How To make Fat Free Bran Muffins
1 c Wheat bran
1 c Buttermilk, nonfat
1 1/2 c Flour, whole wheat
2 ts Baking powder
1/2 c Raisins
1/2 c Applesauce, unsweetened
3 Egg whites
1/3 c Molasses
1 ts Vanilla
Preheat oven to 375 degrees. Soak bran in buttermilk for 10 minuets. In a large bowl, combine flour, baking poder, and raisins. In a medium bowl, combine applesauce, egg whites, molasses, and vanilla. Add soaked bran to flour mixture. Then add molasses misture. Use rubber spatula to combine for about 15 strokes. Don't overmix. Spray muffin tins with nonfat, nonstick spray. Bake 20-25 minutes. Serve warm. Store at room temperature up to 1 day.

Low Calorie Bran Muffins
Hey! I wanted to share my recipe with you. I make these very easy and healthy homemade bran muffins every Sunday
Preheat Oven to 350 degrees & Bake for 20 to 25 minutes
Ingredients:
2 bananas
coconut sugar
vanilla extract
1 egg or 1/4 cup of apple sauce
gluten free flour
Almond flour
quick cooking oats
All Bran Cereal by Kellogs
coconut flakes
Oat milk
How to make Banana Oat Bran Muffins! (Gluten Free, Oil Free, Vegan Plant Based)
Plant-Based Gluten-Free Banana Oat Bran muffins that are as delicious as they are dense! These things fill you right up as a delightful snack or addition to breakfast. Gluten Free, Oil Free, Vegan Plant Based.
Serves: 12
INGREDIENTS:
2 1/2 cups oat bran
1/2 cup ground flax
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
Juice of 1 lemon (2 tbsp lemon juice)
1 large apple, grated
6 brown bananas, lightly mashed (leave some chunks)
1/4 cup walnuts, chopped or halved
1/4 cup raisins
3/4 cup water
DIRECTIONS:
Preheat oven to 375° F.
Combine the dry ingredients in a large bowl. Mix real well.
Squeeze the juice of the lemon onto the combined apple and bananas, but watch out for those seeds - discard ‘em if you come across ‘em. Add walnuts, raisins, and water.
Combine the wet and dry ingredients into one bowl. Mix that stuff together until it’s all combined.
Pour into silicon muffin tins and bake for 22 minutes or until beautifully golden brown on top.
TIPS:
Add a 1/4 cup of sweetener if you feel it needs it. The bananas made it sweet enough for us.
Swap out the nuts with whatever you want.
If you want to make 6 giant muffins instead do that and double the baking time.
Can also make as a loaf - bake for 40-45 minutes at the same temperature.

2¾ Cups of Oat Flour

3 Large Dates
1/4 cup Mixed Nuts/Seeds
1/4 cup Raisins/goji berries
1/2 cup chocolate chips (optional)
½ Cup Unsweetened Almond Milk
¼ Cup Ground Flax
2 Tbsp Lemon Juice
3 Tsp Cinnamon
1 Tsp Baking Soda
1 Tsp Baking Powder
Method:
Preheat oven to 325° (165 C)
1. Mix Dry Ingredients Together In A Large Bowl
(Oat Flour, Flax, Cinnamon, Baking Soda, Baking Powder)
2. Blend together, bananas, almond milk & dates
3. Add ALL ingredients into a large mixing bowl and stir together well.
4. Fill muffin tray (should make 12 muffins)
5. Bake at 325°F (or a bit hotter, depending on your oven) for 20-25 minutes.

This is a great snack/breakfast-on-the-go idea. They are delicious with some cottage cheese and strawberries on top. They are sugar free, guilt free and easy to make ahead of time for the busy week ahead.
Bran Muffin
80g Oats
80g All Bran Flakes
2 Scoops Chocolate Whey Protein
6 Egg Whites
2 TSP Baking Powder
Splash of Milk
5g Sweetener
Blend the dry ingredients together to form a flour.
Whisk the egg whites to firm peaks
Fold the four into the egg whites and divide into 12 equal muffins
Bake in the oven for 15 Min on 180°C/350°F
