In this video Dennis Pollock shares a new, updated, improved, mega-chocolate cake which can be made in a mug in 90 seconds. This recipe enables you to make a low-carb diabetic friendly dessert which can last you for up to four evenings. Wow!!! This recipe has so few carbs that when Dennis tested his blood sugar before eating and then one hour afterwards, his blood sugar dropped significantly at his post-meal test. Double Wow!!
Recipe for Chocolate Cake in-a-mug:
In a bowl mix the following ingredients:
- 1 egg
- 2 Tbsp Olive Oil
- 2 Tbsp heavy whipping cream
- 1 heaping Tbsp almond flour
- 1 heaping Tbsp coconut flour
- 1 heaping Tbsp cocoa (non-sweetened)
- 2 shakes of salt
- 2 packets of stevia or Truvia, or the sweetener of your choice
- 1 heaping Tbsp of sour cream
- 1/2 tsp of baking powder
- 2 squares of Bakers unsweetened chocolate, shaved into tiny pieces
To be placed on cake after baking:
- handful of chopped walnuts
- Whipped cream
Stir ingredients thoroughly in a bowl until smooth
Transfer the mixture into a large mug sprayed with cooking spray
Shake the mug a few times to get the mixture even with no lumps at the top
Bake in microwave for 90 seconds
Cut into four slices
Press walnut pieces into the cake
Top with whipped cream after the cake has cooled

Eggless cake recipe for a tasty vegan chocolate cake
You don't need to look any further for a perfectly moist eggless cake recipe, because this chocolate cake recipe is so simple and easy to make, you would not find a easier one than this. It doesn't have any butter, eggs or even milk. Some basic ingredients and you have yourself a perfect vegan chocolate cake. Just follow these simple steps on how to make this chocolate cake and I guarantee you a perfect eggless cake every time, It is super moist and melts in your mouth.
This recipe will yield 2 thick 8 cake layers.
Ingredients:
Flour - 3 cups / 380 gms
Sugar - 2 cups / 400 gms
Cocoa - 1/3 cup / 48 gms
Baking Soda - 2 tsp
Salt - 1.2 tsp
Strong Brewed Coffee - 2 cups / 480 gms
Oil - 2/3 cup / 160 gms
Vanilla Extract - 3 tsp
Vinegar - 2 tsp
Method :
1. Sift in all your dry ingredients in a large bowl.
2. Give a good whisk to make sure all the dry ingredients are well combined.
3. Add in all the wet ingredients and mix everything together and make sure no dry ingredients are left at the bottom.
4. Give a final scrape down to the bowl.
5. Divide the batter into 2 8 greased, dusted and lined pans.
Bake at 350 F / 180 C for about 35-40 minutes or until a toothpick inserted in the center comes out clean.
Let the cake cool completely in the pans before removing them.
PS: I have used 1.5 portions of the recipe in this video, since i needed to make a 2 tier cake.

Joy’s show is called “I Hate Cooking” so she focuses on making recipes that are not only delicious but also healthy and easy to cook. Her sugar-free chocolate lava cake is not only low in calories, but is a safe alternative to chocolate desserts for people living with diabetes.
Joy starts with a standard sugar-free chocolate cake mix in a microwave safe container. Following the directions on the box, she whisks in three whole eggs, one half cup of vegetable oil, and one and one-quarter cups of water. Then she adds a whole can of sugar-free chocolate icing. Next she covers the container with saran wrap, but also adds the container’s lid on top. Then the chocolate cake goes into the microwave for nine minutes. When it’s done, it’s now a chocolate cake with a molten center made from the sugar-free icing. The final step is to scoop the “lava” over the top of the cake, and serve warm.
