선드라이 토마토와 바질을 다져 넣은 치즈빵을 만들었어요~
알록달록 색도 예쁘고 은은한 풍미가 있어 식사빵으로 아주 좋은 것 같아요.
반죽이 부드러워 손에 달라붙을 수 있어서 밀가루를 뿌려가며 작업하면 좋답니다.
주물 팬에 구워 따뜻하게 먹을 수 있어서 치즈가 쭉 잘 늘어나네요.
색다르게 만들어 봤는데 정말 맛있어서 그 자리에서 순삭했어요~

[재료 Ingredients]
50g 따뜻한 물
80g 따뜻한 우유
3g 드라이 이스트
30g 설탕
200g 강력분
4g 소금
25g 무염버터
바질
50g 선드라이 토마토
모짜렐라치즈
달걀 + 우유
50g Warm water
80g Warm milk
3g Dry yeast
30g Sugar
200g Bread flour
4g Salt
25g Unsalted butter
Basil
50g Sun dried tomato
Mozzarella cheese
Egg + Milk
[만드는 과정]
1. 볼에 따뜻한 물과 우유(약 40도 정도)를 넣고 이스트와 설탕을 넣고 저어 7분 정도 그대로 두세요.
2. 주걱으로 저은 다음 밀가루와 소금을 넣고 주걱으로 섞고 비닐 랩을 씌워 15분 정도 둡니다.
3. 바질을 다지고 썬드라이 토마토도 다져 주세요.
4. 손으로 치대 한 덩어리로 만들고 버터를 넣고 12~15분 정도 반죽해 주세요.
5. 다진 바질과 썬드라이 토마토를 넣고 반죽과 잘 섞은 다음 비닐 랩을 씌워 1시간 정도 발효합니다.
(반죽의 크기가 2배 이상 커질 때까지)
6. 반죽을 꺼내 가스를 제거하고 8개로 반죽을 분할해 주세요.
7. 동그랗게 반죽을 만들고 비닐 랩을 덮어 15분 정도 중간 발효합니다.
8. 주물 팬에 실온 상태의 버터를 골고루 바르고 버터와 다진 바질을 섞어 둡니다.
9. 반죽의 가스를 제거하고 납작하게 만들고 모짜렐라 치즈를 넣고 동그랗게 만들어 주세요.
10. 주물 팬에 올리고 비닐 랩을 씌워 약 40분 정도 발효합니다.
11. 달걀과 우유를 섞어 반죽 위에 골고루 바르고 175도 오븐에서 15분 정도 구워 주세요.
12. 다 구워진 빵 위에 버터와 다진 바질을 섞을 것을 발라 주세요.

Ingredients
1 (8 oz) ball fresh mozzarella
1 (8,5 oz) jar sun-dried tomatoes in oil
1 basil bouquet or a whole tube of basil paste (4 oz)
1 cup + 1/3 cup flour
1 Tbsp baking powder
Salt and pepper to taste
1/2 cup olive oil
1/2 cup milk
3 eggs
Instructions
1 - Preheat oven to 375°F.
2 - Drain the sun-dried tomatoes and cut them into smaller pieces.
3 - Roughly cut the mozzarella in pieces.
4 - Rinse and chop the basil.
5 - Sift the flour over the bowl of a stand mixer. Add the baking powder, salt, and pepper.
6 - Add the oil and milk. Beat until smooth.
7 - Add the eggs one by one beating well between each addition.
8 - Add the sun-dried tomatoes, mozzarella, and basil (or basil paste). Beat well until combined.
9 - Pour batter into a greased and floured loaf pan.
10 - Bake for about 30 to 40 minutes.

Tomato Basil Bread--Panera Copycat Recipe
I am cutting out most of the processed foods my family has been eating for years and now I am making foods homemade and with love.
1 1/4 cup warm water
2. 1/4 teaspoons yeast
1 teaspoon sugar
**proof yeast for 5-10 minutes
1/4 cup oil
1 teaspoon salt
1/4 teaspoon garlic powder
1 1/2 teaspoons dried basil
3 teaspoons tomato powder or tomato paste
1/4 cup diced fine, sun dried tomatoes packed in oil
**mix in with yeast mixture
4 - 4. 1/2 cups bread flour
**add 3 cups of flour at first and then add more 1 tablespoon at a time until the desired dough consistency is reached.
**Knead 8-10 minutes, then let rest and rise for 45-60 minutes covered
**spread dough out and shape into a loaf-place in a greased loaf pan and let rise until it is 1 inch above the rim of the bread pan. (I used an 8x4 inch bread pan)
Bake at 400ºF for 30 minutes
TOPPING: while bread is baking make the sweet topping for the bread.
1 Tbsp each: brown sugar, white sugar and oil
1 1/2 tsp. each: flour, and honey
1/2 tsp cinnamon
1/8 tsp salt
**mix the topping and make a paste
After the bread has baked 30 min. add paste to the top of the loaf and return to the oven for 1-3 minutes. The topping should be just melted - if you leave it in the oven too long it will be very sticky, but delicious.
Panera uses this bread for their Veggie Mediterranean Sandwich. My husband enjoyed his BLT on this bread.

1/2 ounce (2 packets) Active Dry Yeast
1 1/2 cups Warm Water (approx. 100 degrees F)
4 TBSP Dried Basil
1/2 cup Parmesan Cheese
6 TBSP Tomato Paste
2 TBSP Sugar
2 TBSP Oil
2 tsp Salt
5 1/2 cups Flour
