. Puree until smooth.
3. Add to your favorite pasta recipes for an easy creamy pasta sauce.

Pasta With Homemade Creamy Avocado Sauce Recipe | Easy Pasta Recipe | The Sweetest Journey
Learn how to cook an easy and quick pasta with homemade avocado sauce. ????
Ingredients:
8 oz. of Pasta (I used Green Lentil Pasta)
1/2 cup Low Sodium Vegetable Broth (120ml)
1 Tablespoon Lemon or Lime Juice (15ml)
2 Tablespoons Olive Oil (30ml)
1 Medium Avocado
1 Garlic Clove (1 Teaspoon Minced Garlic)
1 Teaspoon Thyme (0.9g)
1 Tablespoon Parsley Flakes (1.62g)
2 Cups Spinach
Optional Topping: Parmesan Cheese
Directions:
1. Cook pasta according to package instructions until al dente. Drain and rinse with cold water in a colander. Set aside.
2. In a blender, combine the broth, lemon juice, olive oil, avocado, garlic, thyme, parsley, and spinach. Blend until smooth. Add more broth, a tablespoon at a time, if too thick.
3. Heat the sauce in a saucepan, over medium-low heat. Add the cooked pasta and stir until the pasta is well coated with sauce. Serve topped with Parmesan cheese.
