Hello!
My husband prepared this simple sauce and did not want me to interrupt because sometimes when he is developing a recipe, I would be like add this or that lol.????. But for this Basil & Greek Yogurt Sauce, he was like I am the chef tonight! So I kept out of his way and just enjoyed watching him in action.????????????????????
This no butter and no cream basil infused sauce is luscious and creamy and takes only minutes to prepare. A great sauce to make when you have a bounty of fresh basil in your garden. It was delicious with pasta, however, you can pour over your salad, roasted veggies, meat, or fish.
Recipe:
Ingredients:
1/2 cup Plain Greek Yogurt
2 Tablespoons Extra Virgin Olive Oil
5 fresh Basil leaves
1/4 teaspoon Salt
1/4 teaspoon thyme
1 garlic clove minced
1/2 vegetable bouillon cube
1/4 teaspoon Fresh Ground Pepper
Instructions:
Pick the basil leaves, rinse them.
Mince the garlic.
Put all ingredients in the blender starting with the yogurt and oil first. Then add the remaining ingredients.
Pulse and then blended until smooth.
Taste and add more salt if needed.
We did return to pan and warm but optional.
Pour over pasta, salad, roasted veggies, meat, or fish.

Nutritional | Healthy Tomato Pasta

INGREDIENTS
1 tablespoon extra-virgin olive oil
3 cloves garlic, minced
1 yellow onion, diced
2 teaspoons red pepper flakes
1 28-ounce can high-quality crushed tomatoes
1 pound whole-wheat spaghetti
1 cup plain Greek yogurt
1/4 cup parmesan cheese, for garnish
Fresh basil, for garnish
RECIPE:
1. Heat olive oil over medium-high heat for 2 minutes. Add garlic and onion, and cook for 4 to 5 minutes. Add red pepper flakes, and cook for an additional minute.
2. Add crushed tomatoes, and bring to a boil. turn heat down to simmer for 15 to 20 minutes.
3. While the sauce is simmering, cook the pasta in boiling water.
4. add the Greek yogurt to your sauce and mix well until all is combined, then add your pasta in.
5. Plate your pasta, and garnish with 2 tablespoons parmesan cheese, basil and parsley.
