How To make Pasta with Uncooked Tomato, Basil and Mozzarella Sauce
1 1/2 pound ripe tomatoes (about 3)
seeded and chopped
2 garlic cloves :
minced
1/2 cup packed fresh basil leaves chopped coarse
1/2 pound fresh or processed mozzarella :
diced 1/2
cup extra-virgin olive oil 2 tablespoons balsamic or red-wine vinegar
salt and freshly ground black pepper 1 pound dried shaped-pasta of choice i.e. penne,
:
farfelle, rigatoni -- or 1 medium shells
In a large bowl combine the tomatoes, garlic, basil, mozzarella, oil, vinegar, salt and pepper to taste and let the sauce stand, covered at room temperature for at least 1 hour and up to 4 hours. Just before serving, in a kettle of boiling salted water cook the pasta until it is al dente, drain it well, and add to the sauce. Toss the pasta well with the sauce. Adjust seasoning with salt and pepper.

1 clove garlic pressed or grated
1 teaspoon salt
¼ teaspoon black pepper
¼ teaspoon red pepper flakes
15 fresh basil leaves + more for garnishing
½ cup (50 grams) parmesan cheese or non-dairy cheese, grated. Add more or less to taste.

Ingredients:
-A drizzle of olive oil

-1 shallot
-2 tbsp tomato paste
-spices : salt, pepper, pili-pili, parsley
-à bit of pasta cooking water
-double cream - 100 ml
-uncooked rigatoni- 200g
-100g mozzarella (less or more depending on your taste)
-Basil for the topping
Instructions:
•Brown garlic and shallots in olive oil.
•Add the tomato paste and spices. Stir.
•Add pasta cooking water, cream and stir.
•Add the cooked pasta and stir.
•Add the mozzarella and stir.

Ingredients:
2 tablespoon Olive oil
1 Onion, chopped
3 Garlic cloves
1 can (14oz/400g) Tomato sauce
2 tablespoons (30g) Tomato paste
Salt to taste
Pepper to taste
1 teaspoon Oregano
Basil
1½ cups (360ml) Water or vegetable stock
8oz (225g) Pasta of your choice
Parmesan cheese
Directions:
1. In pot heat olive oil. Add chopped onion and sauté for 5 minutes. Add minced garlic and sauté for 1-2 minutes.
2. Add tomato paste, cook for 1 minute. Add tomato sauce, salt, pepper, oregano, water and stir.
3. Add pasta, bring to a boil. Cover, reduce to medium-low heat and cook, stirring occasionally, until al dente, about 14-18 minutes, depends on the pasta type. Add more water if needed.
4. Transfer to a plate and grate some parmesan cheese on top.

INGREDIENTS
4 tbs extra virgin olive oil
2 tbs red onion - finely sliced
3 cups tomato purée
2 pinch salt
1/2 lb spaghetti pasta
2 or 4 leaves fresh basil
STEPS
1 - In a hot saucepan pour oil and onion. Let cook until the onions are golden. Add tomato purée and salt. Cook on low for 15 or 20 minutes, until sauce thickens.
2 - While the tomato sauce is cooking, in a big pot bring to boil some salted water and cook “al dente” the spaghetti pasta. When it’s ready drain well the pasta.
3 - Season the pasta with the tomato sauce and serve your spaghetti adding on top some fresh basil leaves.
